- Preheat oven to 350 degrees F. In an extra-large bowl, stir together chicken, celery, carrots, sweet pepper, mushrooms, almonds, and pimiento. Add soup to chicken mixture; mix well.
- Transfer chicken mixture to an ungreased 3-quart rectangular baking dish. Bake, covered, for 45 minutes. Sprinkle with chow mein noodles. Bake, uncovered, for 5 to 10 minutes more or until heated through. Makes 8 servings.

- In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. I got this recipe from a co-worker. It's one of her daughter's favorite meals. We liked the combination of chow mein noodles and cashews. It's a good week night dinner or a way to use up leftover chicken. I have also started adding a can of sliced water chestnuts.

- Saute onion and celery in butter.
- Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.
- Pour into a 1 qt casserole dish and top with chow mein noodles and cashews.

CHICKEN CHOW MEIN CASSEROLE
This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

- In bottom of 9x13 casserole dish, put a layer of chow mein noodles followed by chicken and vegetables. Top with remaining noodles.
- Mix soup with 1 can of water. Spoon soup mixture over vegetables.

- Preheat the oven to 375F. Lightly spray the inside of a 9 by 13-inch casserole dish with cooking spray.
- Add the butter to a large, deep skillet over medium heat. Once melted, add the celery, carrot, red bell pepper, and onion, and turn the heat up to high. Cook, stirring constantly until the vegetables are starting to soften, about 3 to 5 minutes.
- Turn the heat back down to medium. Add the garlic and cook 30 seconds, stirring constantly.
- Add the condensed cream of chicken soup, milk, soy sauce, and black pepper. Stir to combine.
- Stir in the chicken and rice.
- Transfer the mixture to the prepared casserole dish. Spread the chow mein noodles evenly on top. Cover the dish with aluminum foil.
- Bake until the casserole is warm throughout, about 30 minutes.

This is my Mom's recipe. Don't know where she got it, but it is delicious. We always put it over chow mein (toasted) noodles, but it is good over rice, soba and Marco Polo noodles as well. Even my Father liked this and he always swore he hated cooked onions.

- Lightly brown hamburger and drain off excess fat.
- Add pepper, onion and celery plus enough water to cover.
