JUMBO CHOCOLATE CUPCAKES
Using a jumbo muffin pan, these larger-than-usual cupcakes are still cute and make a sweet gift.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Generously grease a 6-cup jumbo muffin pan with cooking spray.
- Combine flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
- Beat butter until smooth in a large bowl. Add sugar and beat for 1 minute. Add eggs and vanilla and beat until thoroughly mixed. Stir in dry ingredients. Add milk and mix until smooth.
- Fill the prepared muffin cups 3/4 full with batter.
- Bake in the preheated oven until a toothpick inserted in the centers comes out clean, about 35 minutes. Cool in the pan for 5 minutes. Transfer to a wire rack and let cool completely, about 25 minutes more.

CHOCOLATE JUMBOS
This is one our family favorites. It seems to be a local recipe and there are a lot of variations of this cookie. Some of them are quite soft but my recipe is a crisper version.

Steps:
- 1. Mix ingredients together. Roll batter about 1/2 inch thick, and cut into desired shapes. Bake at 375 for 10-15 minutes. Cool and frost with favorite icing or: 2 1/2 cup 10x 2 egg whites 1/4 tsp. cream of tartar 1/4 tsp. vanilla Beat last 4 till foamy and add sugar until firm peaks form.
GRANDMA WOLCOTTS CHOCOLATE JUMBLES (1912)
Great Grandma Wolcott and Aunt Grace would make these delicious frosted cookies. They are like a chocolate ginger bread cookie and a cup of milk tops them off. I make them for Christmas to share with family and friends, and usually double the recipe.

Steps:
- Mix soda into molasses then add brown sugar, eggs cinnamon, and cloves.
- Melt lard, butter and chocolate, then add to mixture.
- Sift in flour gradually, until stiff.
- Refrigerate to make dough hard and easy to roll.
- Roll out dough on floured surface until about 1/4 inch think.
- Cut using a "jumble cutter" (great grandma use to have these custom made) or cut ino 4 inch circles with a 1 inch hole in the middle. You can also use cookie cutters.
- Bake on ungreased cookie sheets for 7-9 minutes in 350 degree oven. The cookie edges will start to turn brown.
- Make a frosting with water and powdered sugar and frost cookies.
- Tip: If cookies dry out, place the heal of a piece of bread in the storage container.
JUMBO CHOCOLATE CUTOUTS

- Beat shortening and cocoa until blended. Beat in molasses, sugar and eggs. Beat in coffee. In another bowl, whisk flour, baking soda, cinnamon, salt and cloves; gradually beat into molasses mixture. Dough will be very soft. Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a well floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 3-1/2-in. round cookie cutter. Place 2 in. apart on ungreased baking sheets., Bake until edges are set, 14-16 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely. Decorate as desired with confectioners' sugar.

Steps:
- Mix together sugar and margarine.
- Add eggs and molasses, mix well.
- Slowly add in cocoa and ground cloves and vanilla.
- Add buttermilk to mixture and beat well.
- In seperate bowl mix together dry ingredients, flour, baking soda, and salt.
- slowly mix in dry ingredient mixture, stirring well.
- Refrigerate dough for 3 hours.
- Roll out dough on lightly floured surface, cut with donut cutter.
- Bake at 350 for 10- 12 minutes.
- Cool and Frost with confectioners icing.
