Steps:
- Preheat the oven to 450 degrees F.
- Add the potatoes, sliced onion, olive oil, herbes and salt to a rimmed baking sheet. Toss well to coat evenly. If cut, arrange the potatoes so they are cut-side down on the baking sheet. Place in the lower third of the oven and bake until golden brown and the potatoes are tender, 25 to 35 minutes. Serve warm.

Steps:
- Combine the butter, garlic and herbes de Provence in a small saucepan. Cook over medium-low heat until the butter melts. Remove the saucepan from the heat and let stand while making the popcorn.
- Combine the oil and popcorn in a heavy large pot. Cover and cook over medium-high heat until almost all the kernels pop. Transfer the popcorn to a large bowl.
- Remove the garlic cloves from the butter and discard, if desired.
- Add the salt, cheese and butter mixture to the popcorn. Toss until the popcorn is coated. Serve immediately.

- Steam or boil the sweet potatoes until it is easy to slide a thin knife in and out, about 15 minutes.
- If boiling, drain the potatoes over a colander. If steaming, remove the potatoes and drain the water from the pot.
- Return the potatoes to the pot set over medium-low heat. Mash the potatoes for 20-30 seconds – just until excess liquid has cooked off. (This will remove any residual water in the pot and on the potatoes.) Remove the pot from the heat and mash the potatoes until a chunky consistency is achieved.
