RAZOR CLAM CEVICHE



Razor Clam Ceviche image

In 2011, razor clams were showing up on menus all over New York City. Some chefs steamed them, some served them with pasta, others decided they would be great in ceviches, as here. A shopping tip for razor clams: the thinner the better. Though the shells usually gape a bit, they should nearly close when touched. Razor clams are much more perishable than hard clams, but their shelf life can be extended by steaming them for use in salads later. Shaunna Sargent, the chef at Corsino restaurant in Manhattan, is among the chefs who froze the clams for a few hours to make the meat easier to remove and more tender. Regardless of whether they are raw or frozen, a paring knife is all that is needed to shuck them. Be sure to scrub the shells first in running water to remove any sand or grit.

1 pound razor clams, rinsed and scrubbed
1 pink grapefruit, peeled, segmented, juice reserved
1 teaspoon pink peppercorns
12 fresh mint leaves, slivered
1 tablespoon extra virgin olive oil
Salt
Round tortilla chips

Steps:

  • Use a paring knife to gently pry apart clam shells and then cut meat away, discarding any gritty dark parts and a half-inch of the dark, hard siphon. Cut meat into half-inch pieces. Place in a bowl. Dice grapefruit segments and add them to the bowl with reserved juice, pink peppercorns, mint and olive oil. Fold together and refrigerate 3 hours.
  • Season clam mixture with salt to taste. Serve in appetizer portions with chips, or drain well and pile onto chips to make canapés.

We use the siphons for their texture and marinate in the fresh juice of 3-4 limes. Add the sauce to each bite or the entire bowl. The sauce is adapted from Chef Jean Paul Desmaison. Serve with tortilla chips or saltines.

12 razor clams
Juice of 3-4 fresh limes
2-3 ripe tomatoes, finely diced
1 small red onion, finely diced
½ bunch of cilantro, finely chopped
1 serrano or jalapeno pepper, finely diced
1 avocado, finely chopped
½ fresh lime
1 garlic clove
½ serrano pepper, finely diced
¼ bunch of cilantro
¼ small red onion, finely diced
½ tsp salt
3 tbsp soy sauce
1 tsp of finely grated fresh ginger or ginger powder
1½ tbsp mirin
½ tbsp extra virgin olive oil
½ tbsp sesame oil
1 tsp honey (optional, use if you want to sweeten)

Steps:

  • Cover the meat completely for about two hours to "cook" the clams in the acidic juice.
  • Drain the juice and add a little fresh lime juice, tomatoes, red onion, cilantro, serrano peppers, and avocado (finely diced).
  • When ready to eat, combine all the ingredients of the sauce.

1 pink grapefruit, peeled and segmented juices reserved
1 teaspoon pink peppercorns

kosher salt
tortilla chips, for serving (round)

Steps:

  • Gently pry clam shells open and cut out meat; dice meat into 1/2 inch pieces, discarding any dark, gritty parts and the dark, hard siphon, and place diced meat into a bowl.
  • Dice grapefruit and add to bowl along with any reserved juice, the pink peppercorns, mint, and olive oil; stir to combine.
  • Cover, and refrigerate 3 hours.
  • After marinating, season the clam mixture with salt to taste.
  • Serve with tortilla chips or drain well and serve piled on individual chips like a canape.

This is Authentic Mexican Ceviche, I've had it several times in Mexico, and also have learned to cook Mexican food for my husband. Every time I make this it's a hit.

5 large lemons, juiced
1 pound jumbo shrimp, peeled and deveined
¼ cup chopped fresh cilantro, or to taste
tomato and clam juice cocktail
2 white onions, finely chopped
1 cucumber, peeled and finely chopped
1 large tomatoes, seeded and chopped
3 fresh jalapeno peppers, seeded and minced
1 bunch radishes, finely diced
2 cloves fresh garlic, minced
tortilla chips

Steps:

  • Place shrimp in a bowl (You may either coarsely chop the shrimp, or leave them whole, depending on your preference.) Add lemon, covering shrimp completely. Cover, and refrigerate for 30 minutes, or until opaque and slightly firm.
  • Add tomatoes, onions, cucumber, radishes, and garlic; toss to combine. Gradually add cilantro and jalapenos to desired taste (jalapeno will grow stronger while marinating). Stir in tomato and clam juices to desired consistency. Cover, and refrigerate for 1 hour. Serve chilled with tortilla chips.

12 very fresh cherrystone clams
6 tablespoons fresh lime juice
2 jalapeno peppers, stemmed, seeded and minced
1/2 medium red onion, peeled and diced small
1 ripe tomato, seeded and diced small, optional
2 tablespoons chopped cilantro
Freshly ground black pepper to taste

Steps:

  • Shuck clams into a bowl with their juice. Save 16 of the best half shells, scrape them clean and refrigerate. Remove the clams from their juice and check for shell fragments. Cut into small pieces and place in bowl. Strain half of the juice over the clams, discard the rest.
  • Add lime juice, jalapenos, onion, tomato, if using, and cilantro. Season with black pepper. Refrigerate overnight. Spoon the ceviche into the clam shells and serve on crushed ice.
