This family-friendly dinner comes together quickly on a busy weeknight, all in one skillet. As the eggs cook atop the rice, the rice forms an irresistible crispy layer on the bottom. Starting with purchased matchstick-cut carrots cuts down on prep work, and the slender pieces cook much more quickly than chopped carrots.

2 tablespoons toasted sesame oil
1 cup chopped green bell pepper
¾ cup matchstick-cut carrots
1 cup chopped green onions, divided
1 cup cubed ham
⅔ cup frozen green peas, thawed
4 garlic cloves, minced
2 (8.5 ounce) packages Uncle Ben's® Ready Rice® Jasmine Rice
3 tablespoons reduced-sodium soy sauce
1 tablespoon unseasoned rice vinegar
4 large eggs

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Add bell pepper and carrots; saute 2 minutes. Add 3/4 cup green onions, ham, green peas, and garlic; saute 3 minutes.
  • Add unheated rice to skillet. Drizzle with soy sauce and vinegar; cook 3 minutes, stirring occasionally. Make 4 indentations in rice mixture; crack 1 egg into each indentation. Cover pan; cook until egg whites are set and yolks are cooked to desired degree of doneness, 5 to 7 minutes. Uncover and garnish with remaining 1/4 cup green onions.

4 green onions, chopped
1 cup cubed ham
4 eggs, beaten
1 cup frozen mixed peas and carrots
4 cups cold cooked rice
1 cup bean sprouts

3 tablespoons soy sauce

Steps:

  • Heat the vegetable oil in a skillet over medium-high heat. Cook the green onions in the oil for 1 minute. Add the ham, eggs, and the peas and carrot blend to the oil. Cook and stir until the egg is completely cooked. Add the rice and bean sprouts to the egg mixture and stir continually until the rice is heated completely through. Remove from heat; season with salt, pepper, and soy sauce.

2 large eggs, lightly beaten
3 1/2 to 4 tablespoons corn or peanut oil
3 1/2 cups cold cooked rice
2 to 3 ounces honey or sugar-cured ham (yielding 1/2 cup cubed ham)
1/2 cup fresh or frozen peas or baby lima beans
1 to 1 1/4 teaspoons coarse kosher salt
3 tablespoons green and white scallions Peanuts

Steps:

  • Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.
  • Heat the wok or a large skillet and add 2 tablespoon oil to coat. Add the rice and toss briskly to coat and separate each grain, about 2 to 3 minutes. Add the ham and peas. Toss to mix in the ingredients and allow the mixture to heat through, about 30 seconds. Return the eggs to the pan and toss to combine. Season with salt, scallions and peanuts, tossing another 5 to 10 seconds to let the eggs get hot.

2 tablespoons vegetable oil
1 tablespoon minced garlic
1/2 cup chopped scallions
4 cups cold cooked rice
3/4 cup frozen peas
1 large egg, beaten
1 cup diced smoked ham
1/2 teaspoon salt
1/4 teaspoon ground white pepper

Steps:

  • 1. Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 tablespoon of the oil, add the garlic and scallions, and stir-fry 10 seconds. Add the rice and the peas and stir-fry 2 to 3 minutes, breaking up the rice with a metal spatula.
  • 2. Make a well in the rice, exposing the bottom of the wok. Add the remaining 1 tablespoon oil and the egg. Immediately stir-fry to incorporate the egg throughout the rice, 1 to 2 minutes or until the egg is almost cooked through. Add the ham, salt, and pepper and stir-fry 1 to 2 minutes until heated through.

1 thick slice ham (8 ounces), cut into 1/4-by-1-inch strips
1 bunch scallions, white and green parts separated and cut into 1-inch lengths
2 garlic cloves, minced
2 teaspoons finely grated peeled fresh ginger
Coarse salt and ground pepper
1 1/4 cups cooked white rice, rinsed and drained
2 tablespoons rice vinegar
2 tablespoons soy sauce
4 large eggs

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Add ham, scallion whites, garlic, and ginger; season with salt and pepper. Cook, stirring frequently, until beginning to brown, 2 to 4 minutes.
  • Add rice, scallion greens, vinegar, and soy sauce. Cook, stirring, until heated through, 2 to 4 minutes. Divide fried rice among four serving bowls.
  • Wipe out skillet with a paper towel. Heat 1 tablespoon oil over medium. Gently crack eggs into skillet; season with salt, and cook until whites are set, 2 to 4 minutes. Top each bowl of rice with a fried egg.

An authentic Chinese fried rice that uses leftover ham. Shrimp or other ingredients can also be added. It can be prepared with or without soy sauce.

cold, cooked long grain rice
vegetable oil
1 -2 beaten egg
raw shrimp, cut in pieces (optional)
leftover ham, diced (or any leftover meat, poultry or seafood)
dry sherry
light soy sauce (optional)
frozen peas, defrosted
sliced yellow onions or Spanish onion
salt
white pepper (optional)

Steps:

  • The rice should be smoothed out to get rid of any lumps.
  • Day old, cold rice works best.
  • If using eggs (recommended), lightly beat them with a pinch of salt.
  • Heat a little oil in your wok, pour eggs in and tilt the wok back and forth to spread evenly.
  • Lift the edges to let the uncooked portion come in contact with the hot pan so it cooks evenly.
  • After the eggs set up a little, lightly scramble them so you have medium small pieces.
  • Remove eggs to a bowl.
  • Wipe out wok.
  • If adding raw shrimp, heat a little more oil and stir fry them to just cook.
  • Remove to a bowl.
  • Wipe out wok again.
  • Heat a little more oil.
  • Add the onions& stir fry until they start to darken.
  • Stir in the rice, breaking up any lumps you missed.
  • Drizzle a little dry sherry down the sides of the wok.
  • (The surface of the wok should be slick with oil. If too dry looking, drizzle a little more oil down the sides of the wok).
  • If you want the rice to look brown, drizzle in a little light soy sauce.
  • Stir in all of the other ingredients and season to taste with salt and white pepper.
  • Continue to stir and cook until heated through.

6 slices bacon
4 eggs, beaten
1 large yellow onion, chopped

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid is absorbed, 20 to 25 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to a paper-towel lined plate to drain and crumble into bite-size pieces; reserve rendered bacon fat in skillet.
  • Cook and stir eggs in the same skillet over medium heat until slightly set, 1 to 3 minutes. Stir yellow onion, peas, green onion, and 1 1/2 teaspoons soy sauce into eggs; cook and stir until yellow onion is translucent, about 5 minutes more. Reduce heat to low; stir rice, crumbled bacon, and remaining soy sauce into egg mixture until well-combined and heated through, 1 to 3 minutes.
