Tossed in a classic Buffalo sauce and served with a side of blue cheese dip and celery sticks and you have one of the most genius food combinations this world has ever seen! 4 lb / 2kg chicken wings, wingettes & drumettes ((Note 1))
5 teaspoons baking powder ((NOT baking soda / bi-carb soda) (Note 2))
3/4 teaspoons salt
4 tbsp (60g) unsalted butter, melted
1/2 cup Frank's Original Red Hot Sauce ((Note 3))
1 tbsp brown sugar
1/4 tsp salt
1/2 cup crumbled blue cheese, softened ((I use gorgonzola))
1/2 cup sour cream
1/4 cup mayonnaise
1 clove small garlic, minced
1 - 3 tbsp milk
2 tbsp lemon juice
1/2 tsp salt
Black pepper
Celery sticks
Lots of beer!

Steps:

  • If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight. Alternatively, pat them dry with paper towels.
  • Preheat the oven to 250°F/120°C (all oven types). Put one oven shelf in the lower quarter of the oven and one in the top quarter.
  • Line the tray with foil. Spray the rack on the baking tray with oil.
  • Place the wings in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well (or shake in ziplock bag) to coat wings evenly.
  • Place the wings skin side up on the rack (ok if snug, they shrink). Bake on the lower shelf in the oven for 30 minutes.
  • Then move the tray up to the higher shelf and turn the oven up to 425°F / 220°C. Bake for a further 40 to 50 minutes, rotating the tray halfway through. The wings do not need to be turned over.
  • The wings are ready when they are dark golden brown and the skin is very crispy.
  • Toss with Hot Sauce and serve immediately with Blue Cheese Dip and celery sticks. They can be served plain, with a dipping sauce or tossed in sauce. Wings also reheat crispy!
  • Whisk together the Sauce ingredients. Keep warm or reheat just prior to using.
  • Mash the blue cheese with sour cream until smooth (or to your taste).
  • Add remaining ingredients and mix well until combined, using milk to get it to the consistency you want.
  • Store in the fridge until required. Remove from the fridge 15 minutes before serving.

¾ cup cornstarch, divided
2 lb chicken wings, rinsed and patted dry
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper
2 teaspoons baking powder
2 teaspoons salt
1 teaspoon black pepper
⅔ cup water
peanut or vegetable oil, for frying
½ cup buffalo sauce
ranch or blue cheese dip, for serving
1 stalk celery sticks, for serving, cut into sticks

Steps:

  • In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
  • In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
  • Heat the oil in a large pot until it reaches 350°F (180°C).
  • Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.
  • Transfer the chicken to a clean bowl and drizzle with with the buffalo sauce, tossing to coat. Transfer to a serving plate. Serve with either ranch or blue cheese dressing and celery sticks.

1 tablespoon ground black pepper
1 tablespoon chili powder
1 tablespoon seasoned salt

Steps:

  • Mix paprika, black pepper, chili powder, seasoned salt, cayenne pepper, onion powder, garlic powder, white pepper, and mustard powder together in a bowl until seasoning mix is evenly combined. Dry chicken wings thoroughly with a paper towel.
  • Heat enough vegetable oil and peanut oil in a deep cast iron pot or heavy pot to reach a depth of about 2 inches; bring to 300 degrees F (150 degrees C).

There's nothing worse than a soggy hot wing. These wings are cripsy and stay that way. Hope you like them!

1 stick real butter
1 pkg large whole chicken wings (family size)
1 tsp minced garlic
1 c frank's hot sauce
1 1/2 c all purpose flour
2 Tbsp corn starch
2 Tbsp cayenne pepper
1 Tbsp ground black pepper
1 Tbsp kosher salt
vegetable oil to fill large sauce pan half full.

Steps:

  • 1. With kitchen scissors, cut wing tips off and discard. Then cut drummie from wing. Rinse and pat dry. Sprinkle with kosher salt, making sure to cover entire wing pieces. Set aside.
  • 2. Mix together, salt, pepper, cayenne pepper, flour and cornstarch in a large ziploc baggie. Place wings in baggie and shake until thoroughly coated. Place in refrigerator for 3 hours (this is an important step).
  • 3. Heat oil on medium high heat and fry wings @15 minutes -- they will float on top and will brown. Remove wings and place on paper towels and continue cooking until all wings are done.
  • 4. In a small saucepan, heat hot sauce, butter and garlic. Once all wings are done, dip each wing into the sauce and serve!

Steps:

  • Thoroughly pat dry the chicken with a paper towel. Preheat the oven to 450˚F. Line a rimmed baking sheet with foil and place a wire rack over the pan.
  • Combine the baking powder, salt and garlic powder in a bowl, sprinkle over the chicken and toss to combine. Arrange chicken on the prepared wire rack.
  • Bake the chicken for 25 minutes, flip it over and bake for another 25 minutes or until crisp and cooked through.
  • In a medium-size bowl combine sauce ingredients. Remove chicken from the baking sheet to a bowl. Drizzle the sauce over the chicken. Toss to coat the chicken in the sauce. Serve with your favorite dipping sauce.
