CINNAMON CRUMBLE BANANA BREAD
Steps:
- Whisk eggs, buttermilk, and oil together. Mix well and set aside.
- Add flour, salt and baking soda and cinnamon to a separate bowl.
- Stir to mix the ingredients well and set aside.
- Peel and mash bananas with a fork. (It will look like lumpy baby food)
- Add white sugar, brown sugar, mashed bananas and vanilla to the egg mix. Stir until it's mixed well.
- Add flour and stir well until ingredients are mixed. Pour bread mixture into a greased 9×5 pan.
- For the crumble topping; add brown sugar, flour, and cinnamon to the softened butter.
- Mix until the mixture begins to look lumpy. Break up larger pieces with fingers if needed.
- Sprinkle the topping evenly all over the banana bread mix.
- Bake at 325 degrees for 75-85 minutes, check with a toothpick to ensure the inside is done.

- Preheat oven to 350F and spray a regular size 9x5 loaf pan with some non stick spray.
- In a bowl whisk eggs and add in the 2 Tbsp of brown sugar, mix in the mashed bananas, apple sauce, milk and vanilla.
- Stir in the flour, baking powder and cinnamon, mix well and then pour batter into the loaf pan.
- In a small bowl mix the 1/4 cup flour, 1/4 cup brown sugar and 1 tsp of cinnamon together, add to the softened butter and mix till a crumb forms, if it is still too sticky try adding a bit more flour.
- Sprinkle the crumble over top of the batter and then bake in the oven for 50 minutes, check that the loaf under all the crumble is baked through.
- Let cool then carefully cut into 10 slices, yes the crumble can be tricky and you will likely lose some while cutting into pieces but I just added my fallen pieces to my serving.

- In a large bowl of a mixer, fitted with a paddle attachment, beat together the sugar, egg and vanilla until combined. Add the butter and beat until smooth and the butter is fully incorporated. Beat in the buttermilk and bananas.
- In a separate bowl, mix together the flour, salt, baking soda, baking powder and cinnamon. Slowly stir the dry ingredients into the wet until all the flour is incorporated. Spray a loaf pan with non-stick spray and pour in the batter. * Note that not all loaf pans are the same size. You may have extra batter, so just pour in enough so there is still about an inch or 2 of space before the top of the pan.
- Make the crumb topping by combining the powdered sugar, flour, cinnamon salt and melted butter. Using your hands, crumble the mixture over the batter in the pan. Bake in a pre-heated 350 degree oven for 45 - 50 minutes or until a toothpick comes out clean.

I stumbled upon this delicious banana bread when I was trying to make something else, but I ended up with something even better! Everyone in the family just loves this recipe. It tastes even better hot and fresh out of the oven!! Enjoy, and feel free to increase or decrease the amount of oats.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour 8x4 inch loaf pan.
- Whisk together flour, sugar, and baking powder in a mixing bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. Whisk together the eggs, milk, vanilla extract, and cinnamon in a large bowl. Add the banana, and mix well. Fold the flour mixture into the banana mixture until combined. Pour batter into prepared pan.
- Prepare the crumb topping by combining the flour, brown sugar, oats, and cinnamon in a mixing bowl. Cut in the butter until the mixture resembles coarse crumbs. Spoon the crumb mixture over the batter.
- Bake in preheated oven for 20 minutes. Reduce heat to 325 degrees F (165 degrees C), and bake until a toothpick inserted in center of the loaf comes out clean, 10 to 15 minutes longer. Cool in pan 10 minutes before turning out onto a wire rack.

- Preheat oven 350 degrees. Butter and flour a 9x5x3 inch metal baking pan. Whisk 1 1/2 cups flour, 1 cup sugar, 1 teaspoon cinnamon, baking soda and salt in medium bowl. Whisk next 5 ingredients in large bowl until smooth. Add dry ingredients; stir to blend. Transfer batter to the pan. Mix 2 tablespoons sugar, 1 teaspoon cinnamon, and brown sugar.
