MINIATURE YELLOW BUTTER CAKES
These baked classics are even sweeter in small versions, topped with a decadent chocolate glaze.

Yield Makes 2 1/2 cups batter, enough for about 12 small cakes (about 2 1/2 inches in diameter)

Steps:
- Preheat oven to 350 degrees. Butter a cast-iron pan, and dust with all-purpose flour, tapping out excess. Sift together flours, baking powder, and salt in a medium bowl.
- Beat butter and sugar with a mixer on medium speed, scraping down sides of bowl as needed, until pale and fluffy, 2 to 3 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Reduce speed to low, and add flour mixture in three additions, alternating with milk, beginning and ending with flour mixture, mixing well after each addition.
- Fill pan halfway, and bake until golden around edges (time will vary depending on size of pan). Remove from oven, and let cool in pan for 15 minutes. Transfer cakes from pan to a wire rack. Let cool. Coat each with glaze just before serving.
SATINY CHOCOLATE GLAZE
A glossy chocolate glaze to drizzle over a Bundt cake. It's also great on cookies and doughnuts.

- In a double boiler over hot, but not boiling water, combine chocolate chips, butter, and corn syrup. Stir until chips are melted and mixture is smooth, then add vanilla.
- Spread warm glaze over top of cake, letting it drizzle down the sides.

- Melt cocoa and butter together in a small saucepan over low heat, about 5 minutes. Remove from heat; stir in confectioners' sugar and vanilla extract. Stir in hot water, 1 teaspoon at a time, until glaze is thick and smooth.

CHOCOLATE BUTTER GLAZE
From Baker's Dozen Cookbook. I used this to glaze Rich Chocolate Cake (under my recipe) and the glaze is unbelievably delicious with a shiny finish. Easy to prepare and it's perfect for a cake that does not require refrigeration (suitable for tropical weather such as Singapore). Serve frosted cake at room temperature. Use best quality chocolate for good results (i used Valrhona). The prep time is for the microwave method for preparing the glaze only (glazing cake not included). Yield is 1 1/2 cups which is perfect for a 9 inch cake.

Steps:
- Combine chocolate, butter and corn syrup in a heatproof medium bowl.
- Place in a skillet of barely simmering water.
- Stir frequently, until almost completely melted.
- Remove bowl from skillet and stir until mixture is smooth.
- Do not whisk or beat the glaze.
- Let stand at room temperature without stirring until cooled, thick and spreadable (about 30mins, depending on kitchen temp).
- You may also use microwave for the melting step (as I did), just mix the ingredients in a microwave-safe bowl.
- Nuke the mixture at LOW power for approx 20 sec, remove bowl, stir gently.
- Repeat until chocolate has melted and mixture is smooth.
- The first layer of glaze- Spread a very thin layer using 1/4 of the glaze over the top and sides of cake (cake must be at room temp).
- Be sure to smooth rough surfaces and fill in any cracks.
- Be careful not to get any crumbs into the bowl of glaze.
- This is the'crumb coat', and it gives the cake a smooth and even undercoat for the final glaze.
- The final glaze- Rewarm the glaze in microwave/double boiler for a few seconds.
- Stir gently until smooth.
- Do not overheat; glaze should be 90F for it to dry to a shiny finish.
- If necessary, cool to proper temperature.
- Once the final glaze has been applied, let cake stand at room temp until the glaze sets, about 15mins.
- NOTE: Do no re-spread glaze once it has set, or it will have marks and dull streaks.

CHOCOLATE GLAZE
This thin chocolate glaze is the perfect icing for a quick cake, doughnut, or dessert topping. The icing firms up to make a glossy finish.

- Gather the ingredients.
- Combine the butter and chocolate in a saucepan over low heat and stir until melted. (Be careful not to overheat the chocolate as it could seize.) Alternatively, put the chocolate and butter in a microwave-safe bowl and microwave on medium for about 1 minute. Stir and continue to heat for about 15 seconds at a time, stirring between intervals, until the chocolate and butter are melted and smooth.
- Sift the confectioners' sugar into a small bowl.
- Stir the sifted confectioners' sugar into the melted butter and chocolate. Beat the mixture, adding small amounts of boiling water until thinned as desired. If you happen to find it too thin, add a little more powdered sugar. If too thick, add more hot water.
- Slowly drizzle the chocolate glaze from the pot or bowl over your cooled, finish baked good. If desired, use a spatula to evenly distribute. How long the glaze will take to harden will depend on both the temperature of the glaze and the room. Once cool, it will harden.

- Place chocolate in a small bowl. Bring cream to a boil in a small saucepan over medium heat. Pour over chocolate. Let stand for 2 minutes, then stir to combine. Pour glaze over cakes. Glaze can be refrigerated for up to 5 days. Reheat glaze in a double boiler or a heatproof bowl set over a pot of simmering water before using.
BROWN BUTTER-CHOCOLATE CHIP MINI POUND CAKES
These pound cakes are reminiscent of a chocolate chip cookie in cake form. They are delicious on their own, or can be frosted with a simple vanilla or chocolate glaze.

- Place butter into a small light-colored saucepan over medium heat. Cook, swirling pan frequently, until brown bits form on the bottom of the pan, and the butter begins to smell nutty, about 10 minutes. Immediately pour butter into a large mixing bowl, and allow to cool slightly.
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a mini Bundt® pan.
- Whisk together flour, salt, and nutmeg in a small bowl.
- Add brown sugar and white sugar to the bowl with brown butter. Mix butter and sugars together until thoroughly combined. Add in eggs, 1 at a time, mixing very well after each addition. Mix in vanilla. Add in half of the flour mixture, mixing until just combined. Add in sour cream, mixing until just combined. Add in remaining flour mixture, and mix until just combined. Fold in mini chocolate chips.
- Divide batter evenly between the mini Bundt® cavities.
- Place pan into the preheated oven and bake until the cakes spring back lightly when touched, 15 to 20 minutes. Allow cakes to cool in the pan for 5 minutes before removing to a wire rack to cool completely.
