4 boneless chicken breasts
3 ounces cream cheese
3/4 cup heavy whipping cream
1 limes, juice of or 1 tablespoon lime juice
mccormick's rotisserie poultry seasoning
salt & pepper
3 tablespoons butter
1/2 cup chopped fresh cilantro

Steps:

  • Brown chicken in butter, seasoning chicken while browning. Remove chicken from skillet when browned.
  • Add cream cheese cubes and heavy cream. Add lime juice and chopped cilantro. Return chicken to skillet.
  • Cover and cook on low for 15 minutes.

This simple marinated chicken recipe is filled with zesty flavor and a bit of a kick from the chile. Everyone will love it!

2 cloves garlic, minced
2 serrano peppers, finely chopped
2 tablespoons minced fresh ginger root
½ cup chopped fresh cilantro
2 teaspoons grated lime zest
2 tablespoons soy sauce
1 tablespoon white sugar
¾ cup unsweetened coconut milk
4 boneless, skinless chicken thighs

Steps:

  • In a blender or large food processor, combine the garlic, serrano peppers, ginger, cilantro, lime zest, soy sauce, sugar and coconut milk. Process until smooth.
  • Place the chicken into a large resealable bag, and pour the liquid from the blender in with it. Seal, and refrigerate for about 1 hour, turning once after 30 minutes.
  • Preheat the oven's broiler. Place the chicken onto a broiling pan, and pour the marinade into a saucepan.
  • Broil the chicken for about 10 minutes on each side, until browned and the juices run clear. While the chicken is cooking, bring the marinade to a boil. Simmer over medium heat for about 5 minutes, then remove from the heat.
  • Place chicken onto a serving plate, and pour the sauce over it to serve.

16 ounces chicken breasts, boned and pounded to 1/4 inch thickness
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon vegetable oil
3 tablespoons fresh lime juice
1/2 cup sour cream
3 tablespoons fresh cilantro, chopped
1/8 teaspoon ground cayenne pepper
1 teaspoon lime zest

Steps:

  • Season chicken on both sides with salt, pepper, and cumin. Heat oil in a large skillet over medium high heat. Cook chicken until browned on one side, about 3 to 4 minutes. Turn chicken and cook an additional 3 to 4 minutes until done. Transfer to a plate and set aside.
  • Add lime juice to pan and continue to cook, while stirring, another 2 to 3 minutes until slightly reduced. Remove from heat and add sour cream, cilantro, cayenne, and lime zest. Serve chicken with a dollop of the sauce over top.

4 (3 ounce) boneless chicken breasts
1 teaspoon olive oil
3 ounces light cream cheese
3/4 cup milk
2 tablespoons fresh lime juice
1/2 cup fresh cilantro
1 jalapeno pepper, chopped

Steps:

  • Rinse chicken and pat dry. Season both sides with salt and pepper.
  • Heat a large skillet, spray with cooking spray. Add the oil: brown chicken on both sides.
  • Remove chicken from skillet; keep warm.
  • To the skillet, add cream cheese, stirring until cheese melts. Whisk in the milk; stir until well blended.
  • Add lime juice and cilantro.
  • Return chicken to skillet; cover and simmer for 15-20 minutes or until chicken is cooked through. Garnish with chopped cilantro before serving.

½ cup sour cream
½ lime, juiced
¼ cup fresh cilantro, chopped
3 cloves garlic, minced
1 tablespoon olive oil
¾ teaspoon salt
pico de gallo, or salsa, for topping
4 corn tortillas

Steps:

  • In a large, nonstick skillet, heat the olive oil over medium heat.
  • Toss in the garlic and sauté until fragrant, about 30 seconds.
  • Add the shredded chicken, salt, sour cream, and lime juice. Mix until the chicken is evenly coated and the mixture has heated through.
  • Stir in the cilantro and immediately remove from heat.
  • Pour the chicken mixture into a large serving bowl and toast the tortillas in the seasoned pan, about 3 minutes per side.
  • Divide the mixture evenly between tortillas, top with pico de gallo, and serve.
