NUTMEG CHICKEN (GRENADIAN INSPIRED)



Nutmeg Chicken (Grenadian Inspired) image

1/3 cup of coconut palm sugar (or raw cane sugar works too)
2 tbsp maple syrup
1/2 tsp of cinnamon
1/2 tsp of nutmeg
1/4 cup of coconut aminos (or use organic soy)
1/4 tsp ginger
1/4 tsp of scotch bonnet or chilli flakes
1 cup of water
1/2 tbsp of tapioca starch
2 lb chicken breasts (approx (4 fillets) chopped )
3 garlic cloves (minced)
1 small onion (chopped)
3 tsp all purpose seasoning (see notes for the recipe)
1 tsp thyme (dried or fresh with stems removed)
1 tsp of Himalayan pink salt
1 tsp of black pepper
2 tbsp of olive oil (or coconut oil)

Steps:

  • Place the chicken in a medium sized bowl and season with the all purpose seasoning, pink salt, thyme and back pepper and set aside.
  • Add the coconut sugar, cinnamon, nutmeg, ginger, chilli flakes in a saucepan.
  • Mix the coconut aminos. maple syrup, water and tapioca starch together than pour it into the saucepan.
  • Bring the saucepan to the boil and reduce to simmer while stirring for 5 minutes then set aside.
  • Meanwhile heat the oil on medium heat.
  • Proceed to saute the garlic and onion until soft and translucent.
  • Add the seasoned chicken to the pan and proceed to cook the chicken until it's sealed (turns white-ish in colour) This will take several minutes. If the chicken gives off an liquid, you will need to get rid of this before adding the syrup by increasing the heat and stirring until the water evaporates.
  • Pour the nutmeg syrup all over the chicken and bring to a rolling boil.
  • Reduce the flame to medium-low, cover the pan with lid and occasionally baste the chicken throughout the 20-25 minute cooking time.
  • If you are left with excess liquid and want the syrup to adhere to the chicken increase heat to high and allow the liquid to evaporate and stick to the chicken (be careful not to burn the chicken).

The combination of unique ingredients make this chicken dish delicious. It roasts beautifully and is surprisingly fast once it's in the oven. I serve this with the Chimichurri Sauce I found on Allrecipes, and I can't get enough! Plus the leftovers are fantastic for sandwiches, salads, and Mexican dishes.

2 teaspoons salt
1 teaspoon white sugar
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice
⅛ teaspoon ground nutmeg
⅛ teaspoon ground cinnamon
1 (4 pound) whole chicken
5 cloves garlic, crushed

Steps:

  • In a bowl, mix the salt, sugar, cloves, allspice, nutmeg, and cinnamon. Rub the chicken with the mixture. Cover chicken, and place in the refrigerator for 24 hours.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Stuff the chicken cavity with the garlic. Place the chicken, breast side down, on a rack in a roasting pan.
  • Roast 15 minutes in the preheated oven. Reduce heat to 450 degrees F (230 degrees C), and continue roasting 15 minutes. Baste chicken with pan drippings, reduce heat to 425 degrees F (220 degrees C), and continue roasting 30 minutes, to an internal temperature of 180 degrees F (85 degrees C). Let stand 20 minutes before serving.

Being a new mom on a small budget, I've been experimenting with chicken recipes. I actually wanted to make another dish but didn't have all the ingredients, so I substituted a few and came up with this recipe.

6 to 8 chicken pieces, skin removed
2 tablespoons butter
1/4 cup chopped onion
1/4 cup minced fresh parsley
2 can (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
1/2 cup milk
1 tablespoon ground nutmeg
1/4 teaspoon rubbed sage
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
Additional ground nutmeg

Steps:

  • In a large skillet, brown chicken in butter. Remove chicken and set aside. , In the same skillet, saute onion and parsley until onion is tender. Add the soup, sour cream, milk, nutmeg, sage, thyme and rosemary; mix well. Return chicken to the skillet an spoon sauce over pieces. , Simmer, uncovered, for 25-30 minutes or until chicken is no longer pink, basting occasionally. Sprinkle with additional nutmeg.

¼ cup olive oil
1 teaspoon ground cinnamon
1 teaspoon salt
½ teaspoon lemon pepper
½ teaspoon garlic powder
½ teaspoon ground dried thyme
2 pounds bone-in chicken pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 13x9-inch baking dish with aluminum foil.
  • Stir olive oil, cinnamon, salt, lemon pepper, garlic powder, and thyme together in a small bowl; rub onto chicken to coat. Arrange coated chicken pieces into a baking dish with the skin side down.
  • Bake in preheated oven for 35 minutes, turn, and continue cooking until the chicken is no longer pink at the bone and the juices run clear, 20 to 25 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove from oven, cover loosely with aluminum foil, and rest chicken for about 15 minutes before serving.

2 chicken breasts
1/2 cup breadcrumbs
2 tablespoons cinnamon
1 tablespoon nutmeg
vegetable oil
1 egg

Steps:

  • In a dipping bowl whip 1 egg.
  • In a second dipping bowl add bread crumbs, Cinnamon and Nutmeg.
  • Dip chicken breast in egg, then in bread crumbs until coated.
  • Add vegetable oil to pan and turn heat to medium-high.
  • When oil is hot, test with extra bread crumbs, add chicken.
  • Fry until golden, then flip and when second side is golden remove from heat.
  • If center of thickest peace is pink when cut, then bake at 300 until cooked throughout.
  • Serve with sour cream mashed potatoes.

While watching FoodTV, I saw a piece about Amy Ruth's restaurant in New York where the owner made fried chicken dipped in a honey cinnamon mixture. It looked so good I began searching on the web for a recipe which approximated it... and after much browsing of webpages I put together a recipe that I thought might taste something like it. I don't fry my chicken, so here's a baked version, tweaked to my own tastes.

3 lbs chicken, jointed in 8 pieces (make sure to use good quality chicken!)
1/2 cup flour
2 teaspoons salt
3/4 teaspoon good quality cinnamon
1/4 teaspoon turmeric
1/4 teaspoon black pepper
1 pinch freshly ground nutmeg
1 egg
2 tablespoons milk
1/3 cup dried crushed breadcrumbs
cooking spray
2 tablespoons oil (optional)
1/4 cup butter
1/2 cup honey
2 pinches finely ground cinnamon
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a large roasting pan lightly with cooking spray.
  • Combine the flour with the salt, cinnamon, turmeric, black pepper, and a pinch nutmeg.
  • Coat the chicken pieces well with the flour mixture (you can use chicken with or without skin on - it's up to you).
  • Beat together the egg and milk; dredge the flour-coated chicken pieces in the egg mixture, then into the breadcrumbs.
  • Arrange pieces skin side up (if using pieces with skin) in the sprayed roasting pan, making sure that the pieces are not touching each other (if possible) to ensure they bake crispy; spray chicken pieces with oil spray or sprinkle with 2 tablespoons oil and place the chicken in the oven to bake.
  • While the chicken is baking, in a saucepan over medium low heat combine the butter, honey, pinches of cinnamon, and lemon juice.
  • After the chicken has baked for 25 minutes, pour the butter and honey mixture generously over the pieces.
  • Bake for an additional 15 minutes or until the juices run clear and the chicken is crisp and brown.
  • Note: if you'd like to add a bit of kick to the recipe, you can try a pinch or two of cayenne (to taste) in the honey sauce, or perhaps some red pepper flakes!
