COCONUT OIL ON TOAST
A senior Malaysian chef taught me this recipe on my travels. It has been handed down through the generations and never been published until now.

Steps:
- Make sure that the toast is toast, not bread, by putting it in the toaster before you put the coconut oil on it.
- Spread coconut oil on the toast.
- Serve warm (or just eat).

So simple, but so good! My kids (18 and 12) loved it. Should be on a Hawaiian breafast buffet! Served ours with some cheesy scrambled eggs and oj. From the mr.breakfast.com collection.

- In bowl combine coconut, sugar, butter, egg and vanilla.
- Mix well.
- Spread over each slice of bread.
- Place on ungreased baking sheet.
- Bake at 350 F for 15-20 minutes.
- At end, broil for just a moment to brown the coconut slightly.

- Place the baking sheet in the oven on the upper rack. Toast the coconut for 2-4 minutes. *Do not take your eyes off the coconut, it can turn from white to black in a matter of seconds. Cool the coconut on the baking sheet.
- While the coconut is cooling, place the cottage cheese, honey and vanilla extract in a food processor (or blender.) Puree until smooth. Add the toasted coconut and pulse to combine.
- Scoop the breakfast spread back into the cottage cheese container and refrigerate until ready to use.
