Coca-Cola Cake with Broiled Peanut Frosting consists of a moist chocolate sheet cake topped with a wonderfully sweet and salty peanut butter icing.

2 cups all-purpose flour
2 cups granulated sugar
1 cup salted butter, (melted)
1/4 cup unsweetened cocoa powder
1 cup Coke
1/2 cup buttermilk
2 large eggs, (lightly beaten)
1 teaspoon baking soda
1 teaspoon vanilla extract
1 1/2 cups mini marshmallows
6 tablespoons butter, (softened)
1 cup packed dark brown sugar
2/3 cup smooth peanut butter
2 tablespoons milk
1/2 cup chopped peanuts

Steps:

  • Preheat oven to 350 degrees and spray a 9x13-inch baking pan with baking spray.
  • In a large bowl, whisk together flour and sugar.
  • In a medium bowl, whisk together melted butter, cocoa powder, and Coke. Pour into bowl with flour and stir until mixed well.
  • Add buttermilk, eggs, baking soda, and vanilla and mix well.
  • Stir in mini marshmallows and pour into prepared pan. Bake for 35 to 40 minutes. Let cake cool for 10 minutes before frosting.
  • To make frosting, beat butter, brown sugar, and peanut butter with an electric mixer until blended.
  • Beat in the milk and then stir in the peanuts. Spread frosting on cake.
  • Place cake under the broiler for a minute or two, or until the frosting just starts to get browned.

1 cup coca cola (or pepsi)
1/2 cup buttermilk

1 1/2 cup miniature marshmallows
Broiled Peanut Butter Frosting
6 tablespoons softened butter
1 cup dark brown sugar
2/3 cup chunky peanut butter
1/4 cup milk
2/3 cup chopped salted peanuts

Steps:

  • Preheat oven to 350 degrees F. Butter and flour a 9x13x2-inch pan. Combine flour and sugar. Combine melted butter, cocoa and Coke. Add to flour mixture, stirring well. Add buttermilk, eggs, baking soda, and vanilla. Mix well. Fold in marshmallows. Pour into prepared pan. Bake 30-35 minutes. Remove cake from oven and frost while still warm. Broiled Peanut Butter Frosting: Preheat broiler. Cream together the butter, sugar, and peanut butter. Beat in milk, then nuts. Spread over warm cake. Place frosted cake under broiler, about 4 inches from heat source. Broil only a few seconds, until topping starts to bubble. Watch carefully! Cool at least 30 minutes before serving.

3 tablespoons unsweetened cocoa powder
1 cup cola-flavored carbonated beverage
½ cup buttermilk
½ cup butter
2 tablespoons unsweetened cocoa powder
6 tablespoons cola-flavored carbonated beverage
4 cups confectioners' sugar
1 cup chopped pecans

Steps:

  • Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly.
  • Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
  • Bake in a prepared 9 by 13 inch pan for 40 minutes at 350 degrees F (175 degrees C).
  • While still hot, frost with Coco Cola Frosting: Combine 1/2 cup butter or margarine, 2 tablespoons cocoa and 6 tablespoons cola soft drink and heat to boiling. Pour over 4 cups confectioners' sugar and mix well. Mix in chopped nuts and spread over hot cake.

GLAZE:
1 can (12 ounces) cola
1/2 cup butter, cubed
1/4 cup baking cocoa
4 cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, whisk the first 5 ingredients. In a small saucepan, combine cola, butter and cocoa; bring just to a boil, stirring occasionally.
