1/2 cup raw pecans
1/2 cup pitted dates (approx 5-6 large dates)
2 tablespoons hemp seeds
1 tablespoon chia seeds
1/2 cup shredded unsweetened coconut flakes + extra for rolling bites in
1 tablespoon liquid coconut oil
1 tablespoon cocoa powder
1 tablespoon almond milk
1 tablespoon collagen peptides

Steps:

  • In a food processor or NutriBullet, pulse pecans until flour like consistency
  • Add dates to mixture + pulse again.
  • Add remaining ingredients + blend until combined
  • Roll into 1 inch balls and roll in additional coconut flakes if desired
  • Store in an airtight container in the fridge for up to one week days

These are super yummy and super easy! The combination of the chocolate, coconut, and oats is wonderful. No baking required! These also freeze well.

3 cups quick cooking oats
1 cup sweetened flaked coconut
2 cups white sugar
½ cup unsweetened cocoa powder
½ cup milk
½ cup margarine

Steps:

  • Line a baking sheet with waxed paper.
  • Mix oats and coconut in a large bowl until thoroughly combined.
  • Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

  • To a food processor, add all ingredients and blend until a thick paste/ball forms (see photo) ~3-5 minutes. Scrape down sides as needed.
  • If mixture is too thick, add more melted coconut butter or tahini (or nut butter). If mixture is too thin, add more almond flour or shredded coconut and pulse. It should be thick and scoopable.
  • Scoop out 2-Tbsp amounts (I like this cookie scoop) and arrange on a parchment-lined baking sheet. As the recipe is written, you should have about 20 bites.
  • Set in freezer or refrigerator to firm up. Once firm to the touch, they're ready to enjoy. For best results, store in the freezer up to 1 month or refrigerator up to 1 week. If storing in the freezer, let thaw 5-10 minutes before enjoying for best texture.
