POACHED SALMON STEAKS

Number Of Ingredients 11

3 quarts water
2 medium carrots, peeled and cut into 1-inch pieces
1 leek, sliced crosswise 1/4-inch thick, white and light green part only
1 medium rib celery, cut into 1-inch pieces
1 lemon, thinly sliced
2 dried bay leaves
2 sprigs fresh thyme
1/2 teaspoon whole black peppercorns
4 salmon steaks (at least 1-inch thick)
Coarse salt
Fresh dill, for garnish (optional)

Steps:

  • Prepare Court Bouillon: In a large saucepan, combine water, carrots, leek, celery, lemon, bay leaves, thyme, and peppercorns. Bring to a boil, then lower the heat and simmer 30 minutes, depending on desired intensity of flavor.
  • Prepare Salmon: Fill a medium straight-sided skillet with simmering court bouillon. Reserve remaining court bouillon for another use. Season salmon steaks on both sides with coarse salt. Carefully lower into the skillet. Return liquid to just under a simmer. Cook until the fish is opaque throughout and firm to the touch, 5 to 8 minutes. Use a slotted fish spatula to transfer salmon steaks to plates. If desired, remove skin using the tines of a fork.

POACHED SALMON WITH LEEKS

When you think of one-pot meals, hearty dishes like chili probably come to mind. Nothing wrong with chili, but this quick fish dinner is a great change of pace when you're in the mood for something that seems a bit fancier. Add a baguette to complete the meal.

Number Of Ingredients 4

2 tablespoons butter
8 cups chopped leaks, well-rinsed
2 cups chicken broth
24 ounces salmon, cut into 4 strips

Steps:

  • Trim the roots and leaves from the leeks, leaving the soft white stem. Chop the stem into sections and place in a colander over the sink, or in a bowl of water. Rinse the leeks very thoroughly, these are notoriously grainy vegetables and you don't want the dirt to end up in your food, and pat dry. In a straight edge sauté pan with a lid over medium heat add the butter and allow to melt. Then add the leeks and sauté until tender. About 8 minutes.
  • Once the leeks are tender pour in the chicken broth until it just covers the leeks. If you need a little more broth than the 2 cups called for, add a little more bit by bit. Then, add the salmon steaks on top, making sure they are separated a little. If there is skin on the salmon, place the skin side up so that the fish is resting directly on the leeks.
  • Turn up the heat so that the broth is simmering. Place the lid on the pan and cook the salmon for 8 minutes. After that, check to make sure the steaks are cooked through. If not, continue cooking for 1-2 more minutes.
  • Divide the leeks between two plates. Serve one salmon steak on top of each bed of leeks. Sprinkle with salt and pepper to taste.

4 salmon steaks, each about 1/2 pound and 1 1/2 inches thick
4 sprigs fresh thyme or 1/2 teaspoon dried
4 sprigs fresh parsley
6 peppercorns
1 bay leaf
Salt to taste, if desired
2 tablespoons white-wine vinegar
5 cups water, approximately
Caper sauce (see recipe)

Steps:

  • Put the salmon pieces in one layer in a skillet or casserole and add the remaining ingredients except the caper sauce. There should be enough water to barely cover.
  • Bring to the simmer and cover closely. Let simmer about seven minutes. Drain and serve with caper sauce spooned over.

POACHED GINGER SALMON STEAKS

a 1-inch piece of peeled fresh gingerroot, sliced thin, plus 1 teaspoon minced peeled fresh gingerroot
1 large garlic clove, mashed with the flat side of a knife
2 lemon slices
2 tablespoons soy sauce
1 cup water
two 1/2-inch-thick salmon steaks (each about 6 ounces)
1 tablespoon unsalted butter, cut into bits
1 tablespoon minced fresh parsley leaves

Steps:

  • In a 2-quart microwave-safe casserole with a lid combine the sliced gingerroot, the garlic, the lemon, the soy sauce, and the water and microwave the mixture, uncovered, at high power (100%) for 5 minutes. Add the salmon in one layer and sprinkle it with the minced gingerroot. Microwave the mixture, covered, at medium power (50%) for 5 minutes, or until the salmon just flakes, and transfer the salmon with a slotted spatula to 2 plates. In a bowl whisk together 2 tablespoons of the cooking liquid, the butter, the parsley, and salt and pepper to taste and spoon the sauce over the salmon.

OVEN-POACHED SALMON STEAKS WITH MUSTARD DILL SAUCE



Oven-Poached Salmon Steaks with Mustard Dill Sauce image

1 1/2 cups dry white wine
1/4 cup sugar
1 teaspoon peppercorns
1 1/2 teaspoons coriander seeds
1 teaspoon mustard seeds
1 1/2 teaspoons salt
1 onion, sliced
ten 1-inch-thick salmon steaks
Mustard Dill Sauce
dill sprigs for garnish
1 lemon slice for garnish

Steps:

  • In a saucepan combine the wine, 1 1/2 cups water, the sugar, the peppercorns, the coriander seeds, the mustard seeds, the salt, and the onion, simmer the mixture for 15 minutes, and let cool to room temperature. Halve the salmon steaks with sharp knife, discarding as many bones as possible, and re-form the steaks. Arrange the steaks in 2 buttered shallow baking pans, ladle the wine mixture around them, and poach the steaks, covered with a buttered piece of foil, on the upper and lower racks of a preheated 375°F. oven, switching the positions of the pans after 15 minutes, for 30 minutes. Let the steaks cool, venting the foil, and chill them in the poaching liquid, covered, for at least 6 hours or overnight.
  • Separate the salmon steaks into halves, brush them with some of the poaching liquid, and arrange them on a platter. Garnish the salmon with dill sprigs and the lemon slice and serve it with the sauce.

1/2 cup fresh lemon juice (2 juiced halves reserved)
Coarse salt
1 1/2 teaspoons whole black peppercorns
4 salmon steaks (each 3/4 inch thick)
1 small fennel bulb, trimmed and sliced
1 small onion, thinly sliced
1/2 cup finely chopped fresh dill plus 8 sprigs, plus more sprigs for garnish
8 sprigs flat-leaf parsley
1/2 cup mayonnaise
1/2 cup sour cream
3/4 cup snipped fresh chives
Freshly ground pepper

Steps:

  • Bring 6 quarts water, 6 tablespoons lemon juice, lemon halves, 1 tablespoon salt, and the peppercorns to a boil in a large, wide pot. Reduce heat; let simmer.
  • Season two salmon steaks with salt. Place one-quarter each of the fennel and onion and 2 sprigs each dill and parsley on a long sheet of parchment; top with salted steaks, one-quarter each fennel and onion, and 2 sprigs each dill and parsley. Fold parchment to make a packet. Repeat process to make another packet.
  • With kitchen twine, tie one packet to a wire rack; place in pot. Cover; poach until cooked through, about 10 minutes.
  • Use tongs and a spatula to transfer rack to a rimmed baking sheet. Carefully open packet. Remove skin and any brown fat; discard. Transfer fish to a platter, discarding vegetables; cover. Cook other packet. Reserve 1 tablespoon cooking liquid.
  • Whisk mayonnaise, sour cream, 2 tablespoons lemon juice, and cooking liquid in a bowl. Stir in chopped dill and chives; season with salt and pepper. Garnish salmon with dill sprigs; serve with sauce.

  • Heat wine and water over medium high heat in a large non-stick skillet for 5 minutes.
  • Slide salmon pieces into poaching liquid and dot with butter. Sprinkle with dried parsley, garlic, salt and pepper.
  • Bring to a slow boil, reduce heat to medium and poach until salmon flesh is firm, about 10 to 15 minutes.

4 boneless salmon steaks, 4 to 6 ounces each, with skin attached
1 cup dry white wine
3 tablespoons white-wine vinegar
1/2 cup thinly sliced onions
1/4 cup thinly sliced carrots
1/2 cup chopped celery
4 black peppercorns
2 sprigs fresh thyme, or 1 teaspoon dried
1 bay leaf
1 clove garlic, peeled
pinch cayenne pepper, or to taste
2 sprigs parsley
Salt to taste
1 tablespoon Dijon mustard
Salt and pepper to taste
2 tablespoons red-wine vinegar
1 tablespoon shallots, finely sliced
1 small clove garlic, peeled
3 tablespoons coarsely chopped chervil or parsley
1/3 cup olive or vegetable oil

Steps:

  • Place all the ingredients for the court bouillon, along with 2 quarts of water, in a large skillet or small fish poacher. Bring to a boil, cover and simmer for 10 minutes. Let it cool to room temperature.
  • Submerge the fish in the cooled bouillon. If there is not enough liquid to cover the fish by at least one inch, add water to cover. Return to a boil, lower the heat to a simmer and poach for about 5 minutes. Remove from heat and let stand in liquid about 5 minutes longer before serving. Do not overcook.
  • To make the vinaigrette sauce, place the mustard, salt, pepper, vinegar, shallots, garlic and chervil in a blender or a very fast food processor.
  • As mixture blends, pour the oil through the opening of the cover. Blend well. If sauce is too thick, add 2 tablespoons water and blend. Adjust the seasonings.

4 skinless salmon fillets (6 ounces each and about 1 inch thick)

Steps:

  • In a large, deep, straight-sided skillet or heavy pot, combine carrots, celery, onion, lemon, 1 1/2 teaspoons salt, and 6 cups water. Bring to a boil; reduce to a simmer, cover, and cook 8 minutes.
  • Season salmon with salt and gently lower into simmering liquid (liquid should just cover fish). Reduce to a very gentle simmer. Cover and cook until salmon is opaque throughout, about 5 minutes (longer for thicker fillets). Using a wide slotted spatula, remove salmon from liquid.
