Steps:
- Cook spinach according to instructions, drain in a sieve, use back of a wooden spoon to press the spinach against the sieve to get as much moisture as possible out In a bowl combine the spinach, stuffing mix,cheese, eggs, butter, salt& pepper Mix thoroughly& roll into small balls 3/4 to 1" size.
- Place on a cookie sheet& freeze.
- When frozen place in a plastic zip lock bag.
- To serve place frozen balls on a cookie sheet and bake at 350F 10-15 minutes or until lightly browned If you are doing them fresh or thawed only bake for 7-10 minutes.
- Serve hot.

- In a large bowl mix together spinach, breadcrumbs, Parmesan, butter, green onions, eggs, cheddar, salt, pepper, and garlic.
- Form into balls and place on a large greased baking sheet.
- Bake for 20-25 minutes, or until spinach balls are golden brown and cooked through.

- 1. Combine all ingredients in a large bowl and mix well.
- 2. Shape balls using a medium ice cream scoop (about 2 tablespoons). Bake at 350 degrees on a greased cookie sheet for 20 minutes.
- 3. If you plan on freezing place on cookie sheet lined with wax paper. Freeze for several hours, remove from pan and place in a resealable bag. Store in freezer until ready to use. Bake as directed.

Steps:
- Preheat oven to 375 degrees. In a medium skillet saute scallions with 1/4 cup butter until tender.
- Add spinach and cream cheese and cook over medium heat until cream cheese is melted, stirring constantly.
- Stir in parmesan cheese and salt and pepper to taste. Set aside and allow to cool.
- Press or roll each biscuit into a 5" circle. Divide spinach mixture evenly among all 10 biscuits.
- Fold biscuit over into a half moon shape and press edges down with a fork to seal.
- Brush with melted butter and bake for about 15 minutes or until golden brown.
