CHRISTMAS EGGNOG BREAD
This came from a friend. I made this as written and it turns out beautifully every time. I always include a loaf of this bread in my Christmas crates that we make up for my family. I have included 3 variations I came up with. We love this bread toasted. Yes...toasted. What can possibly be wrong about toasted cake? Try it...you just might like it. Try it for breakfast instead of regular toast. This makes a large loaf and freezes beautifully.

Steps:
- Beat sugar and egg in mixing bowl.
- Beat in melted butter.
- Add eggnog and extract. Mix.
- Sift flour, baking powder, salt, cinnamon and nutmeg over the eggnog mixture.
- Stir until moistened.
- Mix in nuts and fruit.
- Turn into greased 9x9x3 loaf pan.
- Bake at 350 degrees for about 1 hour until an inserted wooden pick comes out clean.
- Let stand for 20 minutes.
- Turn out onto rack to cool.
- Variations: Use measurements above.
- Pecan and Dried Cranberries.
- Pineapple and Coconut (drain pineapple).
- Walnut and Raisin (raisins soaked in Apricot brandy or any other fruity juice and then drained).

COOKED CUSTARD EGGNOG

Steps:
- Heat milk in a large saucepan, don't boil.
- Beat eggs and salt in a large bowl; gradually add sugar, mixing well.
- Gradually stir about 1/4 of hot milk into egg mixture; add to remaining hot milk, stirring constantly.
- Cook over medium-low heat, stirring constantly, until misture thickens and reaches 160 degrees.
- Stir in 1/4 tsp nutmeg and vanilla.
- Set saucepan in larger pan of ice for 10 minutes to rapidly cool mixture.
- Cover and refrigerate up to 48 hours.
- When ready to serve, fold in whipping cream and sprinkle with nutmeg.

- MIX LIQUOR FIRST.
- Separate yolks and whites of the eggs*.
- Add sugar to beaten yolks and mix well.
- Add combined liquors to the yolk and sugar mixture, drop by drop at first, slowly beating it all the while.
- Add cream and milk and mix thoroughly.
- Beat the egg whites* until stiff and gently fold these into cream liquor and yolk mixture.
- Let this sit in the refrigerator for several days.
- Taste frequently.
- *I always remove the white thingum from eggs.

CHOCOLATE BUTTER
A delicious butter to serve with warm scones! It is nice on pancakes too, served with a bit of whipped cream. Rich and yummy! If refrigerated, please remove and let stand at room temperature for about 15 minutes to soften before serving. You can use margarine to replace the butter, but butter is best!! Steps:
- In a medium bowl, using a hand-held mixer, beat the butter until creamy.
- Sift cocoa and icing sugar together, add to butter and mix well.
- Add vanilla and continue beating for 1 - 2 minutes until mixture is smooth.
- Put blended mixture into small dish and serve. If not using butter immediately, cover and refrigerate.
- Enjoy!
CHRISTMAS EGGNOG CHIFFON PIE CARRIE SHERIDAN
this makes 2 pies... it's a LOT of work to separate 8 eggs... and must be made ahead BUT this makes 2 pies at once and it is TOTALLY worth it for its chiffony texture... Very Special -- even people who don't like eggnog LOVE this very special pie!

- Separate 8 large or extra large eggs into yolks and whites [i prefer to scrupulously detach/remove the white thingum in each egg, which is tedious].
- The best way to do this is to hold one yolk in your hand, letting its white drip into a bowl; as you put the yolk into a yolks bowl, pull off any white stuff; rinse your hands and towel dry; remove any white stuff from the egg white in a bowl with a spoon or by hand; put the white into the whites bowl -- this way, if some yolk gets into its white, you can set that egg aside without getting some yolk into all of the other whites and having to start over!
- Refrigerate whites [making SURE there is no white embryonic material in this].
- Beat egg yolks with a fork or whisk and add them to the milk and sugar and salt in a 2-3 quart saucepan.
- Continue on a low boil until the mixture thickens some, stirring constantly.
- Take the egg-milk mixture off the stove.
- Add 2 packages of gelatin dissolved into 1/4 cup water.
- Add 2-3 jiggers of rum and rum flavoring, to taste [you can omit the rum for children].
- Cover and chill in the refrigerator overnight.
- The next day, remove the egg whites from the refrigerate and let warm to room temperature.
- Prick pie shells with a fork and prebake.
- Set the shells aside to cool.
- Whip the 8 egg whites with 1/2 cup sugar until very stiff.
- Set aside.
- Whip the egg-milk custard mixture until very fluffy.
- Whip the 1/2 cup heavy cream.
- Fold the whipped cream into the whipped egg-milk custard mixture.
- Fold the stiff egg whites into the custard mixture.
- Turn out into cooled pie shells.
- Grate the Hershey's chocolate bar over both pies.
- Refrigerate until ready to serve.
- [you CAN use red food coloring to turn the filling pink and you can also top with a layer of additional whipped cream].
- Also you can substitute 2-3 ounces of bourbon for the rum.
- For children, you can just use rum flavoring - but often the kids like the hint of liquor.

COTTAGE CHEESE PIE
I prefer this Amish pie with a graham cracker crust, but my family always used the pastry crust. Since this recipe makes 2 pies, try one of each. Ricotta cheese may be substituted for the cottage cheese.

- Preheat oven to 425º F.
- Place cottage cheese in strainer and let drain for about 1 hour or until most of liquid has been drained.
- Combine all ingredients except egg whites; mix well.
- Beat egg whites until firm.
- Fold into batter until smooth.
- Pour into pie crusts.
- Bake for 15 minutes then reduce oven to 350º and bake for an additional 25 minutes or until knife inserted in center comes out clean.
- Cool on racks.
- Refrigerate.
- Flavor improves if served a day after baking.

Steps:
- Boil chicken breasts and quartered onions studded with 1 whole clove each in boiling water until cooked. Remove chicken and let cool a little bit.
- Cook egg noodles according to package instructions and drain.
- Shred chicken. Combine noodles, 2 cans of soup, can of mushrooms with liquid. Add chicken and mix well.
- Put in 2 quart glass casserole dish. Cover with crushed corn flakes.
- Bake at 350 for 30 minutes.
- Add chicken or vegetable bouillon, if needed, to moisten.
- Let sit 15 minutes.
- You can boil a whole chicken --.
- You can also substitute with canned tuna and use MORGA or Better Than Bouillon bouillon base.
