Chocolate and caramel are always a pick-me-up in this house. My children love this coffee cake and ask for it instead of a regular cake for their birthdays or holidays. The caramel adds just the right touch to make the flavor burst with every bite.

1/2 lb butter, softened
1 c sugar
2 eggs
1/2 pt sour cream
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
2 c all purpose flour
1 pkg semi-sweet chocolate chips
1 pkg caramel chips
cinnamon, mixed with sugar

Steps:

  • 1. Mix first eight ingredients and caramel chips to form dough, divide dough in 1/2 and spread first half into 9x13 buttered and floured baking pan. Cover dough with 1/2 the semi-sweet chocolate chips and sprinkle with cinnamon sugar mixture. Spread 2nd half of dough on top and repeat with 2nd half of chocolate chips and cinnamon sugar.
  • 2. Bake at 350 degree for 30 minutes. This coffee cake is good warm and cold! If you want to, sometimes I add a caramel drizzle on the top and serve it warm with a dark Colombian coffee.

3 ounces unsweetened chocolate
1 cup water
1 teaspoon red food coloring, optional
1/2 cup shortening
2 cups sugar
3 large eggs
2-1/2 cups all-purpose flour
1-1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
CARAMEL FROSTING:
2 cups packed brown sugar
2/3 cup milk
1/4 cup butter, cubed
1/4 teaspoon salt
1 cup confectioners' sugar
2 tablespoons heavy whipping cream
2 teaspoons vanilla extract
15 pecan halves

Steps:

  • In a small saucepan, melt chocolate in water. Stir in food coloring if desired. Remove from the heat; cool completely. In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; add to the creamed mixture alternately with sour cream. Add cooled chocolate mixture; beat on medium speed for 1 minute. , Pour into a greased 13x9-in. baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, combine the brown sugar, milk, butter and salt in a large heavy saucepan. Bring to a boil over medium heat, stirring constantly. Cook and stir until a candy thermometer reads 234° (soft-ball stage). Remove from the heat; cool to lukewarm. Transfer to a small bowl; beat in confectioners' sugar, cream and vanilla until mixture achieves spreading consistency. Frost cake. Garnish with pecans.

Number Of Ingredients 6

1 package German Chocolate cake mix
Ingredients called for on cake mix (eggs, oil, water, etc)
1 (14 oz) can sweetened condensed milk
1 jar caramel ice cream topping
1 (8 oz) container frozen whipped topping, thawed (Cool Whip)
4-6 Heath candy bars, crushed (I have also seen Heath bits over on the baking aisle by the chocolate chips- those would work perfectly too)

Steps:

  • Prepare and bake cake in a 9x13" baking pan as directed on back of cake mix. Let cake cool. Using a fork, poke holes all over the top of the cake. Mix together the sweetened condensed milk and caramel topping and pour all over the cake, letting it sink down into the holes. Spread whipped topping over the caramel layer and sprinkle with crushed Heath bars.
  • I keep this cake in the fridge- it's delicious cold!

  • To make the cake: Preheat the oven to 350°F. Lightly grease two 8” round pans; make sure they’re at least 2” deep. Divide the batter evenly between the two pans and bake the cakes for 35 to 38 minutes, until they test done.
  • Turn the cakes out of the pans onto a rack to cool completely while you continue with the recipe.
  • To make the syrup: Combine the sugar and water in a microwave-safe measuring cup and heat for 90 seconds at high power; or heat the mixture in a small saucepan set over medium heat. Stir until the sugar dissolves, then add the rum. Set aside to cool.
  • To prepare the cake: Cut a small vertical notch in the sides of the two cake layers. (Since you’ll be cutting each layer in half to make a total of four layers, the notches will help you line them back up when it's time to assemble the cake.)
