COCONUT BLONDIES WITH DARK CHOCOLATE
Chewy coconut and dark chocolate combine in these irresistible blondies.

Steps:
- Preheat oven to 350 degrees. Whisk together the flours and salt and set aside. Combine the butter and brown sugar in a bowl and beat until well combined.
- Add the eggs and vanilla and stir well. Slowly add the flour mixture. Stir in the coconut and chocolate chips.
- Scrape the batter into a well-greased 9x13 pan. Spread evenly with a spatula. Sprinkle additional coconut on top.
- Bake for 28 minutes, or until the bars are lightly browned around the edges and set in the middle. Cool slightly before serving. Enjoy!

CHOCOLATE COCONUT TOFFEE BARS
Delicious and so easy to make. If you like chocolate, coconut and nutsyou will like these. They are a little chewy like some candy bars like Snickers so are kind of like a Snickers with added coconut. Hope You like them, I sure do!!

Steps:
- Preheat oven to 350 degrees. Spray 9X12 baking pan with release spray.
- Mix together topping ingredients until crumbly and gently press into prepared pan. Do not press too hard or they will be hard to remove from the pan. Bake 10 minutes.
- While the crust is baking mix the ingredients for thefilling stiring until ingredients are well mixed.
- Spread filling ingredients over hot crust and bake an additional 20 minutes.
- Remove from oven and sprinkle chocolate chips on top return pan to ove until chips are soft enough to spread.

CHOCOLATE TOFFEE DELIGHTS
My sister first let me have a taste of these delicious bars and I knew I had to have the recipe. The recipe originally came from the Taste of Home magazine, and is supposed to taste similar to a famous Girl Scout cookie. To me it didn't taste much like that cookie, but it was fantastic in its own right. When I make this I use the Smucker's Sugar Free topping--it cuts some of the calories and I don't notice a difference in flavor. You can use semi sweet chips if you have trouble finding dark, but I think milk chocolate chips would be too sweet in this recipe.

- In a small bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in extracts. Combine flour, salt and baking powder; gradually add to the creamed mixture and mix well.
- Press into greased 9x13 baking pan. Bake at 350° for 10 minutes. Prick crust with a fork; sprinkle with remaining sugar. Bake 15 minutes longer or until set.
- Meanwhile, place coconut and almonds in food processor; cover and process until finely chopped. Transfer to a small bowl; stir in ice cream topping. Spread evenly over crust. Bake for 5-10 minutes or until edges are bubbly. Cool on wire rack.
- In a microwave, melt chocolate chips; stir until smooth. Drizzle over caramel mixture. Let stand until chocolate is set. Cut into bars.

- Reserve 20 almonds; set aside. Chop remaining almonds. In medium bowl, stir chopped almonds, coconut and milk until well blended. Refrigerate mixture 25 minutes for easier handling. Let cookie dough stand at room temperature for 10 minutes to soften.
- Meanwhile, heat oven to 350°F. In large bowl, knead cookie dough and cocoa with hands until well blended. Cover with plastic wrap; set aside.
- For each cookie, press 1 rounded tablespoon dough into 3-inch round. Place 1 tablespoon coconut mixture on center of each round. Wrap dough around filling, pressing edges to seal; shape into a ball. Place balls 3 inches apart on ungreased cookie sheets. Press each ball with fingers into 2 1/2-inch round. Press 1 whole almond on each cookie.
- Bake 9 to 12 minutes or until puffed and edges are set. Immediately remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
