¼ cup prepared Dijon-style mustard
½ cup honey

Steps:

  • In a medium bowl, blend the mayonnaise, Dijon-style mustard and honey. Chill in the refrigerator at least 2 hours before serving.

½ cup cider vinegar
3 eggs, beaten
5 tablespoons white sugar
¼ cup dry mustard powder (such as Coleman's®)
1 dash salt

Steps:

  • Beat cream, vinegar, eggs, sugar, mustard powder, and salt together in a large bowl using an electric mixer until smooth and creamy.
  • Bring a saucepan of water to a boil. Place the bowl over the boiling water and cook the sauce, stirring constantly, until thick, about 20 minutes.

1 tablespoon all-purpose flour
¾ cup white sugar
1 tablespoon mustard powder
1 cup milk
2 egg yolks
½ cup tarragon vinegar

Steps:

  • In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. Stir in the vinegar. Whisking constantly, bring the mixture to a boil over medium heat, reduce heat to low, and simmer until thickened.

2 tablespoons dry English mustard
6 tablespoons cider vinegar
2 large egg yolks
1/3 cup sugar
1 teaspoon kosher salt
1 1/2 cups half-and-half

Steps:

  • In a small bowl, stir together the mustard and 2 tablespoons of the vinegar into a smooth paste. Cover with plastic wrap and set aside at room temperature to mellow the flavor of the mustard, for at least 6 hours or overnight.
  • In a medium saucepan, whisk together the yolks, sugar, and salt with the reserved mustard paste. Whisk in the half-and-half. Cook the sauce over medium heat, stirring constantly with a wooden spoon until thickened, about 10 minutes. Do not let the mixture boil at any time. Stir in the remaining 4 tablespoons vinegar and continue to cook for another 10 minutes, stirring, until thickened and creamy. Pour sauce into a bowl. Set the bowl of sauce in a bowl of ice water. Stir the sauce to cool. Serve. Store covered in the refrigerator for up to 2 days. Serve with baked ham, pork or on sandwiches.

CREAMY DIJON MUSTARD SAUCE

The elegantly sharp flavors of Dijon mustard come together with chicken stock, heavy cream, and Worcestershire to form a velvety pan sauce perfect with seared meats, seafood, and poultry! This sauce is perfect for a quick weeknight meal, family gathering, or holiday event.

2 tablespoons unsalted butter (omit if using pan drippings )
1½ cups chicken stock
1 tablespoon Dijon mustard
1 cup heavy cream
¼ teaspoon Worcestershire sauce
sprinkle Fresh thyme (garnish, optional )

Steps:

  • In a medium-sized skillet, melt 2 tablespoons of butter (omit this step if using pan drippings - see notes). Once the butter is melted and foaming, whisk in chicken stock and heavy cream.
  • Add Dijon mustard and Worcestershire sauce and whisk through to combine. Bring the sauce to a boil, then reduce the heat to medium and simmer, uncovered, for 15 minutes or until the sauce has thickened slightly.
  • If serving with a main protein, such as pork chops, you can add them back to the pan to cook in the sauce.
  • Garnish with fresh thyme and serve immediately.

1 1/2 cups yellow mustard
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
2 teaspoons hot sauce
2 teaspoons Worcestershire sauce
1 teaspoon vanilla extract
1 teaspoon freshly cracked black pepper

Steps:

  • Add the mustard, vinegar, brown sugar, hot sauce, Worcestershire, vanilla and pepper to a small pot and bring to a simmer while constantly whisking. Simmer lightly until the sugar is dissolved, about 5 minutes.

A mustard sauce recipe from a very old New Zealand 'Edmonds' cookbook. This is the original recipe from the book. I have been making this for many years. Use either the liquid in which the corned beef has been cooked or use water. In NZ we use malt vinegar in this recipe. Adjust quantity of ingredients to suit your own taste. It is more of a sweet/sour mustard sauce. Also good cold on corned beef sandwiches.

2 shallots , finely chopped
150ml white wine
1 bay leaf
2 tsp light soft brown sugar
2 tbsp English mustard
1 tbsp wholegrain mustard
200ml crème fraîche

Steps:

  • Put the shallots, wine, bay leaf and sugar in a pan and set over a medium heat. Simmer until the wine has reduced by half and the shallots have softened. Stir in the 2 mustards and crème fraîche. Serve warm or cold.
