No-Bake Crispy Chocolate Peanut Butter Balls Recipe by Tasty image

Here's what you need: butter, creamy peanut butter, powdered sugar, crispy rice cereal, chocolate chunk

Number Of Ingredients 5

½ cup butter, softened
2 cups creamy peanut butter
3 cups powdered sugar
3 cups crispy rice cereal, more for garnish
2 cups chocolate chunk, preferably dark, for coating

Steps:

  • In a large microwave-safe bowl, add the butter and peanut butter. Microwave for 1 minute.
  • Using a fork, stir together the melted butter and peanut butter until smooth. Microwave additional 20 seconds, as needed.
  • Add the powdered sugar and rice cereal to the bowl. Gently mix together until fully incorporated.
  • Using your hands, roll the mixture into approximately 30-40 1-inch balls (2 ½ cm). Place them on a wax paper-lined baking sheet and freeze for 15 minutes.
  • In a small microwave-safe bowl, add the chocolate chunks. Microwave for 60-75 seconds, stopping to check and stir every 30 seconds.
  • Drop the frozen balls in the melted chocolate one at a time, use a fork to roll around to ensure an even coating. Place back on a wax paper-lined baking sheet.
  • Garnish with additional rice cereal while the chocolate is still warm. Chill until the chocolate has set.
  • Enjoy!

Number Of Ingredients 8

1 cup peanut butter
1/3 cup honey
2 teaspoons carob powder or 2 teaspoons unsweetened organic cocoa powder
1/2 cup raisins
3/4 cup unsweetened dried shredded coconut, divided
1/2 cup semi-sweet chocolate chips (gluten-free, if desired)
1/4 cup sesame seeds
1/4 cup finely chopped nuts (walnuts, pecans, etc.)

Steps:

  • Before measuring the peanut butter, stir it up well.
  • Mix the peanut butter, honey and carob or cocoa powder until well combined. Stir in the raisins and 2 tablespoons of the coconut. Stir in the chocolate chips.
  • Refrigerate for 1 to 2 hours.
  • Place the remaining coconut, sesame seeds and nuts into 3 separate bowls. Using a spoon, scoop small heaps of the peanut mixture from the bowl; roll into 1 1/4-inch balls. Rolling is easier if you form a rough ball, roll in the coconut, and then continue rolling into a more perfect shape. Roll each finished ball in more coconut, sesame seeds and chopped nuts.
  • Arrange the balls on a plate, cover loosely with plastic wrap and refrigerate for at least 30 minutes.

1-1/4 cups pitted Medjool dates, roughly chopped
3 ounces 60% bittersweet chocolate, coarsely chopped
1/4 cup dried unsweetened tart cherries, chopped
1/4 cup deluxe mixed nuts, coarsely chopped
3 tablespoons unsweetened coconut flakes
3 tablespoons sunflower kernels
1-1/2 teaspoons olive oil
1 teaspoon vanilla extract

Steps:

  • Place dates, chocolate and cherries in a food processor; process until finely chopped about 1 minute. Add nuts, coconut and sunflower kernels; process until blended. Add oil and vanilla; process until mixture comes together. Roll into 12 balls. Refrigerate, covered, at least 30 minutes before serving. Store in an airtight container in the refrigerator.

2 ounces unsweetened chocolate
1/3 cup butter, cubed
1 cup sugar
1 egg
1 egg yolk
1/2 teaspoon almond extract
1-1/3 cups all-purpose flour
1/2 cup finely chopped almonds
GLAZE:
1 ounce unsweetened chocolate
1 tablespoon butter, softened
1/4 teaspoon almond extract
1-1/4 cups confectioners' sugar
3 to 4 tablespoons milk

Steps:

  • In a microwave, melt chocolate and butter; stir until smooth. In a large bowl, beat the sugar, egg, yolk, extract and chocolate mixture. Gradually add flour and mix well. Stir in nuts. Shape into 3/4-in. balls and place 1 in. apart on ungreased baking sheets., Bake at 350° for 10-12 minutes or until set. Cool. , For glaze, in a microwave-safe bowl, melt chocolate and butter; stir until smooth. Add the extract, sugar and milk and mix well., Dip tops of cookies into glaze; allow excess to drip off. Place on waxed paper; let stand until set. Store in airtight containers.

1 cup peanut butter
¾ cup confectioners' sugar
1 cup graham cracker crumbs
2 cups semisweet chocolate chips
3 (1 ounce) squares semisweet chocolate, chopped
1 tablespoon shortening

Steps:

  • In a medium bowl, mix together the peanut butter and confectioners' sugar until smooth. Stir in graham cracker crumbs until well blended. Form the dough into 1 inch balls by rolling in your hands, or by using a cookie scoop.
  • Melt the semisweet chocolate chips, semisweet chocolate squares, and the shortening in the top half of a double boiler. Use a fork to dip the balls into the melted chocolate, and place on wax paper to cool until set.
