My grandma used to make these for us every Christmas. Now I bring them to Christmas on all the other sides of the family. It always ends up with people fighting over the last handful. And it doesn't take very long either. These little suckers are addicting!

1 lb pecan halves (you could use almond halves instead but I like the pecans)
1 tablespoon cold water
1 egg white
1 cup sugar
1 tablespoon cinnamon
1 teaspoon salt

Steps:

  • Mix sugar, cinnamon and salt together.
  • Set aside.
  • Beat water and egg white together until frothy.
  • Coat nuts in egg mixture.
  • Add sugar mixture to nuts.
  • Mix well.
  • Spread on large greased cookie sheet.
  • Bake at 225 degrees F for 1 hour stirring every 15 minutes.

I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

Cooking spray
1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

This is a double batch, 3 cups to serve, 3 cups to gift-away. Buy nuts from bulk bins in market ? they are better priced than nuts on baking aisle.

2 cups walnut halves
1 cup peeled hazelnuts
1 cup whole unsalted cashews
1 cup whole pecan halves
3 tablespoons butter
1 teaspoon ground anise
1 teaspoon ground cinnamon
1 teaspoon coarse black pepper
1/2 teaspoon freshly grated nutmeg, eyeball it
1 cup smoked almonds (recommended: Diamond Smokehouse almonds)

Steps:

  • Heat a large skillet and cook nuts over moderate heat 7 to 8 minutes until golden and well toasted ¿ your nose will know when they are done. Transfer nuts to a plate and return pan to stove top. Add butter to the pan in small pieces. Melt butter and spice it with anise, cinnamon, pepper and nutmeg. Let butter infuse a minute then pour over nuts. Turn off heat. Add smoked nuts to the skillet and turn to combine evenly with butter.

This snack is standard issue at our house during the holidays. As a matter of fact, I make 2 turkey roasters of this, it's great for taking along to all the holiday parties. Go ahead and make it now. Store in a covered tin in a cool place, and yes, you can freeze it. Just reheat in a warm oven.

3 tablespoons Worcestershire sauce
1 teaspoon celery salt
1 teaspoon garlic powder
2 teaspoons garlic salt
2 teaspoons seasoning salt
1 teaspoon onion powder
1 (10 ounce) box Cheerios toasted oat cereal
10 ounces shreddies cereal
1 large pretzel stick
8 ounces Bugles original flavor snacks
5 cups original Ritz Bits miniature crackers
4 cups salted nuts or 4 cups peanuts

Steps:

  • In a large glass bowl, melt the butter in the microwave.
  • Stir in the worcestershire and all the spices, whisk until well blended.
  • Pour the snack ingredients into a large turkey roaster, pour the sauce over top.
  • Mix well, bake uncovered at 225 degrees for one hour, stirring every 10 minutes.
  • Store in tins, makes a great hostess gift.

2 cups bite-sized Shredded Wheat
2 cups pretzel sticks
1-1/2 cups salted peanuts
1/4 cup butter, cubed
3 teaspoons Worcestershire sauce
1/2 teaspoon celery salt
1/2 teaspoon onion salt
1/2 teaspoon garlic salt
1/2 teaspoon paprika

Steps:

  • Combine cereals, pretzels and nuts. In a small saucepan, melt butter; stir in seasonings. Pour over cereal mixture; toss to coat. Spread in an ungreased 15x10-in. rimmed pan. Bake at 250° 1 hour, stirring every 15 minutes. Store in an airtight container.

I made these during the holiday season last year but used pecans instead of walnuts. They were excellent. I believe you could play around with what ever type of nuts easily available to you.

1 teaspoon vanilla flavoring
1 cup milk
1 pinch salt
1 tablespoon margarine
2 quarts walnuts

Steps:

  • Combine the sugar, milk, and margarine in a heavy saucepan, bring to a soft-ball stage on medium heat.
  • Add vanilla flavoring and salt, removed from heat, mix until creamy.
  • Add walnuts to mixture and stir until walnuts are well coated.
  • Spread on foil and seperate.
  • Cool before serving.

½ tsp mixed spice
400g mixed nut , try almonds, Brazil nuts and cashews
2 tbsp honey

Steps:

  • Heat oven to 140C/120C fan/gas 1. Mix the oil with the spices, then stir in the nuts and drizzle over half the honey. Spread over a baking sheet and cook for 10 mins.
  • Remove from the oven and drizzle over the remaining honey, then return to the oven and cook for a further 10 mins. Allow to cool completely.

2 cups bite-size wheat square cereal (such as Wheat Chex®)
2 cups bite-size corn square cereal (such as Corn Chex®)
2 cups bite-size rice square cereal (such as Rice Chex®)

2 cups cheese-flavored crackers (such as Cheez-It®)
2 cups pretzels
2 cups mixed nuts
1 cup butter
2 ½ teaspoons garlic powder
3 tablespoons Worcestershire sauce

The name "Pfeffernüsse" translates to pepper-nut, even though these cookies don't contain either. Back in the day, "pepper" was a generic name for any type of spice, and these were were called "nuts" because they looked like nuts! Misleading names aside, I think this is the best Christmas cookie of all time. They're soft and chewy with a thin, crisp icing and the perfect combination of warming winter spices. Pack up a tin and share these delicious cookies with family and friends!

⅓ cup white sugar
¼ cup packed brown sugar
¼ cup honey
1 tablespoon water
1 teaspoon ground cinnamon
¾ teaspoon ground ginger
½ teaspoon ground cardamom
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground cloves
⅛ teaspoon ground cayenne pepper
½ tablespoon kosher salt
1 teaspoon baking soda
2 tablespoons heavy cream
1 large egg, beaten
2 ½ cups all-purpose flour
3 cups powdered sugar
3 tablespoons lemon juice

Steps:

  • Combine white and brown sugars in a saucepan with honey, water, cinnamon, ginger, cardamom, nutmeg, allspice, cloves, and cayenne pepper. Place over medium heat and whisk until the sugars dissolve and it just starts to simmer, 1 to 2 minutes. Immediately remove from the heat and let cool for 4 to 5 minutes.
  • Add salt, baking soda, heavy cream, and egg and whisk until thoroughly combined. Add flour and stir together with a wooden spoon until everything comes together as a dough.
  • Transfer dough to a piece of plastic wrap. Press into a ball and wrap tightly. Place in the refrigerator and let rest for 1 to 2 days.
  • When ready to bake, preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Remove dough from the refrigerator and scoop into rounded teaspoons. Roll each one into a smooth ball if desired, and place on a prepared baking sheet.
  • Bake in the center of the preheated oven until cookies are perfectly dome-shaped with light golden brown bottoms, 9 to 10 minutes; don't overbake. Let cool on the pan all the way down to room temperature, 20 to 30 minutes.
  • While the cookies are cooling, repeat Steps 5 and 6 to shape and bake the remaining cookies.
  • Make icing by placing powdered sugar in a bowl. Stir in lemon juice, a few teaspoons at a time, until icing is very thick, but still slightly runny.
  • Dip the top of each cooled cookie into the icing. Let it drip, then flip it over and place on a wire rack set over a piece of parchment paper and let harden.
