ASIAN LETTUCE WRAPS
Delicious and bursting with flavor, Asian lettuce wraps are a great idea for entertaining or a family style meal. Each person can build their own fresh, delicious wrap. Just be sure to have plates or napkins available since the mixture can sometimes drip a little. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito and enjoy!

Steps:
- Heat a large frying pan and add a little oil. Mix the ground beef and pork together. Season with salt and pepper and mix well to ensure the seasoning is evenly distributed. Fry the meat in the hot pan for five to seven minutes until crisp and brown and broken down to a fine consistency. Drain the crisped meat in a sieve - this will help it stay crispy. Set aside. Wipe out the pan and add a tablespoon of toasted sesame oil. Add the garlic, ginger and chilli. Fry with a pinch of salt and the sugar for two minutes. Add the drained meat and stir to mix. Add the fish sauce and heat through. Stir in the lime zest and juice, then add the green onions, stirring for thirty seconds. Turn off the heat. Mix all the dressing ingredients together and adjust to taste. To serve, spoon some of the meat mixture into the lettuce leaves, drizzle with a little dressing and serve.
CHINESE SPICY BEEF LETTUCE WRAPS
From OregonLive.com. I loved the beef lettuce wraps from a restaurant in Montauk, NY called East by Northeast. This was the closest I have found to recreating it with a few minor adjustments from me.

- Place 1 lb. boneless beef short ribs on a plate or small rimmed baking sheet and freeze uncovered for 15 minutes. This makes it easier to slice.
- Finely grate 1 red Fresno chile, 1 2" piece ginger, and 4 garlic cloves into a medium bowl. (If you're sensitive to spice, maybe start with a half of a chile—you never know how hot they're going to be!) Cut 1 lime in half and squeeze juice into bowl. Cut remaining 2 limes into wedges and reserve for serving.
- Add 1 Tbsp. light brown sugar, 2 tsp. toasted sesame oil, and 2 tsp. salt to bowl with chile mixture and stir with a fork to combine.
