I modified a friend's traditional Dutch baby recipe to come up with this version, which my family thinks is terrific. You'll be surprised at how easy it is to make. -Mary Thompson, La Crosse, Wisconsin

1/4 cup miniature semisweet chocolate chips
1/4 cup packed brown sugar
DUTCH BABY:
1/2 cup all-purpose flour
2 large eggs, room temperature
1/2 cup half-and-half cream
1/8 teaspoon ground nutmeg
Dash ground cinnamon
3 tablespoons butter
Optional: Maple syrup and additional butter

Steps:

  • In a small bowl, combine chocolate chips and brown sugar; set aside. In a small bowl, beat the flour, eggs, cream, nutmeg and cinnamon until smooth. , Place butter in a 9-in. pie plate or an 8-in. cast-iron skillet. Heat in a 425° oven until melted, about 4 minutes. Pour batter into hot pie plate or skillet. Sprinkle with chocolate chip mixture. Bake until top edges are golden brown, 13-15 minutes. Serve immediately, with syrup and butter if desired.

There's a rush to breakfast in my house when I whip up this chocolate chip pancake recipe. The batter calls for chocolate milk and mini chips, and I top the golden brown cakes with butter and fruit. Number Of Ingredients 10

1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg
1 cup chocolate milk
2 tablespoons canola oil
1/2 teaspoon vanilla extract
1/4 cup miniature semisweet chocolate chips
Optional: Maple syrup and butter

Steps:

  • In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, whisk egg, milk, oil and vanilla. Stir into dry ingredients just until moistened; stir in chocolate chips. , Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. If desired, serve with extra chocolate chips, maple syrup, and butter.

  • Place butter in a 9 inch pie plate. Heat at 425°F for 4-6 minutes or until melted. Pour batter into hot pie plate. Sprinkle with chocolate chip mixture.
  • Bake for 15-20 minutes or until top edges are golden brown. Serve immediately with syrup and butter if desired.

1 large Granny Smith apple
4 tablespoons (1/2 stick) unsalted butter, divided
2 tablespoons granulated sugar, divided
1/4 teaspoon ground cinnamon
1/2 cup whole milk
2 extra-large eggs, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon kosher salt
Confectioners' sugar
Pure maple syrup, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
  • Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
  • Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

1/2 cup coffee-flavored liqueur
1/2 cup frozen reduced-calorie whipped topping, thawed

Steps:

  • Preheat oven to 450.
  • Place a 9 inch cast iron skillet in a 450 oven for 15 minutes.
  • Combine first 5 ingredients, stirring with a whisk until smooth.
  • Melt 1 T butter in preheated pan until browned, swirling to evenly coat pan.
  • Add batter; sprinkle with chocolate chips.
  • Bake at 450 for 10 minutes or until puffed and browned.
  • Cut banana halves in half crosswise.
  • Melt 1 T butter in a large skillet over medium high heat.
  • Add bananas; cook 2 minutes on each side or until browned. Add liqueur; simmer 1 minute.Serve with Dutch baby; top with whipped topping.

This large, fluffy pancake is excellent for breakfast, brunch, lunch and dessert any time of year. And it comes together in about five blessed minutes. Just dump all of the ingredients into a blender, give it a good whirl, pour it into a heated skillet sizzling with butter, and pop it into the oven. Twenty-five minutes later? Bliss.

3 eggs
1/2 cup flour
1/2 cup milk
1 tablespoon sugar
Pinch of nutmeg
4 tablespoons unsalted butter
Syrup, preserves, confectioners' sugar or cinnamon sugar

Steps:

  • Preheat oven to 425 degrees.
  • Combine eggs, flour, milk, sugar and nutmeg in a blender jar and blend until smooth. Batter may also be mixed by hand.
  • Place butter in a heavy 10-inch skillet or baking dish and place in the oven. As soon as the butter has melted (watch it so it does not burn) add the batter to the pan, return pan to the oven and bake for 20 minutes, until the pancake is puffed and golden. Lower oven temperature to 300 degrees and bake five minutes longer.
  • Remove pancake from oven, cut into wedges and serve at once topped with syrup, preserves, confectioners' sugar or cinnamon sugar.
