These bars are very moist with a rich banana and chocolate flavor. They are an after-school snack that the kids will beg for.

½ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups mashed bananas
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
¼ cup unsweetened cocoa powder

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. Add the egg and the vanilla and beat until well combined. Stir in the mashed banana, set aside.
  • Stir together the flour, baking soda, baking powder, and salt in a separate large bowl, and make a well in the center. Pour the banana mixture into the well and stir just until combined.
  • Remove half of the batter from the bowl. Mix the cocoa powder into the batter remaining in the bowl and stir well. Spread the cocoa batter in the bottom of the prepared pan. Spoon the remaining batter on top and use a knife to swirl the batter into a marbled design.
  • Bake in the preheated oven until the edges are golden, about 25 minutes. Allow to cool before cutting into 24 pieces.

It was a big hit in my house, and I hardly got to eat any myself! one other option is to add 2/3 cup of light brown sugar, firmly packed the original recipe is baked in 10 1/2 in by 15 1/2 in pan, which will be less fluffy

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter (softened)
2/3 cup granulated sugar
1 egg
1 cup mashed banana (2 medium, over-ripe)
6 ounces chocolate chips
6 ounces butterscotch chips (or peanut butter chips) (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Combine flour, baking powder and salt.
  • Cream together butter and sugar until light and fluffy.
  • Beat in egg.
  • Blend in banana, then flour mixture.
  • Stir in chocolate and butterscotch chips.
  • Spread evenly in greased and floured pan (I used 9x9 for fluffier bars).
  • Bake 20-25 minutes.
  • Test with toothpick.
  • Cool for 15 minutes.
  • Cut into bars.
  • Enjoy!

Many are low in fiber and need to be fortified in order to offer any vitamins and minerals at all. Making your own is easy, and is considerably less expensive than what you can buy in a store. Bars like these make excellent snacks and can also be used as a a part of a quick meal on-the-go.

2 large ripe bananas
1 teaspoon ground cinnamon
2 tablespoons unsweetened cocoa powder
3 large raw egg whites
4 ounces nonfat milk
2 1/2 cups old fashioned oats
1/3 cup Splenda granular
1 tablespoon olive oil
60 g chocolate whey protein powder

Steps:

  • Mix ingredients in a large bowl. Pour into non-stick cake pan. Bake at 300o F for 25 minutes or until firm. Let cool slightly before cutting.
  • We have made these into 8 small bars, but you could easily make into 4 larger ones, with double the protein (e.g., 23 g protein per bar).
  • If you don't want the fat replace the oil with unsweetened applesauce. It will taste just as good and still retain the moist but firm texture.

Steps:

  • Combine graham crumbs with butter; press evenly onto parchment paper-lined 13 X 9" (3.5 L) baking pan.
  • Combine condensed milk and bananas; pour evenly over crumb crust.
  • Top with chocolate, coconut and pecans; press down firmly.
  • Bake in preheated 350°F (180°C)* oven 20-25 minutes or until top is lightly browned.
  • Cool thoroughly and cut into bars.
  • Note: 325ºF (160ºC) for glass dish.
