I received an e-mail last night from a fellow member, asking if I had a recipe for Cherry Balls. So, here's to you..you know who you are..I was happy to be able to help you, after your loss of the recipe. These sure are delicious! Enjoy!! My pictures

Number Of Ingredients 6

1/2 c butter, softened
1 1/2 c confectioners' sugar
1 1/2 c shredded coconut
1 Tbsp cream or milk
1 small jar, marachino cherries, ( mine were large, so i cut them in half)
1/2 - 3/4 c graham cracker crumbs or finely chopped nuts

Steps:

  • 1. Drain cherries and set aside.
  • 2. Cream the softened butter and confectioners' sugar. I used my hand mixer.
  • 3. Blend in the coconut and cream; mix well. Chill for 15 minutes.
  • 4. Take a piece of mixture in your hand, about a tablespoonful, flatten, add cherry and roll in your hand to completely cover the cherry.
  • 5. Roll in graham cracker crumbs or nuts to coat. Refrigerate for 2 hours to chill and firm.

42 maraschino cherries
1/2 cup graham wafer crumbs
1/2 cup butter (softened)
1 3/4 cups icing sugar (sifted)
1 tablespoon orange juice
1 1/2 cups coconut (finely shredded or grated)

Steps:

  • Dry the cherries on paper towel.
  • Cream the butter and gradually mix in the icing sugar and orange juice.
  • Add coconut and mix well.
  • Note: this mixture will be soft.
  • Roll a small portion of the coconut mixture evenly around each cherry and then roll in graham wafer crumbs.
  • Place on wax paper and keep cool.

This is a Christmas tradition at my house. These are great no bake sweets, however they are quite sweet.

1 1/2 cups icing sugar
1 1/2 cups sweetened coconut
1 teaspoon vanilla
1 teaspoon evaporated milk
2/3 cup graham cracker crumbs
38 maraschino cherries

Steps:

  • 1) Cream together all ingredient except the graham crumbs.
  • 2) Drain cherries and pat with a paper towel.
  • 3) Cover a cherry with coconut mixture and roll into a ball in the palm of your hand.
  • 4) Roll ball in graham crumbs
  • 5) Place in fridge or freezer.

A friend gave me this recipe because she knew how much I like chocolate-covered cherries. Coconut and nuts make this version absolutely divine.

Number Of Ingredients 9

1/2 cup butter, softened
3-3/4 cups confectioners' sugar
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
2 cups sweetened shredded coconut
2 cups finely chopped walnuts
2 jars (16 ounces each) maraschino cherries with stems, well drained and patted dry
2 packages (11-1/2 ounces each) milk chocolate chips
1 tablespoon shortening

Steps:

  • In a large bowl, beat butter and confectioners' sugar until smooth. Beat in milk and vanilla until well blended and mixture looks like softened butter. Fold in the coconut and walnuts. , With moist hands, shape 2 teaspoonfuls of coconut mixture around each cherry, forming a ball. Place on a waxed paper-lined baking sheet. Cover and refrigerate for 1 hour or until chilled., In a microwave, melt chocolate chips and shortening; stir until smooth. Dip coated cherries into chocolate. Place on waxed paper; let stand until set. Store in an airtight container at room temperature for up to 1 month.

Lynelle's mom knew what she was doing when she made this recipe. It's not your standard chocolate peanut butter ball recipe. It's so much more decadent. The peanut butter filling is smooth, creamy and just melts in your mouth. Maraschino cherries add a lovely cherry flavor while the coconut gives a bit of crunch to every bite....

BALLS
1 stick butter (softened)
1 1/3 c peanut butter (smooth or crunchy)
4 c powdered sugar
24 maraschino cherries (chopped fine)
2 c coconut
DIPPING CHOCOLATE
6 oz chocolate chips (milk, semi-sweet or dark, your choice)
6 Tbsp paraffin

Steps:

  • 1. Using a mixer, combine butter, peanut butter, powdered sugar, maraschino cherries, and coconut.
  • 2. Roll in very small balls.
  • 3. Put in freezer for several hours or preferably overnight.
  • 4. Melt in a double boiler 6 oz chocolate chips and 6 tbsp paraffin.
  • 5. Dip frozen balls in and drain over waxed paper on a rack.
  • 6. Can double dip if you want. I usually double the cherry mixture and the chips mixture making enough for dipping a double batch. Enjoy!
