ONE POT HAM AND CHEESE PASTA
Steps:
- Melt butter over medium heat in a large stockpot.
- Once melted, add in onion, salt and pepper and cook for 5-7 minutes, or until tender.
- Add in ham, pasta, garlic, mustard, wine (if using), water, and additional salt.
- Bring to a simmer and simmer for 9-13 minutes, stirring regularly, until pasta is al dente.
- Remove from heat and stir in swiss and parmesan.
- Taste and re-season, if necessary, and enjoy!

Steps:
- Make pasta: Put a big pot of salted water onto boil on high heat for the pasta (4 quarts, 2 tablespoons salt). While the pasta water is heating, prep the other ingredients. Once the water has reached a rolling boil, add the pasta and stir so it doesn't stick to the bottom of the pan. Let the water return to a rolling boil and cook, uncovered, for 9 to 10 minutes, until the pasta is "al dente", cooked through but still slightly firm to the bite.
- Make roux: Melt the butter in a large (3 to 4 quart), thick-bottomed pot on medium heat. Add the minced garlic. Let the garlic sizzle for a few seconds. Add the flour and whisk so that any lumps are dissolved. Let the roux (flour and butter) bubble and cook for a minute or two.
- Make the sauce: Slowly add the milk and cream, a quarter cup at a time, whisking until incorporated after each addition. Increase the heat to medium high. Add 1⁄4 teaspoon of ground nutmeg and 1⁄2 teaspoon of ground black pepper. (You may want to increase these later to taste.) Add 1⁄2 teaspoon of Italian seasoning. Add half of the shredded Mozzarella and Parmesan cheeses, whisking until melted and incorporated into the sauce. Add 3/4 teaspoon of salt (again, you may want to increase this to taste). Stir in 1 cup of water (can use pasta cooking water if you want).
- Preheat oven to 400°F
- Combine pasta with sauce, ham, parsley, onion greens: Drain the cooked pasta and add it to the sauce. Add the ham. Add the chopped parsley and onion greens or chives. Gently stir to combine. Taste, and add more nutmeg, salt, pepper, or Italian seasoning to taste.

- Cook spaghetti according to package directions. Meanwhile, in a large bowl, combine soup, milk, onion, parsley and Worcestershire sauce. - Gradually add the milk and whip. Heat until boil.

- Heat oven to 350 degrees.
- Cook and drain pasta per package directions.
- Melt butter over low heat and saute garlic in it for 30 seconds.
- Whisk in flour and salt and pepper and cook over medium heat, stirring constantly until smooth and bubbly.
- Gradually stir in milk and heat to a boil, stirring constantly.
- Stir in mustard and Colby cheese and cook, stirring occasionally until cheese is melted.
- Stir pasta and ham into cheese sauce.
- Pour into ungreased 2 quart baking dish.

- 1. Melt butter in a large saucepan. Add onion and garlic.
- 2. Saute over medium heat stirring constantly for about 3 minutes or until onion is tender. Stir in ham undiluted soup, milk,raisins, and chili powder.
- 3. Cook over low heat until hot, stirring occasionally DO NOT BOIL. Keep warm over low heat until spaghetti is cooked stir frequently.
- 4. Add salt to rapidly boiling water add spaghetti gradually so water continues to boil. Cook stirring occasionally until tender drain in colander.
- 5. Place spaghetti on serving plate serve sauce with spaghetti.
