Steps:

  • Soak 1/4 cup sliced red onion in cold water, 10 minutes; drain. Toss with 2 cups sliced hearts of palm, 1 cup sliced celery and some chopped parsley. Add 3 tablespoons each lemon juice and olive oil. Season with salt and pepper. Serve over arugula drizzled with olive oil.

4 cups (packed) mixed baby lettuces
1/2 14- to 15-ounce can hearts of palm, drained, each cut into 1/2-inch-thick rounds
1/2 large red bell pepper, halved lengthwise, thinly sliced crosswise
1 cup cherry tomatoes, halved
8 canned pickled beets, halved
3/4 cup crumbled blue cheese (about 3 ounces)
2 green onions, chopped
1/2 cup (about) bottled balsamic dressing

Steps:

  • Combine all ingredients except dressing in large bowl; toss to blend. Add 1/2 cup dressing (or more); toss again to coat.

1 (14 ounce) can sliced hearts of palm, drained
1/4 cup thin sliced red onion
2 tablespoons extra virgin olive oil
2 tablespoons lime juice
1 tablespoon chopped fresh parsley
1/4 cup sun dried sweetened cranberries (Craisins)
salt & pepper

Steps:

  • Combine all ingredients in a nonreactive large mixing bowl.
  • Cover& chill overnight.

  • Blend 1/3 cup feta, 2 tablespoons olive oil, 1 tablespoon each lemon juice, water and dill, 1 small grated garlic clove, and salt and pepper to taste in a mini food processor. Toss with 1 chopped romaine heart, 1 small chopped cucumber, 5 chopped radishes, 1 drained can chickpeas, 2 chopped celery stalks, and 1/3 cup each thawed frozen peas and toasted sliced almonds. Season with salt and pepper.

1 large artichoke, trimmed and choke removed
Canola oil, for frying
1/4 cup sliced hearts of palm
5 large Bibb lettuce leaves, torn
4 fresh flat-leaf parsley leaves, plus 1 tablespoon, finely chopped
Coarse salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice

Steps:

  • Thinly slice artichoke crosswise on a mandoline. Fill a medium, deep heavy-bottomed saucepan 3 inches high with canola oil. Heat over medium-high heat until it reaches 375 degrees on a deep-fry thermometer. Add half of the artichoke slices and cook until crispy and browned. Transfer to a paper towel-lined plate to drain.
  • In a large bowl, mix together hearts of palm, lettuce, parsley, and remaining sliced artichokes; season with salt and pepper. In a small bowl, whisk together olive oil and lemon juice, drizzle over salad; toss to coat. Divide evenly between 2 plates; garnish with crispy artichokes and serve.

This recipe has been adapted from another cooking site. It was billed as the "South Beach Salad". I don't know if the changes I have made have changed that or not. It is delicious and made a wonderful and different salad to serve for guests.

3 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1/4 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 (14 ounce) can hearts of palm, drained and sliced
1/3 cup red bell pepper, diced
1/2 cup artichoke heart, drained and quartered
1/3 cup kalamata olive, pitted and halved
1 (6 ounce) package mixed salad greens
2 hard-boiled eggs, sliced
8 -10 cherry tomatoes, halved

Steps:

  • Combine the dressing ingredients in a covered jar and shake vigorously to mix.
  • For the salad, combine the hearts of palm, peppers, artichoke hearts, and olives in a bowl.
  • Pour the dressing over and mix well; refrigerate for at least 1 hour.
  • When ready to serve, place the mixed greens on chilled salad plates, divide the heart of palm mixture evenly over the plates and arrange the hard-boiled egg slices and tomatoes over the top.

1 medium head iceberg lettuce, washed and dried
1 medium head romaine lettuce, washed and dried
10 to 12 frozen or canned (in brine) artichoke hearts (not marinated; about 12 ounces drained)
1 cup hearts of palm (about 12 ounces drained)
1 avocado
6 ounces blue cheese, such as Saga, Maytag, or gorgonzola, crumbled (1 cup)
3/4 cup bacon bits, or 12 to 14 crumbled, crisp-cooked bacon strips
3?4 cup chopped hard-cooked eggs (2 large eggs; see Note)
3/4 cup finely minced red onion
3/4 cup seeded, chopped plum tomato
3/4 cup Dijon Vinaigrette (page 227)

Steps:

  • 1. Cut the iceberg and romaine lettuces into 1?2-inch squares. Transfer to a large mixing bowl. Cut the artichoke hearts into eighths and the hearts of palm into 1?4-inch-long pieces and add to the lettuce. 2. Peel the avocado and remove the pit. Cut the avocado into 1?2-inch cubes and add to the lettuce. 3. Crumble the blue cheese over the salad. Sprinkle the bacon bits, chopped egg, onion, and tomato over the salad. Add the vinaigrette, toss well, and serve. Note: To hard-cook eggs, put them in a saucepan with cold water to cover. Bring to a boil over medium-high heat. Cover, remove from the heat, and set aside for 15 minutes, during which time the eggs will harden. This is a better method than cooking the eggs in boiling water. There is less chance of the eggs cracking.
