IMITATION CRAB 3-CHEESE QUESADILLAS



Imitation Crab 3-Cheese Quesadillas image

Incorporate imitation crab into your next recipe. Mix together peppers, cheese, and imitation crab for a hearty lunch recipe.

Number Of Ingredients 15

3/4 cup plain greek yogurt, for serving
3/4 cup salsa, for serving dip
1 cup cherry tomatoes, halved
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
8 ounce canned green chilies
sea salt, to taste
fresh ground pepper, to taste
1 pound imitation crab meat, chopped
juice of one lime
1/2 cup pepper jack cheese, shredded
1/2 cup sharp cheddar cheese, shredded
1/2 cup monterey jack
8 tortillas
1 tablespoon extra-virgin olive oil

Steps:

  • Combine Greek yogurt and salsa, stir until you get a creamy consistency, set aside.
  • Add tomatoes, bell peppers and green chilies into mixing bowl. Season with salt and pepper.
  • Combine crab meat into pepper mixture and squeeze in lime juice, stir thoroughly.
  • Stir in cheese and divide mixture onto tortillas and fold tortillas to close.
  • On medium heat, 1 tablespoon extra-virgin olive oil on a 10-12 inch pan.
  • Add 2 quesadillas at a time, 1-2 minutes on each side.
  • Let cool first then slice into wedges and serve with sauce.

4 medium roasted jalapenos, halved lengthwise, seeded, and thinly sliced crosswise
1 cup shredded jack cheese
1 cup shredded Cheddar
1 cup shredded provolone cheese
2 tablespoons chopped cilantro leaves
6 (6-inch) flour tortillas
Tomatillo Salsa, for serving

Steps:

  • Combine chiles, cheese, and cilantro in a medium bowl and toss to evenly mix.
  • Heat a seasoned cast iron skillet or a large frying pan over medium heat. Add 1 quesadilla and cook until soft, about 15 to 30 seconds.
  • Add 1/2 cup cheese mixture on one half, fold in half, and cook until cheese is melted and tortilla is golden brown, about 1 to 2 minutes. Repeat for remaining quesadillas. Cut each quesadilla into 4 wedges and serve with tomatillo salsa.

1 tablespoon butter
4 flour tortillas (8 inches)
2 ounces cream cheese, softened
1/4 cup shredded sharp cheddar cheese
1/4 cup shredded Monterey Jack cheese
2 tablespoons thinly sliced green onion
1 tablespoon minced fresh cilantro
2 teaspoons chopped ripe olives
1/4 cup salsa
Sour cream, optional

Steps:

  • Spread butter over one side of each tortilla. Spread cream cheese over unbuttered side on half the tortillas. Sprinkle with cheeses, onion, cilantro and olives. Top with remaining tortillas, buttered side up., Cook on a griddle over medium heat for 1-2 minutes on each side or until cheese is melted. Cut into wedges. Serve with salsa and sour cream if desired.

3/4 cup cooked and chopped crabmeat
1/2 cup monterey jack cheese, shredded & divided
1/4 cup mozzarella cheese, shredded
1/4 cup cheddar cheese, shredded
1/2 cup favorite seafood cocktail sauce, divided
1 green onion, thinly sliced
1/2 tablespoon garlic, minced
tortilla
2 tablespoons butter

Steps:

  • Combine crabmeat, Monterey Jack cheese, mozzarella cheese, cheddar cheese, 1/4 cup cocktail sauce, green onions and garlic in medium bowl; mix well.
  • Spread about 1/2 cup mixture onto 2 tortillas; sprinkle evenly with remaining Monterey Jack cheese.
  • Top with remaining tortillas.
  • Melt 1 tablespoons butter on cast iron griddle over medium-high heat.
  • Add one quesadilla; cook for 2 minutes on each side or until golden brown.
  • Repeat.
  • Cut each into eight wedges.
  • Serve with cocktail sauce for dipping.

I was feeling creative one day and came up with this. I admit I didn't really measure my ingredients, but this is the best estimate I came up with. :) Also, I used the garden vegetable low-fat cream cheese, but I'm sure some of the other flavored ones could be good too... [chive and onion, garlic and herb, etc.] Enjoy!

2 small flour tortillas
1 teaspoon butter
4 tablespoons light cream cheese, flavored, I use garden vegetable
4 tablespoons low-fat cheddar cheese, shredded
4 tablespoons low-fat Mexican cheese blend, shredded

Steps:

  • Melt butter in skillet.
  • On one half of each tortilla, spread 2 tbsp of cream cheese, then sprinkle 2 tbsp of mild cheddar, followed by the mexican blend.
  • Fold tortillas over to make half-moon shapes.
  • Place in skillet and cook until both sides are slightly browned to your liking.
  • Cut in half and enjoy!
