GARLIC CHIVE BUTTERMILK DRESSING

A simple, creamy buttermilk salad dressing is perfect on all kinds of salads and makes a simple wedge salad shine!

1 cup buttermilk
1 tbsp chopped chives
2 tsp chopped dill
1 garlic clove (minced )
salt and pepper (to taste )

Steps:

  • Finely chop the chives and dill and mince the garlic with a microplain or sharp knife.
  • Combine the buttermilk, herbs, garlic, lemon juice salt and pepper in a small mixing bowl. Mix until combined.
  • Taste and adjust seasoning as necessary then serve.

A lemony, creamy chive dressing that is versatile for salads, tacos, vegetables or proteins like chicken or fish.

juice of 1 lemon
1/4 cup mayonnaise
1/4 cup sour cream
1 pinch salt
1 pinch pepper
10 chives

Steps:

  • Combine all ingredients in a food processor and grind for 30 seconds to a minute, enough for chives to be well chopped and incorporated.
  • Serve as a side dipping sauce or over salad, tacos, vegetables or proteins.

1 cup sour cream
4 ounces buttermilk
2 ounces apple cider vinegar
1 bunch fresh chives, cut into small rounds
1 bunch fresh dill, picked and finely chopped
1 tablespoon granulated sugar
Kosher salt and cracked black pepper

Steps:

  • In a small mixing bowl, add the sour cream, buttermilk and apple cider vinegar and whisk until the ingredients are incorporated. Add the chives, dill, sugar, and salt and pepper to taste and stir once more. Cover and store in the refrigerator until ready to use. For best results, do a day or two ahead of time before using.

BLUE CHEESE AND CHIVE DRESSING

1/4 cup fresh flat-leaf parsley leaves
2 ounces crumbled firm blue cheese (1/2 cup)
2 tablespoons finely chopped fresh chives
1/8 teaspoon black pepper

Steps:

  • Blend buttermilk, mayonnaise, lemon juice, Worcestershire sauce, garlic, and salt in a food processor until smooth.
  • Add parsley and pulse until chopped. Add blue cheese and pulse until cheese is incorporated but dressing is still slightly chunky.
  • Transfer to a bowl and stir in chives and pepper.

1 teaspoon sugar

Steps:

  • Combine all ingredients in blender and blend until smooth. Season dressing to taste with salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate.)

2 cups plus 1 tablespoon water
3/4 teaspoon salt
1 cup quick-cooking barley
2 cups corn (from about 4 ears)
1/3 cup olive oil
1/3 cup chopped fresh basil
3 tablespoons chopped fresh chives
1 1/2 tablespoons red-wine vinegar
1/4 teaspoon sugar
1/4 teaspoon black pepper
3 Belgian endives (about 1 lb total), trimmed and sliced crosswise 1/2 inch thick

Steps:

  • Bring 2 cups water with 1/4 teaspoon salt to a boil in a 1 1/2-quart saucepan. Stir in barley, then reduce heat and simmer, covered, until barley is tender, about 10 minutes.
  • While barley simmers, blanch corn in a 1 1/2- to 2 1/2-quart saucepan of boiling water 1 minute, then drain in a large sieve and rinse under cold running water to stop cooking. Drain again and pat dry, then transfer to a large bowl.
  • Remove barley from heat (when tender) and let stand, covered, 5 minutes.
  • While barley stands, pulse oil, basil, chives, vinegar, sugar, pepper, remaining tablespoon water, and remaining 1/2 teaspoon salt in a blender until herbs are finely chopped.
  • Drain barley well in large sieve and add to corn in bowl, then add endives and dressing, tossing to combine.

This is a dressing designed for drizzling, not for tossing: the pink of the shallots and the peppercorns look really lovely on top of a composed salad. But the artful mix of tart, crunchy, salty and sweet elements means you can toss it with any salad when craving a change from the usual vinaigrette. Since it's made the day before serving to give the shallots a chance to soften and mellow, this dressing is great for parties.

1/3 cup finely minced shallots
3 tablespoons white wine vinegar
2 tablespoons finely snipped chives, plus more for garnish
1 tablespoon sugar
1 tablespoon pink peppercorns, lightly crushed (optional)
1/4 cup extra-virgin olive oil, plus more to taste
Salt
1/2 cup raw peeled hazelnuts

Steps:

  • In a jar or bowl, combine shallots, vinegar, chives, sugar, peppercorns, olive oil and 1/2 teaspoon salt. Shake or mix well, cover and refrigerate overnight. Bring to room temperature before using. Shake well, taste, and adjust seasonings with more salt, vinegar, sugar or olive oil. Transfer to a serving bowl.
  • Heat oven to 350 degrees. Spread hazelnuts on a sheet pan lined with parchment paper and toast until golden and fragrant, 5 to 7 minutes. As soon as they come out of the oven, sprinkle lightly with salt. Let cool until you can handle them, then coarsely chop. Gently stir nuts into dressing, sprinkle top of dressing generously with fresh chives and serve immediately, using a spoon to drizzle over salad. Best served fresh, but keeps up to 3 days in refrigerator.

10 1/4 ounces soft tofu, drained
3 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
1 small garlic clove

Steps:

  • Purée first 4 ingredients in blender or processor until smooth. Season to taste with salt and pepper. Transfer mixture to small bowl. Stir in chives.(Can be prepared 4 days ahead. Cover and chill.)
