These cookies are made all over the Middle East. Each country and each household has their favourite recipe. The traditional shape is a horse shoe with the 2 ends pinched together and a nut is placed where they meet. I only do that if I am receiving guests or for a special occasion.

Number Of Ingredients 6

2 cups flour
1 tablespoon orange flower water or 1 tablespoon rose water (optional)
1 cup pure ghee
1 cup icing sugar
50 pine nuts or 50 pistachios
1/2 teaspoon baking soda

Steps:

  • Melt ghee in a saucepan on the stove.
  • Add icing sugar to ghee and mix till sugar is completely dissolved.
  • Remove from heat.
  • Add cardamom and gradually add in the flour and baking soda.
  • Mix well. dough should not stick to your hand.
  • Add more flour if necessary.
  • Roll 1 tsp of dough at a time into balls.
  • Place onto an oven tray, flatten slightly.
  • Place a nut of your choice in the middle of each cookie.
  • Bake at 180°C for 10 minutes, or until tops are cream.

From Canadian Living. Inspired by traditional Persian rice flour shortbreads, these pretty white delights just melt in your mouth. Chilling time for dough not included in times given. * I use more cardamom, feel free to use as much or little as you like.

1 cup unsalted butter, softened (250 mL)
1 1/2 cups icing sugar (375 mL)
1 egg
2 cups rice flour (500 mL)
1/4 teaspoon ground cardamom (1 mL)
1 pinch salt
3 tablespoons finely chopped pistachio nuts (45 mL)

Steps:

  • In large bowl, beat butter with sugar until light; beat in egg. In separate bowl, whisk together rice flour, cardamom and salt ; stir into butter mixture in 2 additions to make smooth dough. Cover and refrigerate until firm, about 1 hour.
  • Roll by 1 tbsp (15 mL) into balls. Place, 2 inches (5 cm) apart, on 2 parchment paper-lined rimless baking sheets. With fork, flatten to about 1/2-inch (1 cm) thickness. Sprinkle with pistachios.
  • Bake in top and bottom thirds of 325°F (160°C) oven for 17 to 20 minutes, rotating and switching pans halfway through, or until firm to the touch and edges are light golden. Let cool on pans for 2 minutes. Transfer to racks; let cool. (Make-ahead: Store layered between waxed paper in airtight container for up to 5 days or freeze for up to 3 weeks.).

A simple traditional Arabic recipe for cookies similar to shortbread. The wonderful flavor comes from the cardamom, which is fairly expensive, but very worth it. I actually prefer them without the almonds, but you might add them if you like.

1 cup butter, softened
1 cup sifted confectioners' sugar
2 cups all-purpose flour
½ teaspoon ground cardamom
12 almonds, split

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • In a medium bowl, stir together the butter and sugar until smooth. Stir in flour and cardamom until well blended. Pinch off tablespoonfuls of dough, and roll into a thin rope. Join the ends together in a circle, and place on a greased cookie sheet. Place almond halves on the joints where the circles come together.
  • Bake for 20 minutes in the preheated oven. The cookies should remain white, but may turn golden at the very edge.

When it has cooled, add the cardamom powder, salt, baking soda and flour and knead everything gently to a soft non-sticky dough. If the dough is sticky add a little flour. The dough may seem a bit crumbly but this is alright as long as the dough holds its shape when held.
  • Shape the dough into walnut sized (about an inch in diameter) balls. To do this take the dough and clench it in your palm as if squeezing the dough, couple of times. This will make the dough clump together and take the shape of a ball, roughly. Now lightly roll the dough into round balls. Flatten gently and press down an almond half in the centre of each cookie. As I mentioned earlier, I used chirongi instead of almonds. Place on a greased sheet, leaving a little space between cookies. These cookies don't spread but puff up a bit.
  • Bake at 180C (350F) for about 20 minutes. When done the cookies would have lost their whitish colour and just start becoming faintly golden. It is very important that the cookies do not brown or they would burn on the inside and become hard.
  • Cool on a rack and store in an airtight container. This recipe makes about 15 cookies which are 2" in diameter.
