RED LENTIL SOUP WITH LIME AND CILANTRO
Yummy soup yet so easy to throw together! Cook time is a guess since I live at high altitude and it takes forever for the lentils to break down. We really enjoyed this, even my 2 yr. old DD loved it! Enjoy!

Steps:
- Melt butter in soup pot over medium heat. Add onions and celery; cook until onions are translucent, about 4-6 minutes.
- Add bay leaf, cumin and garlic, cook 1-2 minutes until fragrant. Add lentils and coat evenly with butter, cook 4-5 minutes, stirring frequently.
- Add 6 cups broth. Bring to simmer and stir often so lentils don't scorch. Cook soup until lentils begin to dissolve and begin to look like a pureed soup. Add additional broth as needed to adjust consistency.
- Season to taste with fresh squeezed lime juice, salt and pepper. Stir in cilantro or parsley. Serve!

Steps:
- Heat broth in medium pot. Add onion, garlic, chili powder, tomatoes, bunch cilantro and chile. Simmer for 15 minutes.
- Add chicken and simmer until cooked (about 10 minutes). Discard bunch cilantro.
- Add corn and cook 2-3 minutes.
- Add chopped cilantro and lime juice. Garnish with sour cream and baked tortilla strips (cut corn tortillas in strips, spray with cooking spray, bake in 350 degree oven until crisp).

- In a stock pot, combine the oil, onion, and garlic. When onions and garlic cook down a bit, add the beans and lime zest. Cook for another minute or two.
- Add in the stock. Then add the cilantro and lime juice.
- Cover with a lid and bring to a slight boil. Reduce heat to low and simmer for another 5 minutes.
- Use an immersion blender (or cool slightly and use your regular blender) to make the soup creamy and smooth.
- Add a bit of salt and pepper to taste, if needed. Set aside with the lid on tight to keep the soup hot while you finish making any other sides.

- For Chicken :.
- Remove skin and wings from chicken; cover with water and add chicken base.
- Cook chicken over medium heat for approximately 1-1/2 hours.
- Remove chicken and let cool; bone chicken and chop meat into small pieces.
- Reserve broth.
- While the chicken is cooling, start the soup:.
- Place canola oil in pan and heat.
- Add onion, tomato, garlic, oregano, chili powder, salt and chilies and sauté until onions are translucent.
- Add corn, chicken, reserved broth, additional chicken base and hominy.
- Bring to a boil and cook for 15 minutes.
- Add lime juice and remove from heat.
- Add chopped cilantro.
- Serve hot.

SPICY LIME & CILANTRO SOUP
This is a very spicy, lime & cilantro flavored soup that I came up with because I like Lime & chili flavored Ramen soup. I can't believe I admitted this on a cooking site :) This is not a thick soup, it's very thin and very flavorful and is low in fat, it's a combination of several recipes I have seen. This will clear up your sinuses! Great for a fast lunch.

CILANTRO POTATO SOUP
Something I had a few times while growing up --at a neighbor's and at Avo's house. Where I grew up, half the neighbors were from the Azores, so it was good, good eating. It's not a recipe that needs exact measurements, but this is about how I do it :) Obviously don't make it if you don't like cilantro, but if you do...mmmmmmmmm :) For a vegetarian version, just use veggie broth. Whichever you use, make sure it's a good quality. The ingredients are so simple it needs to be a good quality broth.

- Saute onion and garlic slowly until tender.
- Add the broth, potatoes.
- Cook til the potatoes are tender about half an hour.

Hot or cold outside, this soup is light and refreshing. I first enjoyed this dish while sitting ocean-side in Mexico. Goes great with a margarita or beer and a side of chips and salsa. - Bring the chicken broth, chicken breasts, red onion, garlic, oregano, salt, pepper, and thyme to a boil in a large pot; reduce heat to medium-low and simmer until the chicken breasts are no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove the cooked chicken to a cutting board and shred into bite-sized strips; return to the simmering pot.
- Heat the oil in a skillet over medium heat; cook the green onions and green chile pepper in the hot oil until tender, about 5 minutes. Stir the tomatoes into the mixture and continue cooking until soft, about 5 minute more; pour the mixture into the pot with the chicken soup. Season with the salt; return the soup to a simmer. Add the lime juice and 1/2 a lime; cook another 10 minutes. Remove the pot from the heat and remove the lime half; stir in the cilantro to serve.

CILANTRO-LIME SOUP
Steps:
- Heat oil in heavy large saucepan over medium-high heat. Add onion and garlic; sauté until slightly softened, about 3 minutes. Add chili powder; stir 1 minute. Add chicken; stir 2 minutes. Add broth, corn, tomatoes and 1/2 bunch cilantro sprigs to saucepan; bring to boil. Reduce heat and simmer until chicken is cooked through, about 10 minutes. Discard cilantro sprigs. (Can be made 1 day ahead. Chill. Bring to simmer before continuing.)
- Add chopped cilantro and lime juice to soup. Season with salt and pepper. Garnish with sour cream.
