PERFECT SEARED STEAK WITH CHARRED CRUST



Perfect Seared Steak with Charred Crust image

Adding paprika to your steak's spice rub creates a gorgeous charred crust.

4 steaks (8 ounces each)
2 teaspoons kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
4 teaspoons paprika
1/2 teaspoon freshly ground pepper
1 tablespoon olive oil or butter

Steps:

  • Mix all seasonings together in a small bowl.
  • Pat steaks dry with a paper towel.
  • Sprinkle seasoning mixture evenly over both sides of each steak, and rub to cover the meat.
  • Heat olive oil or butter in a skillet (preferable iron skillet) over medium high heat. When the skillet is very hot, add steaks and allow them to cook without moving them for at least 5 minutes on each side. Cook until desired level of doneness. (I like an internal temperature of 145 degrees F.)

Balsamic-Marinated Steak and Unstuffed Mushrooms image

We decided to top our steak with all the delicious components of a stuffed mushroom, from the crispy, buttery breadcrumbs to the bits of savory bacon. Slice any leftover steak thinly and serve in a warm crusty roll with the horseradish sauce for a quick meal.

One 2 to 2 1/2-pound 1 1/2-inch-thick London broil
1/4 cup olive oil
1/4 cup Worcestershire sauce
2 tablespoons balsamic vinegar
4 cloves garlic, smashed
2 whole sprigs rosemary plus 1 teaspoon chopped leaves
Kosher salt and freshly ground black pepper
1 strip bacon, chopped (about 1/2 ounce)
1 pound cremini mushrooms, halved
1/2 cup panko breadcrumbs
2 tablespoons unsalted butter
1/2 cup sour cream
2 tablespoons prepared drained horseradish
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • 1. Pierce the meat all over with a fork and place in a large resealable plastic bag. Add 2 tablespoons of the olive oil, the Worcestershire, vinegar, garlic and whole rosemary. Seal the bag, pushing out all the air. Shake the bag a few times and refrigerate 8 hours or overnight.
  • 2. Preheat the broiler and line a rimmed baking sheet with aluminum foil. Remove the meat from the marinade and pat dry. Sprinkle both sides with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Broil, flipping once, until the internal temperature reaches 125 degrees F, about 13 minutes. Transfer to a cutting board, tent with foil and let rest at least 15 minutes.
  • 3. Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Cook the bacon, stirring, until crispy, about 5 minutes. Add the mushrooms and cook until golden brown and tender, about 10 minutes. Add the breadcrumbs, butter, chopped rosemary and 1/4 teaspoon each salt and pepper. Cook, stirring, until the breadcrumbs are golden brown, another 3 minutes. Set aside.
  • 4. Stir together the sour cream and horseradish and season with salt and pepper. Slice the steak against the grain, top with the mushrooms and garnish with the chopped parsley. Serve with the horseradish sauce on the side.

WARM BACON-MUSHROOM VINAIGRETTE

This vinaigrette is perfect with spinach, escarole, or kale. It's also wonderful served over pork chops! This can be made 1 day ahead, just rewarm before using. From Bon Appetit magazine.

4 ounces bacon (about 4 slices)
3 tablespoons water
2 cups mushrooms, sliced
3 tablespoons sherry wine vinegar
1/4 cup water
2 tablespoons vegetable oil
2 tablespoons flat leaf parsley, chopped
kosher salt
black pepper, freshly ground

Steps:

  • Cut the bacon slices int 1/2 inch wide strips. Cook the bacon with 3 tbsp water in a medium skillet over medium heat, stirring often, until the bacon starts to crisp. Add the mushrooms and cook, tossing occasionally, until tender, 5-6 minutes.
  • Add the sherry vinegar and 1/4 cup water. Simmer until reduced by half, about 1 minute. Stir in the vegetable oil and season with salt and pepper. stir in the chopped parsley.
  • Enjoy!

1/2 cup olive oil
1/4 cup shallot, minced
2 garlic, minced
2 cups mixed wild mushrooms (shiitake, oyster, cremini, chantrelle, sliced if large)
1/2 teaspoon kosher salt
1/2 teaspoon pepper, freshly cracked
1/4 cup white wine vinegar
1 tablespoon thyme, chopped
2 teaspoons tarragon, chopped
1 tablespoon brandy (or Cognac) (optional)

Steps:

  • Heat oil in a skillet over medium high heat. Cook shallots until tender and golden, about 5 minutes.
  • Add garlic and cook just until fragrant (do not let garlic brown), about 30 seconds. Add mushrooms, salt and pepper and saute until golden, about 8 minutes.
  • Drizzle with vinegar, thyme and tarragon. Cook 1 minute. Sprinkle with brandy if using. Serve warm.
  • Use immediately or store, covered in the fridge for up to 3 days.

8 ounces boneless beef sirloin steak (3/4 inch thick)
3 tablespoons olive oil, divided
1 cup each sliced fresh baby portobello, shiitake and button mushrooms
2 tablespoons balsamic vinegar
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 tablespoons walnut oil
2 tablespoons finely chopped walnuts
3 cups torn mixed salad greens
1 shallot, sliced
2 tablespoons crumbled goat cheese

Steps:

  • In a large skillet over medium heat, cook steak in 1 tablespoon olive oil until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-6 minutes on each side. Remove from the skillet; let stand for 5 minutes before slicing., Meanwhile, in the same skillet, saute mushrooms until tender. In a small bowl, combine vinegar and thyme. Whisk in walnut oil and remaining olive oil. Stir in walnuts. , Divide salad greens and shallot between 2 serving bowls. Cut steak into slices. Top salads with steak and mushrooms. Drizzle with dressing; sprinkle with cheese.

  • Remove the steaks from the fridge so that they have a little time to come to room temperate (this helps ensuring your meat doesn’t get dried out). Cut your veggies as instructed above, place them in separate bowls. This recipe moves fast once you start cooking.
  • Heat a large heavy bottomed skillet (such as a cast iron skillet) over medium low heat. Melt the butter and heat the oil. Add the mushrooms and saute for 3 minutes, stirring occasionally. Then add the onions and saute another 5 minutes, stirring frequently. Then stir in the rosemary and saute for 1 minute, or until fragrant. Add the garlic and saute for 1 minute. Remove the mushrooms and onion mixture to a bowl, set aside.
  • Turn the heat up to medium high. Generously salt and pepper the steaks on one side. Melt the butter and heat the oil. Add the steaks seasoned side down. Season the remaining side with more salt and pepper. Cook the steaks for 3 minutes on the first side, flip and cook for another 2 to 3 minutes on the other side for a rare steak. Cook longer for a medium rare steak and cook even longer for a well done steak. Internal temps should read: rare – 120 to 130F. Medium rare – 130-135F. Medium – 135-245F. Well done – 155-165F. Once the steaks are cooked to your liking remove them from the pan and place them on a plate, cover with foil.
  • Turn down the heat of the pan to medium low and immediately add the red wine. Use a wooden spoon to scrape all the cooked on bits up from the pan. Allow to simmer for 3 minuets, or until the wine is reduced by half. Stir in the beef broth and simmer for another 2 minutes, until reduced slightly. Turn the heat down to low, stir in the Dijon mustard. Then slowly stir in the heavy cream. Add the mushrooms and onions back in and simmer fro 2 minutes. Taste and adjust seasoning as needed and remove from the heat.
