1 pouch Betty Crocker™ sugar cookie mix
2 tablespoons unsweetened baking cocoa
1/3 cup butter or margarine, softened
1 egg
1 container (1 lb) Betty Crocker™ Rich & Creamy vanilla frosting
12 small jelly beans, cut in half
Betty Crocker™ black decorating gel (from 0.68-oz tube)

Steps:

  • Heat oven to 375°F. In medium bowl, stir together cookie mix and cocoa. Add butter and egg; stir until soft dough forms.
  • On floured surface, roll dough to 1/4-inch thickness. Cut with 5-inch gingerbread man cutter. On ungreased cookie sheet, place 1 inch apart. Gather dough scraps; reroll until all dough is used.
  • Bake 7 to 9 minutes or until cookies are just puffed and tops are dry. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
  • Spoon frosting into reasealable freezer plastic bag; partially seal bag and cut 1/4-inch hole in 1 bottom corner. Or use decorating bag with flat tip with 1/4-inch-wide opening (#44). Gently squeeze bag to pipe frosting on cookies for bandages. Attach jelly beans for eyes; use black gel to make pupils in eyes. Store cookies in airtight container.

These coated chocolate cookies are frightfully delicious! They have been a long-time favorite in our house during the Halloween season. I found this years ago published in the local newspaper. I still have the clipping, but cannot give credit to its creator/author, as none was printed in the article. Great family-time baking project; the kids love to help form the chilled dough into the mummy shapes, with clean hands, of course! Great for Halloween, but we also use this dough for Xmas candy cane and wreath-shaped cookies, too. Have fun!

⅔ cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
½ cup unsweetened cocoa powder
¼ teaspoon baking soda
½ teaspoon salt
2 (11 ounce) packages white chocolate chips, or as needed
1 ½ tablespoons solid vegetable shortening, or as needed
miniature chocolate chips

Steps:

  • Beat butter and sugar with electric mixer in a large bowl until smooth. Mix in eggs one at a time, beating the first egg in until fully incorporated before adding the second. Stir in vanilla extract.
  • Sift together flour, cocoa powder, baking soda, and salt in a bowl; stir into butter mixture. Shape dough into a log and wrap with waxed paper, parchment, or plastic wrap. Refrigerate until firm, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice pieces off the log and shape them into narrow wedges about 3 inches long. Set cookies on baking tray. Cut more slices and pull off teaspoon-sized pieces and roll into balls; flatten and press balls onto wide ends of wedges for the mummies' "heads."
  • Bake in preheated until cookies are set and edges are dry, about 8 minutes. Let cool in pan for 1 minute; remove to wire rack to cool completely.
  • Combine white chocolate chips with vegetable shortening in a microwave-safe bowl. Heat in microwave on low until melted, 1 to 2 minutes, stirring every 20 seconds, until coating is warm and smooth. Coat the tops of each cookie with melted white chocolate using a small spatula or butter knife. Reheat white chocolate mixture in microwave for a few seconds and stir again if it becomes too thick to work with. Repeat coating remaining cookies with white chocolate.
  • Use a toothpick to score lines for "bandages" on each cookie, and place mini chocolate chips on the mummy heads for eyes.

1 cup powdered sugar
1 teaspoon vanilla
1 3/4 cups Gold Medal™ all-purpose flour
1/3 cup unsweetened baking cocoa
1 teaspoon instant coffee granules or crystals
1 1/4 cups white vanilla baking chips (from 11-oz bag)
1/4 cup miniature candy-coated semisweet chocolate baking bits (40 bits)

Steps:

  • Heat oven to 350°F. In large bowl, beat butter, powdered sugar and vanilla with electric mixer on medium speed about 2 minutes or until creamy. On low speed, beat in flour, cocoa and coffee granules 1 to 2 minutes or until well mixed. Divide dough into 2 balls; press each to form disk. Wrap each disk in plastic wrap; freeze 10 minutes.
  • On lightly floured surface, roll 1 dough disk at a time until 1/8 inch thick. Cut with 5-inch gingerbread boy cutter. On ungreased cookie sheets, place cutouts 1 inch apart. Reroll and cut any remaining dough. Bake 9 to 10 minutes or until set. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, 15 to 20 minutes.
  • Place white baking chips in small resealable freezer plastic bag; seal bag. Microwave on High 30 seconds. Turn bag over; microwave 15 seconds longer until chips are softened. 1 1/2 cups all-purpose flour, plus more for dusting
1/2 cup almond flour
1/2 cup unsweetened Dutch-process cocoa powder
1/2 teaspoon salt
1/4 teaspoon baking powder
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 1/4 cups granulated sugar
1 large egg
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
Confectioners' sugar, for dusting
Black decorating icing

Steps:

  • Combine the all-purpose flour, almond flour, cocoa powder, salt and baking powder in a medium bowl; whisk to combine. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until pale and fluffy, 4 to 5 minutes. Beat in the egg and both extracts. Reduce the mixer speed to medium low; beat in the flour mixture until combined. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate until firm enough to roll out but not hard, 1 to 2 hours.
  • Preheat the oven to 350˚. Line 2 baking sheets with parchment paper. Working with 1 piece of dough at a time, roll out the dough on a lightly floured surface until about 1/4 inch thick. Cut out shapes using a 5-inch mummy cookie cutter (or cut the dough into rectangles or circles). Reserve the dough scraps. Arrange the cutouts about 1 inch apart on the prepared baking sheets.
  • Gather the dough scraps and roll out on a lightly floured surface until very thin. Cut into 1/8-inch-wide strips. Arrange the dough strips on the cutouts to look like bandages, trimming as needed. Refrigerate the cutouts until firm, about 15 minutes.
  • Bake the cookies until firm around the edges, 15 to 20 minutes. Let cool completely on the baking sheets. Dust with confectioners' sugar and dot with black decorating icing for eyes.

MUMMY SANDWICH COOKIES WITH WHITE AND DARK CHOCOLATE

For the cookies:
1 recipe Classic Sugar Cookies , baked using the slice-and-bake method
8 ounces dark or semi-sweet chocolate, chopped
8 ounces white chocolate, chopped
For the filling (optional):
2 1/2 cups confectioner's sugar, sifted
3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
8 ounces bar cream cheese, at room temperature
1 teaspoon vanilla extract
Green food coloring (preferably gel paste)
Special Equipment:
pastry bag with small tip or resealable plastic bag
wooden skewers or toothpicks

Steps:

  • Decorate the cookies:
  • Fill a medium pot with 2 inches of water, place over medium heat, and bring to a simmer. Place dark chocolate in a heatproof metal or glass bowl and set over the pot (the simmering water should not touch the bottom of the bowl). Melt chocolate, stirring frequently, until almost completely melted. Remove bowl from heat, and stir until smooth.
  • Using a small offset spatula or spoon, apply a thin layer of dark chocolate onto the rounded surface of the "tops" of half the cookies, reserving the remaining half of the cookies for the sandwich "bottoms." Reserve remaining dark chocolate for the mummy eyes. Set cookies aside to allow chocolate to set, about 10 minutes.
  • Repeat melting process with white chocolate. Fill a pastry bag fitted with a small tip with melted white chocolate. Drizzle thin horizontal stripes of white chocolate onto each chocolate-covered cookie, leaving a 1/4-inch gap in the center for the eyes. Add the whites of two eyes in the center of each cookie and allow to set, about 5 minutes. Using a toothpick, add two small dots of reserved melted dark chocolate to the eyes to make pupils. Repeat with remaining cookies.
  • Make the filling:
  • Using an electric mixer, beat butter on medium-high until smooth and fluffy. Add the cream cheese and beat until well blended. Add the confectioner's sugar, vanilla extract, and a few drops food coloring. Mix on medium-low until well combined, adding additional food coloring, if desired.
  • Assemble the cookie sandwiches:
  • Spread 1 1/2 teaspoons of filling on the flat side of each reserved plain sugar cookie "bottom," then top with a decorated cookie.

20 oz white chocolate chip, divided
2 tablespoons coconut oil, divided
48 small candy eyeballs

Steps:

  • Make the cookies: Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper.
  • In a large bowl, cream the butter and sugar with an electric mixer on medium speed until fluffy, 2-3 minutes. Add the eggs and vanilla and beat until creamy and fully combined, 1-2 minutes more.
  • In a medium bowl, combine the flour, salt, and baking soda. Gradually add the dry ingredients to the wet ingredients and mix on medium-low speed just until incorporated, 2-3 minutes. Refrigerate the dough for about 20 minutes, or until firm enough to handle.

  • Bake the cookies for 8-9 minutes, or until set and golden brown. Remove from the oven and let cool completely, about 20 minutes.
  • Decorate the cookies: In a medium microwave-safe bowl, combine 16 ounces of white chocolate chips and 1½ tablespoons of coconut oil. Microwave in 30-second intervals, stirring between, until completely melted and smooth.
  • Using a fork, dip each cookie in the melted white chocolate to coat completely. Remove any excess chocolate by scraping the bottom of the cookie and fork against the rim of the bowl. Return the cookies to the baking sheet. Chill in the refrigerator for 20-30 minutes, or until the chocolate has hardened.
  • In a small microwave-safe bowl, combine the remaining 4 ounces of white chocolate and the remaining ½ tablespoon coconut oil. Microwave in 30-second intervals, stirring between, until completely melted and smooth. Transfer to a piping bag and cut a small hole at the tip.
  • Pipe the melted white chocolate in zigzags over the dipped cookies, starting at the top and working downward. Finish with a long X-shaped drizzle over the zig zags. Add 2 candy eyeballs to the top of each cookie. Chill in the refrigerator for 20-30 minutes, or until the chocolate has hardened.
