Time 20m

Yield 1 salad, 12 serving(s)

Number Of Ingredients 14

1 (15 ounce) can green beans
1 (15 ounce) can wax beans
1 (15 ounce) can lima beans
1 (15 ounce) can kidney beans
1 (15 ounce) can garbanzo beans (chickpeas)
1 onion, chopped (I add the next day about an hour before serving, other wise it seems too strong)
1 green pepper, chopped (my grandmother's recipe calls for this but we never put it in as we don't care for it)
1/2 cup vegetable oil
1/2 cup vinegar
3/4 cup sugar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dry mustard
1 -2 teaspoon celery seed

Steps:

  • Drain all the beans and combine in a large bowl.
  • Heat (but do not boil) (I do it in the microwave for about 1 minute) vegetable oil, vinegar, sugar, salt, pepper, dry mustard, and celery seed.
  • Mix with bean mix and let stand overnight.
  • Add onion/pepper about an hour before serving.

CLASSIC FIVE-BEAN SALAD

Classic Five-Bean Salad image

Different kinds of beans cook at different rates, so it's best to prepare them in separate pans (working in batches if necessary). The salad can be made with just a few types instead of all five, as long as the total amount of dried beans still measures 2 1/2 cups.

FIVE-BEAN SALAD

Five-Bean Salad image

In the classic version of this Italian salad, beans are slow-cooked until uniformly softened. In this interpretation, the beans are blanched quickly, to emphasize their fresh taste, color, and texture.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Yield Makes about 6 cups

Number Of Ingredients 20

6 cups water
2 teaspoons plus 1 tablespoon coarse salt
1 bay leaf
1 piece (1/2 inch) cinnamon stick
1/2 teaspoon whole black peppercorns
1 oregano sprig
3/4 pound fresh cranberry beans, shelled (about 1 cup)
4 ounces haricots verts (green, yellow, or a combination), trimmed
4 ounces green beans, trimmed
4 ounces wax beans, trimmed
4 ounces flat Italian beans (green, yellow, or a combination), trimmed
1 teaspoon Dijon mustard
1 teaspoon sugar
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1/4 cup red-wine vinegar
3/4 cup extra-virgin olive oil
1/4 teaspoon crushed red-pepper flakes
2 teaspoons finely chopped fresh oregano
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Make the beans: Stir together water, 2 teaspoons salt, bay leaf, cinnamon stick, peppercorns, and oregano in a saucepan. Bring to a boil. Add cranberry beans. Return to a boil. Reduce heat, and simmer until tender, 15 to 20 minutes. Drain.
  • Prepare an ice-water bath. Bring a large pot of water to a boil. Add remaining tablespoon salt. Working with one variety at a time, blanch remaining beans in boiling water until crisp-tender (about 1 1/2 minutes for haricots verts; 2 1/2 minutes for larger beans). Using a slotted spoon, transfer to ice-water bath to stop the cooking. Drain.
  • Make the dressing: Whisk together mustard, sugar, salt, and pepper in a large bowl. Add vinegar, and whisk until sugar has dissolved. Add oil in a slow, steady stream, whisking until emulsified. Whisk in red-pepper flakes and herbs.
  • Add beans to dressing, and toss. Let stand at room temperature for 1 1/2 hours, tossing occasionally, or marinate in the refrigerator overnight before serving.

CLASSIC BEAN SALAD

Classic Bean Salad image

You can use any kind or combination of canned beans to make this classic picnic salad, but a mix of white beans, chickpeas and red kidney beans makes it especially colorful. Although this is delicious when freshly made, it gets even better as it sits. If you have time, make it at least an hour or two before serving; it can rest at room temperature for up to 4 hours - but after that, slip it into the fridge. If you want to make this the day before, add the celery and parsley just before serving, so they stay crisp and green.
