CONTEST-WINNING CHOCOLATE ANGEL FOOD CAKE

Contest-Winning Chocolate Angel Food Cake image

When I take this different kind of angel food cake to church bake sales, it goes before I can get it on the table! I've always enjoyed cooking, especially baking. My other hobbies are embroidery, counted cross-stitch and taking care of my flowers and garden (I love to can). My husband and I are retired to our farm home; we have three sons, all grown, and four grandchildren.

Provided by Diana Rattray

Categories     Dessert     Cake

Time 3h42m

Number Of Ingredients 16

For the Cake:
1 1/2 cups egg whites, about 10 to 12 large eggs
1 1/2 cups granulated sugar, divided
1 cup cake flour
1/4 cup unsweetened cocoa, natural or Dutch-process
1 1/2 teaspoons cream of tartar
1/2 teaspoon fine salt
2 teaspoons vanilla extract
For the Optional Frosting:
2/3 cup semisweet chocolate chips
2/3 cup milk chocolate chips
2/3 cup heavy cream
Dash fine salt
1 1/2 teaspoons vanilla extract
1/2 cup butter, cut into pieces, room temperature
1 to 2 ounces shaved semisweet chocolate, optional, for garnish

Steps:

  • Gather the cake ingredients.
  • Place the egg whites in the bowl of a stand mixer fitted with the whisk attachment. Alternatively, use an electric hand mixer. Let stand for about 30 minutes to bring to room temperature.
  • Meanwhile, sift 1 cup of granulated sugar, cake flour, and cocoa into a medium bowl. Sift again and set aside (reserve the sifter, you will use it again). Position a rack in the center of the oven and heat to 350 F.
  • With the mixer on medium speed, beat the egg whites until frothy.
  • Add the cream of tartar and beat on high speed, gradually adding the remaining 1/2 cup of sugar. Continue beating for 3 to 5 minutes, until stiff peaks form. Beat in 1/2 teaspoon of salt and 2 teaspoons of vanilla extract.
  • Sift half of the flour-cocoa mixture over the beaten egg whites and gently fold it in with a spatula until blended but still streaky.
  • Sift the remaining flour-cocoa mixture over the egg whites and continue folding until well combined.
  • Spoon the batter into a two-piece 9.5-inch tube pan. Run a butter knife or spatula through the batter to release any air bubbles.
  • Bake the cake for about 38 to 42 minutes, or until a wooden skewer or cake tester inserted into the cake comes out clean.
  • Invert the pan and cool the cake completely.
  • Slide a knife or spatula around the pan and center tube to loosen the cake. Grasp the center tube to remove the cake from the outer pan; use a knife or spatula to release the cake from the bottom of the pan.
  • Place the cake on a cake plate or cake stand and dust with confectioners' sugar, or frost with the optional fluffy chocolate frosting. If desired, garnish with shaved chocolate. Make the Optional Frosting
  • Gather the frosting ingredients.
  • Put the semisweet and milk chocolate chips in a heat-safe bowl; set aside.
  • Pour the cream into a small saucepan and cook over medium heat until steaming hot. Do not let the cream boil.
  • Pour the cream over the chocolate chips and let stand for 5 minutes. Stir until melted. If there are still lumps of chocolate, place the bowl over a saucepan of simmering water and stir until smooth. Alternatively, microwave on low in short bursts, stirring frequently, until the mixture is smooth.
  • Let the chocolate mixture stand, stirring every 15 minutes, until cooled to room temperature, about 70 F to 75 F. Cooling will take about 1 to 2 hours.
  • Add a pinch of salt, the vanilla, and 2 to 3 pieces of butter to the chocolate mixture. Beat with an electric mixer with whisk attachment on low speed, adding the butter a few pieces at a time until smooth and well combined. Alternatively, use a stand mixer fitted with the whisk attachment.
  • Increase the speed to high and beat for about 4 to 5 minutes, scraping down the bowl as needed.
  • Frost the cake, garnish with the shaved chocolate, if desired, and served.

CHOCOLATE ANGEL ICE BOX CAKE

Chocolate Angel Ice Box Cake image

recipe given to me by both my mom and a good friend in the 70's. A family favorite that I share only because it should be known by all! Cook time is the minimum time to refrigerate before serving. We like it most when it's made the day before!! (and since i usually serve this for a special occasion, that makes life easier!!)

Provided by nleewebb

Categories     Dessert

Time 4h45m

Yield 1 cake, 12 serving(s)

Number Of Ingredients 8

6 ounces chocolate bars with almonds
6 ounces semi-sweet chocolate chips
3 egg whites, stiffly beaten
3 egg yolks
1 angel food cake
2 cups heavy cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Line 9x3" loaf pan with plastic wrap by placing a 16" strip lengthwise and a 12" strip widthwise.
  • Slice store bought Angel Food Cake into 1" slices. Set aside.
  • Coarsely chop Chocolate Almond Bar(s) (enough to equal 6 ounces). Can use plain bar(s), but we like the texture and flavor of chopped almonds in the finished cake.
  • Place in double boiler with semi sweet chocolate chips, have water below at a strong simmer.
  • Stir chocolate constantly until melted and mixed thoroughly.
  • Using stand mixer, whip egg whites until stiff.
  • In separate bowl, with clean beaters, whip one 1 cup cream, until thick. Set aside. (Save remaining cream until following day.).
  • In separate bowl, beat egg yolks til thick (about 5 minutes).
  • Slowly stream melted chocolate into egg yolks, beating thoroughly. Set aside.
  • Carefully fold stiffly beaten egg whites into Chocolate mixture. Then fold in Whipped Cream.
  • Line bottom of loaf pan with angel food cake slices.Place heaping spoonful of chocolate/cream mixture, fully covering cake slices. Place angel food slices over, layering with chocolate cream mixture, ending with cake slices.
  • Fold plastic wrap over securely.
  • Place in refrigerator for at least 4 hours; overnight is preferred.
  • Prior to serving, whip remaining cream until stiff, adding confectioners' sugar and vanilla.
  • Remove chilled cake from loaf pan. Remove one layer of plastic wrap. Use other layer to place cake on serving plate, removing wrap carefully. Frost with whipped cream. Can decorate with shave chocolate or drizzle with melted chocolate. Slice into 12 servings, about 1/2 thick.

PAUL NEWMAN'S CHOCOLATE - ORANGE ANGEL FOOD CAKE

Paul Newman's Chocolate - Orange Angel Food Cake image

This has to be one of the most incredible desserts I have ever had -- let alone made! Paul Newman was on Oprah several years ago with this recipe of his, and it is absolutely delicious. Preparation time is an estimate, and does not include 15 minutes for bringing the egg whites to room temperature. I hope you enjoy it!

Provided by Pianolady

Categories     Dessert

Time 1h15m

Yield 1 cake

Number Of Ingredients 8

4 ounces orange-flavored dark chocolate
12 large egg whites
1 cup all-purpose flour
1 1/4 cups sugar, divided
1/2 teaspoon salt
1 tablespoon lemon juice
3 teaspoons vanilla extract
1 tablespoon orange rind, grated or freshly chopped

Steps:

  • Preheat the oven to 350°F.
  • Make sure a 10" x 4" tube pan is clean, dry and free of grease.
  • Grate the chocolate bars on the fine holes of a cheese grater, NOT a teeny-holed citrus grater.
  • (Make sure you do find orange-flavored dark chocolate-- it is not very difficult to find, and absolutely essential to the recipe).
  • Separate the eggs, and let the egg whites come to room temperature; about 15 minutes.
  • Sift 1 cup of flour, 1/4 cup of the sugar, and the salt onto a piece of waxed paper.
  • Sift them together a total of three times.
  • Beat the egg whites until frothy.
  • Add the lemon juice and continue beating.
  • Sprinkle the remaining cup of sugar, 1/4 cup at a time, over the egg whites and continue beating at medium speed until the egg whites are glossy and form soft peaks that bend over at the top.
  • Do not overheat, or the egg whites will lose their volume.
  • Sift 1/4 cup of the dry ingredients over the egg whites and fold.
  • Gently stir in the vanilla extract and orange rind.
  • Alternately fold in the chocolate and remaining dry ingredients, working in small batches, until just incorporated.
  • Pour the batter into the tube pan and bake for 45 minutes, until the top is lightly browned.
  • A knife inserted in the center of the cake should come out clean.
  • Remove from the oven and invert the pan.
  • Allow the cake to cool for 30 to 45 minutes.
  • Run a knife around the edges of the pan and tube to loosen the cake.
  • You can serve this as is, or with a little whipped cream, or ice cream-- whatever your heart desires.
  • Enjoy!

HEATH BAR ANGEL FOOD CAKE WITH CHOCOLATE WHIPPED CREAM FROSTING

Heath Bar Angel Food Cake With Chocolate Whipped Cream Frosting image

This was the cake we always had for birthdays when I was growing up. It has a rich chocolate whip cream frosting that has cracked up Heath Bars in it swirled on an Angel Food Cake. Don't skimp and use Cool Whip. The taste is not the same. This may be tons of calories, but after you try it, you will agree it is well worth it! Using a store bought Angel Food Cake makes this cake quick and easy, but if you can bake a good and pretty home made cake, nothing beats the flavor! The cooking time listed is only if you bake your own cake. I'd love to hear if your family loves it like mine does!

Provided by terriers2

Categories     Dessert

Time 50m

Yield 12 serving(s)

Number Of Ingredients 4

1 round angel food cake (Either store bought cake or make your own home made cake recipe.)
1 pint whipping cream, whipped to peaks
hot fudge topping, 16 oz. (to taste)
6 Heath candy bars, cracked up into bite size pieces

Steps:

  • Brush excess crumbs off of the cake before frosting. (If you are in a hurry, using a store bought cake cuts the baking of this cake to 0, thus the cooking time is not necessarily accurate if you do not bake one).
  • Whip the cream until it forms peaks that stand up.
  • FOLD in the hot fudge topping, and cracked Heath Bars.
  • Frost the Angel Food Cake with the above topping, including the inner circle.
  • Refrigerate several hours to let it set.
  • Enjoy!
