MACADAMIA FUDGE
There are few recipes I just have to pull out every holiday season, but this fudge is one. It couldn't be easier ... or better!

Steps:
- Line an 8-in. square pan with foil and grease the foil with butter; set aside. , In a heavy saucepan, combine the chocolate chips, milk and salt. Cook and stir over low heat until chips are melted. Remove from the heat; stir in nuts and vanilla. Pour into prepared pan. Chill for 2 hours or until firm. , Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares.

Steps:
- In heavy saucepan, combine sugar, butter and milk.
- Bring to full rolling boil over medium heat, stirring constantly.
- Boil 5 minutes, stirring constantly.
- Remove from heat.
- Add chips, stir til melted and mixture is smooth.
- Add marshmallow cream, nuts and liquer.
- Beat til well blended.
- Pour into foil-lined 13x9 pan.
- Chill til firm.
- **Can add orange food coloring if desired, great for Halloween!

- Line two 9inch square baking pans with foil and butter the foil; set aside.
- Combine sugar,butter and milk in a heavy saucepan;bring to a gentle boil.
- Cook for five minutes, stirring constantly.
- Remove from heat; add chocolate,chocolate chips, marshmallow cream, vanilla, salt and 2 cups nuts.
- Pour into prepared pans;sprinkle with remaining nuts and press in lightly.
- Chill until firm.
- Remove from pans and cut into squares.
- ****This yields about 5 pounds****.

- combine butter, sugar, milk in large pan. Stir until dissolved. Stir a few times until boils. Cover and let boil 5 minutes with 3 stirrings.
- Remove from heat, add marshmellows, stir until dissolved, add vanilla and nuts. Add chocolate 1 at a time. Stir until dissolved. Pour in greased pan- (1) 10 x 15 pan or (2) 13 x 9 pans.
- May or may not leave refrigerated.

CHUNKY ORANGE CRANBERRY SAUCE
I have never liked cranberry sauce before. This year though, I have discovered that I like dried cranberries. So I decided to come up with a cranberry sauce that I can like. You can put in the raisins and the cranberries or one or none. It is up to your taste buds! For my tastes, I put in both. :) **Update Mar 30/08 - After the last time I made this, I threw the leftovers into a jar and popped it into the freezer. Then the next holiday, I just set it on the counter for the afternoon. Dumped some out for dinner and threw it back into the freezer. It was just as good the second time around as it was when it was made fresh.

Steps:
- Mix marmalade, juice concentrate, raisins (and dried cranberries if using) and cinnamon stick in a saucepan, bring to boil.
- Add cranberries, return to boil.
- Lower to simmer and cook until cranberries pop and thicken, about 8-10 minutes. Stirring occasionally.
LIME AND MACADAMIA FUDGE
This is from the first edition of 4 Ingredients and comes highly recommended by the co-ordinator of my DS's recreation group for intellectualy and/or physically challenged adults. She has also made it using lemon in place of the lime and says both versions are equally delicious. I have not made this myself so I am estimating times and yield (do not include refrigeration time to set).

- Place condensed milk and melts in a saucepan and stir over a low heat until smooth, remove from heat.
- Add nuts and zest and mix well.
- Pour into tin and refrigerate overnight prior to cutting.
