- In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. Refrigerate, covered, overnight., Preheat oven to 325°. Shape dough into forty-eight 1-in. balls, forty-eight 3/4-in. balls and forty-eight 1/2-in. balls. On ungreased baking sheets, place one ball of each size, side by side, for each snowman., Bake 18-20 minutes or until light brown. Remove from oven; cool on pans 2 minutes. Press on chocolate chips for eyes and M&M's for buttons. Carefully remove from pans to wire racks to cool completely., For frosting, in a small bowl, beat confectioners' sugar, extract and enough milk to reach a piping consistency. If two colors of frosting are desired, transfer half of the frosting to another bowl and tint each with a different food coloring., Cut a small hole in a corner of a food-safe plastic bag; fill with frosting. Pipe scarves on snowmen. Use frosting to attach chocolate kisses for hats.

- Beat egg whites lightly in a large bowl using an electric mixer until frothy. Slowly beat enough confectioners' sugar into egg whites to make icing that will hold shape; blend in lemon juice until desired consistency is reached.
- Arrange cookies about 1-inch apart on a large sheet of waxed paper. Spread icing onto each cookie, allowing icing to drip over edges to look like melting snow.
- Grease a microwave-safe plate. Place 1 marshmallow onto plate.
- Microwave marshmallow until it starts to puff up, 20 to 30 seconds. Immediately place marshmallow on the edge of 1 cookie while the icing is still wet to look like a melted snowman. Repeat with remaining marshmallows and iced cookies.
- Decorate 'melted snowmen' by piping 'twig-like arms' using black decorating gel on the icing. Make 'coal eyes' and a 'mouth' on the marshmallow using black decorating gel. Make a 'carrot nose' under the 'coal eyes' using orange decorating gel. Make 'coat buttons' by arranging silver nonpareils down the middle of the icing. Make 'scarves' or 'bow-ties' using red decorating gel or green decorating gel.
- Allow cookies to fully dry before removing from waxed paper, at least 1 hour.

Steps:
- Put the icing sugar into a bowl and add cold water a teaspoon at a time until the mixture is runny but thick enough to coat a spoon.
- Ask an adult to snip the marshmallows in half using wetted scissors.
- Spoon a little icing onto each cookie and attach half a marshmallow. Using a little icing, stick the other half on top at an angle. Drizzle a little more icing onto the cookie to make melting snow.
- Break the pretzel sticks in half and place on the cookie for arms. Stick orange chocolate beans on for the noses. Stick three chocolate beans on each cookie to represent buttons.
- Using the writing icing, pipe small blobs for the eyes and mouth. Leave to set.

- Mix the flour, cocoa and a pinch of salt in a bowl. Beat the butter with the sugars in another bowl for about 3 mins until pale and creamy. Stir in the egg and vanilla. Gradually mix the dry ingredients into the wet, and bring together with your hands. Wrap the dough and leave to chill in the fridge for 1 hr.
- Heat the oven to 170C/150C fan/ gas 3. Roll out the dough on a lightly floured work surface to a thickness of about 4mm, and press out circles in three sizes. Place them, sorted by size, on baking sheets lined with baking parchment. Bake the smallest cookies for 6-8 mins and the remainder for about 10-12 mins. Remove from the oven and transfer to a wire rack to cool completely.
- Tip the icing sugar into a small bowl and gradually add the milk, stirring until smooth and thick. Coat the tops of the biscuits with it using a small knife, then stack three of each biscuit, starting with the largest. Cut the cranberries into small pieces and stick to the snowmen as eyes, mouths and buttons. Cut the strips of mango into the shape of mini carrots, and place them on the faces as noses. Leave to dry. REINDEER & SNOWMAN CHOCOLATE BARK

- Line a baking tin with baking parchment. Heat both chocolates in separate bowls in the microwave in 30-sec blasts, or over pans of simmering water. Pour the dark chocolate into the baking tin, then pour the milk chocolate on top in a trail. Spread the chocolate out to make a reasonably thick slab.
- Arrange the red smarties over the slab at intervals - these are the reindeer noses. Cut a marshmallow in half and press above the smarties to make eyes. Snap a pretzel in half for each set of antlers, snapping off any excess pretzel, then push into the chocolate near the noses.
- To make the snowmen, arrange the rest of the marshmallows in lines of three. Use pieces of pretzel for the arms and a piece of shoe lace for the scarf. Sprinkle over the stars and sprinkles, then leave the chocolate to set completely.
- Once the chocolate is hard, use an icing pen or small brush dipped in black food colouring to add pupils to the reindeer eyes, and faces and buttons for the snowmen. Use a knife to cut the bark into pieces around the reindeer and snowmen. To give them as gifts, put the chocolate shards in cellophane bags and tie with a pretty ribbon.

- Preheat oven to 350°F. In a large mixing bowl beat shortening and peanut butter with an electric mixer on medium to high speed for 30 seconds. Beat in the granulated sugar, brown sugar, baking powder, salt, and baking soda until combined, scraping sides of bowl occasionally. Beat in egg, milk, and vanilla until combined. Beat in the cocoa powder and as much of the flour as you can with the mixer. Stir in any remaining flour.
- Shape dough into twenty 1 3/4-inch balls. Place balls 2 inches apart on ungreased cookie sheets.
- Bake for 9 to 11 minutes or until edges are just firm. Cool on cookie sheet for 2 minutes. Transfer to a wire rack and let cool.
- Line a baking sheet with waxed paper. Place cooled cookies on prepared baking sheet. If desired, cut marshmallows in half crosswise and place one half on each cookie. In a medium microwave-safe bowl microwave candy coating on 50% power for 2 1/2 to 3 minutes or until melted and smooth, stirring every 30 seconds. Spoon melted coating over each cookie to cover cookie and resemble melted snow. While coating is still tacky, add a peanut butter cup for a top hat and decorate with sprinkles or other candies to resemble snowman faces (If using frosting to make snowman faces, add it when the candy coating is dry.) Let stand until set.
