HOW TO MAKE CHOCOLATE PUDDING

How to Make Chocolate Pudding image

Although store-bought chocolate puddings are actually pretty decent in terms of flavor and quality, I absolutely love to make my own chocolate pudding

Categories     dessert     main dish     snack

Time 20m

Yield 4 servings

Number Of Ingredients 7

2 Large Egg Yolks
2 tbsp. Cornstarch
2 c. Whole Milk, Divided
1/2 c. Sugar
1/4 c. Unsweetened Cocoa Powder
1/4 tsp. Salt
2 tsp. Chocolate Extract (or Vanilla Extract)

Steps:

  • In a medium bowl, whisk the egg yolks for about 60 seconds until light yellow and increased in volume, then whisk in the cornstarch and about 1/4 cup of the milk. Once smooth and incorporated, set aside.Place the sugar, cocoa, salt, and remaining milk in a saucepan, and bring to a scald over medium-high heat, which is when the liquid is about 180-190ºF. This is before the mixture comes to a boil, and in this stage you will see little bubbles start forming on the sides of the pan. Remove the pan from the heat and, while whisking constantly, dribble the hot cocoa into the egg cornstarch mixture very gradually. We are tempering so we don't scramble the eggs. Pour everything back into the saucepan and cook over medium high heat, whisking constantly, until the pudding comes to a full boil. Reduce the heat to a simmer and continue whisking for a couple minutes until the pudding is thickened.Remove the pudding from the heat and stir in the chocolate or vanilla extract. Pour the pudding into a bowl and press plastic wrap directly on the surface of the pudding so a skin doesn't form. Refrigerate for an hour or two until chilled. Serve and enjoy!

CHOCOLATE BLACKOUT PUDDING (FROM SCRATCH)

Chocolate Blackout Pudding (From Scratch) image

This pudding is one of the best I've ever had. It is extremely rich and decadent. On top of that, it's pretty low in fat (much healthier than what you'd buy at the store) and pretty simple to make. It comes from Didi Emmons who says: "The consistency is creamy and smooth, like that of Jell-O chocolate pudding I loved as a child, but the flavor is far superior."

Time 15m

Yield 8 serving(s)

Number Of Ingredients 11

3 cups low-fat milk, divided
4 tablespoons cornstarch or 5 tablespoons arrowroot
1 egg yolk
1 egg
1/2 cup plus 2 tablespoons sugar
2 tablespoons good quality cocoa, preferably Dutch-processed
3 ounces unsweetened chocolate, cut into small pieces
4 ounces semisweet chocolate or 4 ounces bittersweet chocolate, cut into small pieces
2 teaspoons vanilla extract
1 tablespoon brandy (optional) or 1 tablespoon Grand Marnier (optional)
whipped cream (optional)

Steps:

  • In a small bowl, combine 1/2 cup milk with the cornstarch and whisk well. Add the yolk, egg, sugar, and cocoa and whisk well.
  • In a large, heavy saucepan, heat the remaining 2 1/2 cups milk over med-high heat until it begins to boil. Then pour about half of the milk into the cornstarch mixture, stirring all the time. Pour the mixture back into the saucepan. Place the pan over low heat, and whisk constantly for about 5 minutes, until the pudding thickens. The pudding should get very thick, like yogurt.
  • Remove the pan from the heat and add the chocolate pieces, vanilla, and alcohol if you like. Stir until chocolate is melted.
  • Ladle the pudding into mugs or ramekins and chill at least 1 1/2 hours. Serve it cold, topped with whipped cream if you like.

VANILLA PUDDING FROM SCRATCH

Vanilla Pudding from Scratch image

A typical everyday dessert in Germany. I never knew until I was an adult, that pudding was easy to make from scratch. I like to serve it with fresh seasonal fruit. This is a basic recipe, feel free to experiment with different flavors. - Preparation time is short, but you have to stir the pudding occasionally while cooling, so make it while you are occupied in the kitchen.

Time 45m

Yield 3 serving(s)

Number Of Ingredients 6

1 egg yolk
2 1/2-3 tablespoons cornstarch
2 tablespoons sugar (or to taste)
1 cup milk
1 teaspoon vanilla extract (seeds from 1 vanilla bean)
1/2 cup whipping cream, well chilled

Steps:

  • Note: I measure the cornstarch out of its box without sifting, leveling the spoons on the side of the box. Lower amount of starch will make a creamy soft pudding, larger amount a firmer pudding.
  • In a small pot whisk together egg yolk, 3 tbs of the milk, sugar and cornstarch (and vanilla seeds if using) until smooth. Best use a wire whisk to do so. Add rest of the milk, stir until smooth.
  • Put egg milk over medium heat and, stirring constantly, bring to a boil once, remove from heat and let cool. Stir frequently while the pudding is cooling to avoid a skin forming.
  • Whip cream until stiff.
  • When the pudding is cold fold the whipped cream in with a rubber spatula. Fill in individual serving bowls, layer with fruit salad if you like or serve with a sauce. Will keep in the fridge for 12 hours or more.
  • Note: Cooking time is cooling time.

HOMEMADE PUDDING (FROM SCRATCH)

Homemade Pudding (From Scratch) image

This is the best homemade pudding recipe I've ever used, it tastes better than store-bought, and it's fairly easy to make. NOTE: you can use splenda in place of sugar for a "lite" version.

Provided by BachFromTheDead

Categories     Gelatin

Time 14m

Yield 4-6 serving(s)

Number Of Ingredients 15

3 cups milk
1 cup sugar
3 tablespoons butter
3 tablespoons cornstarch (massive tablespoons)
4 egg yolks
1 1/2 teaspoons vanilla extract
1 pinch salt
1 -6 tablespoon sifted cocoa powder (ONLY if you are making chocolate pudding)
blueberries
candied orange
strawberry
raspberries
mint
butter cookie
whipped cream

Steps:

  • In a pot(or the microwave) get all 3 cups of milk scalding.
  • Whilst the milk boils; separate the eggs and discard the whites (if desired, you can set aside for an omlette or a meringue)and beat the cornstarch and sugar in the bowl with the egg yolks. It will have a hard time coming together at first; but keep whisking, it'll get there.
  • Keep milk very hot. Pour all of the egg yolk mixture into the scalding milk and beat vigorously until the mixture seems completely liquified. Add the salt, vanilla extract, and butter. Keep whisking until butter is well incorporated.
  • Keep warm and continuosly stir until the pudding thickens. Once thick (if making chocolate) add the sifted cocoa powder and stir until well incorporated.
  • Serve warm or refridgerate for 2 hrs (preferred) and serve with or without garnish.

CHOCOLATE PUDDINO

Chocolate Puddino image

Perfect for Valentine's Day, this rich and delicious chocolate pudding is made with a classic Italian method that they call "budino." The pudding has a glorious texture--firm enough to stay on the spoon and hold its shape, but at the same time, soft, smooth, and silky. It's a perfect balance between intense chocolate flavor, with just the right amount of sweetness, topped with a soft whipped cream topping that elevates it to a whole new level of amazingness!

Provided by Chef John

Yield 6

Number Of Ingredients 12

8 ounces dark chocolate chips
1 pinch salt
1 pinch cayenne pepper
6 large eggs
⅓ cup white sugar
1 cup whole milk
1 ¼ cups heavy cream
¼ teaspoon vanilla extract
1 tablespoon unsalted butter
¼ cup heavy cream, or to taste
⅛ teaspoon vanilla extract, or to taste
2 tablespoons shaved dark chocolate, or to taste

Steps:

  • Combine chocolate chips, salt, and cayenne in a heat-proof measuring cup; set aside.
  • Separate eggs by cracking one egg into your hand over a bowl. Open your fingers slightly and gently jiggle your hand until the egg white falls into the bowl below. Transfer the yolk to a skillet. Repeat with remaining eggs. Reserve egg whites for another use.
  • Add sugar, milk, and cream to egg yolks. Whisk thoroughly, breaking egg yolks first, until well combined.
  • Place skillet on the stove over medium or medium-low heat. Cook, stirring constantly with a silicone spoon, until very hot and thick enough to coat the back of the spoon, about 5 minutes. An instant-read thermometer should read at least 175 degrees F (79 degrees C). Remove from the heat.
  • Set a fine sieve over the bowl of reserved chocolate. Strain the custard sauce into the chocolate and let sit for 2 minutes. Whisk until chocolate has melted and custard sauce is smooth and shiny, about 2 minutes. Add vanilla and butter; stir until butter has melted, about 1 minute.
  • Pour warm custard sauce into 6 serving glasses. Tilt each glass and rotate it around so the warm chocolate coats another 1/2 inch of the glass. Cover with plastic and place in the refrigerator until completely chilled, at least 3 to 4 hours.
  • Combine cream and vanilla extract for topping in a metal bowl and whisk until thickened; make sure no peaks form. Spoon cream into the glasses, then tilt and twirl to coat the sides a bit.
  • Garnish with shaved chocolate and serve.

  • Set a medium sauce pot over medium heat. Add the sugar, cocoa powder, cornstarch, salt, and coffee granules. Stir to combine, then pour in the milk. Whisk well to remove all clumps.
  • Bring the mixture to a simmer. Once simmering, stir consistently for 1-2 minutes, as the pudding thickness. It should be fairly thick, but will continue to thicken as it cools.
  • Remove from heat and stir in the butter and vanilla. Stir until the butter is fully melted and combined.
  • If you feel like you were unable to stir in all the clumps, you can pour the pudding through a mesh strainer to remove any debris. Otherwise, scoop the pudding into a storage container and press a piece of plastic wrap down over the surface of the pudding, so a skin doesn’t form as it cools.
