1 medium orange
4 salmon fillets (6 ounces each)
1/2 cup reduced-sodium soy sauce
1/4 cup sliced red onion
1/4 cup olive oil
2 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup slivered almonds, toasted

Steps:

  • Finely grate 1/2 teaspoon peel and squeeze juice from orange; place in a large resealable plastic bag. Add the salmon, soy sauce, onion, oil, garlic and ginger; seal bag and turn to coat. Refrigerate for 30 minutes. Drain and discard marinade., Place salmon on a baking sheet. Broil 4-6 in. from the heat for 10-12 minutes or until fish flakes easily with a fork. Sprinkle with salt and pepper; top with almonds.

This salmon is marinated in a simple but super tasty Asian marinade and then broiled/grilled to produce a gorgeous caramelisation. Fast enough for midweek, fancy enough for company!

2 salmon fillets (, skinless (approximately 0.8 - 1lb / 400 - 500g))
1 tsp fresh ginger (, finely grated)
1 garlic clove (, crushed)
1 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp sweet chili sauce ((Note 1))
Sesame seeds
Scallions/shallots (, finely sliced)
Steamed Asian Greens
Rice

Steps:

  • Combine the Marinade ingredients in a shallow bowl. Add salmon and turn to coat. Cover and marinate for 30 minutes or up to overnight.
  • Heat grill/broiler on high. Place the rack 25 cm / 10" from the heat source.
  • Place salmon on baking tray (no oil required). Scrape all the excess glaze from the bowl onto the salmon.
  • Grill/broil for 7 to 10 minutes, until the top of the salmon is beautifully caramelised. Be careful not to overcook the salmon!
  • Serve salmon sprinkled with sesame seeds, scallions/shallots with rice and steamed Asian greens on the side.

1 side fresh salmon, boned but skin on (about 3 pounds)
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
  • While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
  • Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
  • Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

1/4 cup low sodium soy sauce
3 tablespoons rice wine vinegar
2 garlic cloves, (minced)
1 tablespoon ginger paste
1 tablespoon olive oil
3 tablespoons honey
1 teaspoon red pepper flakes
3 ounces shiitake mushrooms, (whole)
2 5 ounce salmon fillets
thinly sliced scallions, (to garnish)
sesame seeds, (to garnish)

Steps:

  • In a shallow bowl, combine orange juice & zest, soy sauce, rice wine vinegar, garlic, ginger, olive oil, honey, and red pepper flakes. Pour half the mixture into a medium sized mixing bowl.
  • Place the salmon, skin side up, in the shallow bowl and place the mushrooms in the medium sized mixing bowl. Spoon the marinade over the mushrooms to cover them and marinate both the salmon and the mushrooms for 30 minutes.
  • Preheat the air fryer to 400° F. Place the salmon in the air fryer basket skin side down and arrange the mushrooms around the salmon. Cook 8-10 minutes. To serve, drizzle some of the remaining marinade from the mushroom bowl and garnish with scallions and sesame seeds.

1/2 cup soy sauce
2 tablespoons balsamic vinegar
6 tablespoons lemon juice (or juice from 2 whole lemons)
2 tablespoons minced garlic
1 1/2 tablespoons brown sugar
1 teaspoon ground black pepper
4 salmon fillets
2 tablespoons grated fresh ginger (in the recipe but I leave out) (optional)

Steps:

  • Combine soy sauce, balsamic, lemon juice, garlic, brown sugar and black pepper.
  • Stir until brown sugar is dissolved.
  • Place salmon filets in a baking dish and pour sauce over, top with additional fresh ground pepper if desired.
  • Marinate in the refrigerator for one hour.
  • Bake at 375 degrees for 15-20 minutes or until salmon flakes with a fork.
  • Baste at least once with sauce while baking.
  • If grilling the salmon baste with the marinade more often. The marinade can then be boiled and then served as a sauce to top the fish when done.

1/2 cup soy sauce, low sodium
1/4 cup orange juice
2 tablespoons chopped garlic
2 teaspoons mustard
2 teaspoons tomato sauce or marinara sauce
Juice of 1/2 lemon

Steps:

  • Place salmon steaks in a Ziploc bag and set aside. Mix soy sauce, orange juice, garlic, mustard, tomato sauce and lemon juice in a bowl, and pour into the Ziploc bag. Seal and place bag into refrigerator and let marinade for 4 to 6 hours. When ready, place salmon steaks on grill for approximately 5 minutes on each side (or longer for well done).
