TACO RING



Taco Ring image

Make this taco crescent ring, a beautiful presentation of a classic tex-mex favorite. Perfect for potlucks, parties, or weeknight dinners, everyone loves it!

Number Of Ingredients 8

1 pound ground beef (lean, Note 3)
½ yellow onion (diced)
2 tablespoons taco seasoning
½ cup water
¼ cup salsa
½ cup refried beans
1 cup shredded Mexican cheese blend (or cheddar cheese)
2 cans total 16-oz refrigerated crescent rolls (separated into 16 triangles, Note 1)

Steps:

  • Heat a skillet on medium high heat, and brown the beef. Drain fat.
  • Add onion, cook until it's translucent (about 3 minutes).
  • Add taco seasoning and water, bring to boil then simmer uncovered for 4-5 minutes or until the water has evaporated and the mixture has thickened.
  • Remove from heat, stir in salsa.
  • Preheat the oven to 375°F/190°C
  • To assemble the taco ring, spray a baking sheet with non stick spray. Arrange and overlap the wide sides of the crescent roll triangles to form a ring. It will look like a sun.
  • Spread the refried beans around the inside of the dough ring, followed by the beef mixture, and cheese. See note 4.
  • Fold the triangles over the filling and tuck under the wider sides.
  • Bake for 20 to 25 minutes or until the ring is lightly browned.
  • Allow to cool for 5 minutes before slicing and serving.

I haven't made one of these in years! I used to make them all the time, so going to make one soon for an upcoming football game! Will be fun! Hope you try this, too. It's very simple and easy to make and you can add any of the extra ingredients you'd like. Just pile them in the middle. You can also place a cut pepper half in the very center for salsa or guacamole. Enjoy! (Photo from bing images)

Number Of Ingredients 17

1 1/2 lb. - lean ground beef
1 - tall bell pepper, any color/variety, slice off top third or half cutting zigzag pattern or straight
1-3 - fresh jalapeno(s), seeded and finely chopped, to heat preference (mild, medium or hot)
1 - small shallot, chopped, (can sub half of a small onion)
2 - packets taco seasoning mix, or 1 1/2 batches of my homemade
1 Tbl. - tomato paste or ketchup
2 cups - sargento fancy shredded 4 cheese mexican cheese, 1 (8 oz.) bag
1/2 cup - water, more if needed
2 (8 oz.) - packages refrigerated crescent roll dough
1/2 head - lettuce, shredded
2 - roma tomatoes, chopped*, see tip
1 small - green onion, sliced, green and white part both
1 cup - whole black olives, drained, then sliced
- *salt and pepper
1 cup - salsa or guacamole, more if needed, optional
- *sour cream
- *paprika

Steps:

  • Preheat oven to 375. In frying pan, combine ground beef, jalapeno(s), shallot and top half of bell pepper(chopped). If you don't want to add the bell pepper, just pop the stem out and freeze the rest in a ziploc baggie for another use. Saute til beef is done. Drain grease. Stir in taco seasoning, and water til well combined. Saute a few minutes til flours have cooked and is very thick. Add half of cheese and stir til cheese has melted.
  • Arrange crescent roll triangles in a circle on a foil-lined and lightly sprayed pizza pan or cookie sheet overlapping wide ends just a tiny bit and ends are pointing outwards. (Like a sun!) The open inner circle should be about 5-6 inches in diameter. Scoop meat filling over inner wide part of dough evenly all the way around. Sprinkle top of meat filling with rest of cheese. (I don't even measure this part, and add as much as I like!) Fold point ends of triangles over meat and tuck under base best you can. You can stretch the end of the point if needed. But just a little. *Filling will not be completely covered. Bake 20-25 minutes or until golden brown. Transfer to serving platter. In small bowl, toss lettuce, tomato, green onions and olives with a little salt and pepper. Place into center of taco ring. Fill bottom pepper half with salsa or guacamole. Nestle pepper into very center. Place or pipe little dollops of sour cream on top of taco ring all the way around, place a jalapeno ring if desired, and lightly sprinkle sour cream with a little paprika. For serving, cut with knife and use a pie server or small spatula. *Don't forget to add a spoon to the bell pepper bowl for the salsa or guacamole. *This last time I made them, I used the Big Country Crescent rolls, baked it at 350 for 23 mintes. (So 20-25 minutes will be the same, but 350, not 375.)
  • Tomato cutting tip: To get the most from your tomatoes when cutting them, first cut them in half lengthwise. Take one half and lay it flat side down. Cut in half again lengthwise. Holding the 2 halves together, turn and slice crossways into thin slices. You will have nice thin triangles. Repeat with other half. For large tomatoes, cut each half into fourths (four wedges) before slicing.

1 tablespoon olive oil
1 large white onion, diced
1 red bell pepper, diced
1 jalapeño, seeded, diced
1 lb ground beef
1 packet taco seasoning
1 lime, juice
10 flour tortillas
nonstick cooking oil spray
1 ½ cups shredded cheddar cheese
2 cups tortilla chips, crushed
1 ½ cups shredded monterey jack cheese
salsa, for serving

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large skillet over medium heat, heat the olive oil. Add the onion and cook, stirring occasionally until caramelized, about 10 minutes. Add the red bell pepper and jalapeño. Cook until softened, about 3 minutes.
  • Add the ground beef, breaking apart with your spoon, and mix into the other ingredients. Add the taco seasoning and the lime juice. Mix thoroughly, cover, and refrigerate until ready to use.
  • On a cutting board, place the stack of tortillas. Cut off two round sides of the tortillas, leaving a 4-inch (10-cm) wide middle section. Cut the middle section in half vertically.
  • Generously spray a bundt pan with nonstick spray.
  • Place the middle strips of tortilla in the bundt pan in a fanning pattern. Each tortillas strip should slightly overlap the previous strip. Sprinkle half of the cheddar cheese on top of the tortillas.
  • Spread half of the ground beef mixture on top of the cheese.
  • Place a third of the round strips of tortilla on top of the ground beef mixture in a fanning pattern. Sprinkle half of the Monterey Jack on top of the tortillas. Sprinkle the tortilla chips on top of the cheese.
  • Place another third of the round strips of tortilla on top of the chips in a fanning pattern. Sprinkle the rest of the cheddar cheese on top of the tortillas. Spread the rest of the ground beef mixture on top of the cheese. Sprinkle the rest of the Monterey Jack on top of the ground beef mixture. Place the rest of the tortillas on top of the cheese in a fanning pattern.
  • Bake for 45 minutes until crispy and browned.
  • Let cool for 20 minutes.
  • Place a plate on top of the bundt pan, and invert the ring onto the plate.
  • Slice and serve with salsa.
  • Enjoy!

My kids love tacos and this is a great change from the everyday taco!

2 can(s) refrigerated crescent rolls
1 1/2 lb ground beef
1 pkg taco seasoning mix
1 large onion
2 large tomatoes
1 lettuce head
1 lb mexican blend shredded cheese
1 can(s) black olives
1 jar(s) salsa
1 c sour cream
2 medium lemons or limes

Steps:

  • 1. On a nonstick round pizza pan, lay the crescent rolls out with the large triangle end on the inside, each side touching, with the pointed end hanging over the edge.
  • 2. In a skillet, brown the ground beef with the taco seasoning until done. Drain.
  • 3. Place the cooked, ground beef on the ring of crescent rolls in a circle. Sprinkle with shredded cheese. Bring the pointed ends of the rolls up and over the ground beef and cheese mixture and tuck the end under the middle.
  • 4. Bake in a 350 degree oven for 10-15 minutes until the crescent rolls are golden brown.
  • 5. While the ring bakes, chop the remaining vegetables. When the ring is baked and has slightly cooled (you dont want this cold or scorching hot) place all the veggies in the middle of the ring, slice and serve it with a wedge of lemon or lime and a dollop of sour cream on top with some salsa.

1 small onion, chopped
¾ cup water
1 (1.25 ounce) package taco seasoning
2 (8 ounce) cans refrigerated crescent rolls
1 (8 ounce) package shredded Mexican cheese blend

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease. Add water and taco seasoning to beef mixture; bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until water is evaporated, 10 to 15 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Remove crescent roll dough from packaging and separate into individual pieces.
  • Arrange crescent roll triangles in a circle with the points facing outward on a pizza stone or pan. Spoon ground beef mixture into the center of each dough piece, creating a ring shape. Sprinkle Mexican cheese blend over ground beef mixture. Fold crescent roll points toward the middle, sealing the dough together.
  • Bake in the preheated oven until dough is lightly browned, 11 to 13 minutes.

CHARRED SPICED BONITO TACOS

For some reason, small tunas like the bonito are not as popular fresh as the large yellowfin and bigeye tunas. Bonito has a delicate yet rich flavor. In this recipe, the fish is highly seasoned, grilled, and then broken up into pieces with the tines of a fork and used as the filling for tacos. The slight bitterness from the grilling combined with the smoky richness of the seasoned fish is a perfect excuse to experiment with several salsas as accompaniments. I particularly recommend Charred Tomato Mint Salsa. Don't forget to have plenty of soft, fresh tortillas on hand.

1 pound bonito, mackerel, or yellowfin tuna fillet, cut into 2- by 4- by 1-inch strips, or 1 small whole mackerel
2 tablespoons freshly squeezed lime juice, plus more, if necessary
1/4 cup olive oil, plus more for oiling grill
2 tablespoonschipotle rub
2 tablespoons diced radish
2 tablespoons very thinly sliced scallion, white and green parts
charred tomato mint salsa
8 small tortillas, heated

Steps:

  • Light the grill. In a medium-sized, nonreactive bowl, toss the fish with lime juice, 1/4 cup olive oil, and Chipotle Rub. Cover, refrigerate, and let marinate about 1 hour. Oil grill and cook fish over a hot fire until lightly charred and medium-rare (it should still be pink in the middle), about 3 minutes.
  • In a warm bowl (so fish does not cool too much), shred fish. Taste for seasoning and sprinkle with a little more Chipotle Rub and lime juice, if needed. Top with radish and scallion and serve warm with salsa and tortillas.
