8 cups chopped peeled tart apples (about 3-1/2 pounds)
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons vanilla extract

Steps:

  • In a Dutch oven, combine apples, brown sugar and cinnamon. Cover and cook over medium-low heat 30-40 minutes or until apples are tender, stirring occasionally. Remove from heat; stir in vanilla. Mash apples slightly if desired. Serve warm or cold.

  • Peel, core, and cut apples into 3/4-inch chunks. Melt margarine in a medium saucepan over medium-low heat. Add apples, cinnamon, sugar, and two tablespoons water. Cook, stirring occasionally, until the apples are tender, about 10 minutes. Serve warm or chilled.

1/2 cup sugar
1/2 cup water
1 tablespoon lemon juice

Steps:

  • Peel, core and cut each apple into 8 wedges. Cut each wedge crosswise in half; place in a 6-qt. electric pressure cooker. Add remaining ingredients., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Let pressure release naturally. Mash apples with a potato masher or use an immersion blender until sauce is desired consistency.
