ROOSTER APPLE SOUR

Steps:
- Make the apple jam: Peel, core and cube the apples. Combine in a saucepan with the cinnamon sticks and 2 tablespoons sugar; cover and bring to a simmer over medium-low heat. Uncover and cook, stirring occasionally, until soft, about 20 minutes. Let cool.
- Meanwhile, make the simple syrup: Combine 1/2 cup each sugar and water in a saucepan and bring to a boil over medium heat, stirring until the sugar dissolves. Remove from the heat and let cool.
- Make the cocktail: Combine 1 teaspoon of the apple jam, 1/2 ounce simple syrup, the lime juice and whiskey in a cocktail shaker with ice. Shake vigorously and strain into a martini glass. Garnish with a dried apple slice.
THE FOREVER YOUNG COCKTAIL
Steps:
- Shake 1 1/2 ounces gin, 1 ounce each Granny Smith apple juice and celery juice, 1/2 ounce pasteurized egg white, 1/4 ounce lime juice and 1/8 teaspoon wasabi in a shaker. Strain into a glass filled with ice and sprinkle with celery salt.
GINGER POACHED PEAR IN LINGONBERRY BROTH
Steps:
- Combine first 6 ingredients in a large saucepan and bring to a boil over medium high heat. Add pears and reduce heat to a simmer until pears are soft (approximately 10-15 minutes). Remove from heat, reserve pears and discard poaching liquid.
- Pat pears dry with kitchen towel.
- Spread the phyllo sheets out on top of each other on a cutting board or other smooth surface and cut into 4 squares with a chef's knife. Dab sheets with melted butter and place pear on each section.
- Draw phyllo up around fruit and tie 1-inch from top with a vanilla bean. Place pears on a baking dish and cover with aluminum foil. Bake in a 400 degree oven until golden brown, approximately 10 to 12 minutes.
- Combine all ingredients in a large saucepan over low heat. Heat through without bringing to a boil.
- Arrange pears in a large bowl and pour lingonberry broth over the pears. If desired, serve with two scoops of vanilla ice cream. Yield: 4 servings
FRIED CHICKEN

- Make the spice blend: Combine the berbere, paprika, celery salt, white pepper, cumin, garlic powder and 1 1/2 teaspoons salt in a bowl. Brine the chicken: Stir 1 cup salt and 8 cups cold water in a large bowl until the salt dissolves. Add the chicken to the brine, cover and refrigerate 1 hour, 30 minutes. Remove the chicken from the brine and pat dry. Marinate the chicken: Whisk the buttermilk, coconut milk, minced garlic cloves and 1 tablespoon of the prepared spice blend in a large bowl. (Reserve the remaining spice blend for sprinkling.) Submerge the chicken in the marinade; cover and refrigerate overnight. Heat the oil: Remove the chicken from the refrigerator and let it almost come to room temperature, about 1 hour. Fill a large cast-iron skillet about halfway with peanut oil; add the rosemary and whole garlic cloves. Heat over medium-high heat until a deep-fry thermometer registers 360 degrees F, or until a pinch of flour added to the oil sizzles and rises to the surface.
- Bread the chicken: While the oil heats, mix the all-purpose flour, semolina flour, cornstarch and white pepper on a baking sheet. Remove the chicken from the marinade with tongs, letting the excess drip off. Roll the chicken in the flour mixture to coat thoroughly, then sprinkle more of the flour mixture on top.
- Fry the chicken: Shake off any excess flour from the chicken, then, using tongs, carefully lower each piece into the hot oil. Fry, turning occasionally, until just cooked through, about 7 minutes. (Reduce the heat to medium if the crust starts to brown too quickly.) Transfer to a rack and let rest, 10 minutes. Discard the garlic cloves and rosemary. Fry again: Reheat the oil until a deep-fry thermometer registers 375 degrees F to 380 degrees F. Fry the chicken again, this time in 2 batches to avoid crowding the pan, until the breading is crisp and deep golden brown, about 1 minute.
- Season the chicken: Transfer the chicken to the rack to cool slightly, and sprinkle with the reserved spice blend. Keep the fried chicken warm in a 250 degrees F oven for up to 1 hour before serving, or let cool and pack for a picnic.
SWEDISH MEATBALLS

- Soak the bread (bread crumbs) in the cream. Mix the ground meat and add the cream and bread mixture. Brown the finely chopped onion in a little butter. Mix the onion with an egg and add it to the meat mixture. Work the mixture until smooth. Add some more water to give a smooth consistency, season with pepper and salt as you go.
- Roll the meat into balls. The simplest method is to shape them using the wet palm of your hand and a couple of tablespoons, alternately standing them in a glass of hot water.
- Melt rather large quantity of butter and put 10 to 20 meatballs at a time, depending on their size. Let them brown, and shake the pan now and again so that they roll around, removing each one when they are ready.
- If the meatballs are to be served with gravy or sauce, proceed as follows:
- Rinse the frying pan with water after each frying and add new butter. When all the meatballs are ready, sprinkle a little flour in the pan, pour in the gravy (i.e. butter from the frying and water used to rinse the pan) and stir until the sauce is even. Flavor with a little white pepper, salt and perhaps some Soy Sauce. Let the meatballs bubble gently for a few minutes in the sauce, over low heat. If a creamy sauce is desired, pour cream into the pan after the last frying.
- Serve the meatballs with potatoes, lingonberries, salt or pickled cucumber and gravy.
SEITAN SKEWERS WITH CHIMICHURRI CITRUS-HERB SAUCE

- 1. To prepare the marinade, put all of the marinade ingredients in a blender. Blend on high speed until well combined.
- 2. Put 4 pieces of seitan on each of 12 metal or bamboo skewers. Place them in a large nonreactive bowl or baking dish, pour the marinade over them, and let marinate for at least 1 hour or up to overnight.
- 3. To prepare the Chimichurri Citrus-Herb Sauce, put all of the chimichurri ingredients in a blender. Blend on high speed until well combined. Refrigerate until ready to use.
- 4. Prepare a charcoal, gas, or stove-top grill. Grill the skewers over medium-high heat until well browned, about 5 to 7 minutes per side. Serve immediately, drizzled with the Chimichurri CitrusHerb Sauce.
