- 1. Preheat an oven to 200F; fit a wire rack on baking pan and place in oven.
- 1. Whisk milk and eggs in a large shallow dish. Whisk sugar and cinnamon in a small bowl. Set aside.
- 2. Heat a large skillet over medium heat. Add 1/2 tablespoon butter and swirl to coat pan. Dip 2 slices of bread into egg mixture and place in skillet. Sprinkle cinnamon sugar on top and cook until bottom browns and crisps, about 4 minutes. Flip toast, adding butter if needed, and cook until golden, about 3 minutes more. Transfer toast to baking pan in oven. Repeat with remaining bread and batter. Serve with maple syrup and strawberries.

CINNAMON FRENCH TOAST

- Preheat the oven to 200 degrees F.
- Whisk together the half-and-half, granulated sugar, cinnamon, vanilla, salt and eggs in a large bowl until very well combined and no visible egg white remains. Pour the mixture into an 8- or 9-inch square baking dish.
- Heat a large nonstick skillet over medium heat. Add 1/2 tablespoon butter and when it melts, swirl to coat the skillet.
- Put 2 slices of bread at a time in the custard until moistened through, about 10 seconds on each side for the thicker bread and 5 seconds for the thinner sandwich bread.
- When the butter begins to sizzle, transfer the soaked slices to the skillet and cook until the custard is heated through and the slices are very golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and hold in the oven while you repeat with the remaining butter, bread and custard.
- To serve, fan out the slices on a platter or individual plates and dust with confectioners' sugar and additional cinnamon. Serve with fresh fruit and maple syrup.

- Beat eggs, half and half, sugar, 2 teaspoons cinnamon and vanilla extract in 13x9x2-inch glass baking dish to blend. Add bread and turn to coat. Cover and chill until bread absorbs egg mixture, at least 30 minutes and up to 1 day.
- Melt butter in heavy large skillet over medium heat. Add bread and cook until golden and cooked through, about 3 minutes per side. Transfer to plates. Combine powdered sugar with remaining 1 teaspoon cinnamon and sift over toast. Serve with maple syrup, if desired.

- Cut bread into 3/4 inch slices.
- Dip in milk/egg mixture long enough to soak through.
