CHERRY COCONUT BARS
Cherry Coconut Bars are the perfect dessert bars with a buttery graham cracker crust, and coconut, vanilla, almond extract, and maraschino cherry topping.

Steps:
- Preheat oven to 325 degrees and spray a 9x13 baking dish with baking spray.
- To a large mixing bowl add the butter, graham cracker crumbs, and brown sugar.
- Stir until well combined, then add in the flour, baking powder, and salt until just combined.
- Press mixture into the bottom of the baking dish.
- To the mixing bowl add the coconut, condensed milk, vanilla, and almond extract and mix well.
- Chop the maraschino cherries and pat dry with paper towels.
- Mix gently into coconut topping and spread mixture over graham cracker crust.
- Bake for 30-40 minutes until slightly browned.
- Cool completely then refrigerate for at least 3 hours before serving.

COCONUT AND CHERRY FRIANDS
While not particularly healthy (high in sugar) this is a recipe I adapted to help us include more healthy fat and less animal fat in our diet. You can make it with butter instead if you want. I used what is callled "LSA mix" in Australia. Also, instead of cherries you can use pretty much any dried fruit (rehydrate it in some hot water first -cranberries are nice-) and fresh mangoes or apricots are especially nice. Have fun.

Steps:
- Heat oven to 180celsius and lightly grease and flour muffin or friand pans.
- whisk the egg whites until soft peaks form. Fold in the cherries, sugar, almond, LSA and flour.
- Gently fold in the coconut oil and pour into the pans. It will be very very wet.
- Lightly Sprinkle the coconut over the top and back for 20-25 mins or until a skewer comes out clean.

COCONUT CHERRY DROPS
My momma has been making these since I was little at Christmas time. They were MY favorite, therefore, Santa got them every year also! I now make them every year for me and my husband. I hope you enjoy them.

- 1. Preheat oven to 350 degrees.
- 2. With mixer, cream together butter, sugar, almond extract,and egg .
- 3. Add, mixing on low, flour, baking powder, salt, until just combined.
- 4. With a spoon or spatula, fold in coconut nuts and cherries.
- 5. Drop by teaspoon-ful onto cookie sheets. These will not spread out and flatten. Bake 10 - 15 minutes. Until bottom barely starts to brown.

COCONUT MACAROONS WITH A CHERRY TOP
My mother made these at Easter but the recipe wasn't written down. After much research, I worked with the recipe from Diane Rattay on About.com, and modified it to add the maraschino cherries like my mom did. Be sure to whip the egg whites thoroughly until stiff and glossy. A bonus is that these are a non-fat cookie.

- Preheat oven to 300°. Line baking trays with parchment paper.
- Place coconut in a large zip lock bag. Toss in 2 T. maraschino cherry juice and shake until coconut is pink. Set aside.
- Cut 18 maraschino cherries in half. Drain on paper towels. Set aside.
- Using a mixer, beat egg whites and salt at high speed until soft peaks form.
- Sprinkle sugar in, 2 tablespoons at a time, beating well after each addition until sugar is completely dissolved (allow 2 minutes after each addition of sugar). Whites should be in stiff glossy peaks when you're done.
- Beat in vanilla. With a rubber spatula, fold in coconut and flour.
- Drop coconut by rounded teaspoon about an inch apart onto the prepared baking sheets. They won't spread very much at all. Place a half cherry on top of each cookie.
- Bake at 300° for 20 minutes, or until lightly browned. Slide parchment paper and cookies directly onto a rack to cool.
- Store in tightly covered container for up to 3 days.
- Makes 36 cookies.

COCONUT CHERRY BERRY FOOL
Use up an abundance of cherries in this easy layered dessert, with crumbled macaroons and a coconut yogurt cream topping

Steps:
- Put the cherries in a saucepan with the pomegranate or cherry juice and bring to a simmer. Cook gently for 10 mins until the fruit is tender. Add the sugar, lemon juice and brandy (if using), then simmer again for 10 mins until the liquid becomes a little thicker and syrupy. Leave to cool - if you want to do this quickly, pour the mixture into a metal roasting tin.
- Put the yogurt, cream and icing sugar in a large bowl and whip until thick but not stiff.
- Put half the cherries and their syrup in a blender or processor and pulse until very smooth. Ripple this through the cream and yogurt. Crumble the macaroons and add one-third to 4 glasses or bowls. Spoon some of the fool on top, and add some of the remaining cherries. Repeat the layers, and finish with more crumbled macaroons. Serve with extra macaroons on the side, if you like.

- Heat oven to 180C/160C fan/gas 4 and line a 20 x 30cm baking tin with parchment. Melt the butter, sugar and syrup in a large pan over a medium heat. Once melted, stir in the oats, coating them well.
- Tip ¾ of the mix into the tin and scatter the cherries over the top. Combine the remaining oat mix with the coconut flakes and tip on top of the cherries, making sure a few poke out. Bake for 30 mins, then remove from the oven and allow to cool before slicing into 12 flapjacks.

- Preheat oven to 180degC. Lightly grease 8 friand moulds with a little butter. If you don’t have friand moulds just use a medium muffin tray. Add 1-2 tablespoons of caster sugar to one of the moulds and move mould around so that the sugar sticks to the butter. Tip the remaining sugar into the next mould and continue until they are all done. This helps the friand batter ‘climb’ up the sides for a higher, lighter friand.
- In a large mixing bowl, combine ground almonds, coconut and lemon zest, making sure all the ground almonds are broken up.
- In a separate glass or metal mixing bowl, Whisk egg whites with a pinch of salt until soft, foamy, floppy peaks form (do not over-whisk until stiff peaks – you’re not making meringue!). Save the egg yolks to make a custard if you wish!
