1 cup corn
1 yellow onion (, diced)
1 green bell pepper (, diced)
1 jalapeno (, deseeded and deveined and minced)
1 bunch green onions (, diced)
1 pint grape tomatoes (, quartered)
15 ounces black eyed peas (, drained and rinsed)
15 ounces black beans (, drained and rinsed)
1/4 cup cilantro (, chopped)
1/3 cup olive oil
1/4 cup lime juice
1 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
2 teaspoons ground cumin
2 cloves garlic

Steps:

  • Add the corn, onions, bell peppers, jalapeno, green onions, grape tomatoes, black eyed peas, black beans and cilantro together in a large bowl.
  • To a food processor add the olive oil, lime juice, salt, pepper, cumin and garlic and process until the garlic is smooth then toss it with the ingredients in the bowl and let sit for at least 1 hour before serving.

2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans white corn, rinsed and drained
1 (4 ounce) can chopped green chiles, undrained
1 jalapeno chile pepper, seeded and finely chopped
1 red bell pepper - cored, seeded and finely chopped
1 green bell pepper - cored, seeded and finely chopped
1 small red onion, finely chopped
1 bunch cilantro leaves, finely chopped
½ cup rice vinegar
½ cup olive oil
⅓ cup white sugar
½ teaspoon garlic powder

Steps:

  • Mix the black beans, pinto beans, white corn, green chiles, jalapeno pepper, red and green bell peppers, red onion, and cilantro together in a large bowl.
  • To make the dressing, stir the rice vinegar, olive oil, sugar, and garlic powder together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over bean mixture, and toss to mix evenly.

15 ounces sweet corn, rinsed and drained
1/2 red bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 a red onion, diced
2 cups grape tomatoes, halved
2 ripe avocados, diced
1/3 cup cilantro, finely chopped
1/4 cup olive oil
1/4 cup lime juice, freshly squeezed
2 tablespoons cilantro (freshly chopped)
2 garlic cloves, crushed
1 teaspoon brown sugar
3/4 teaspoon red chili pepper flakes, adjust to your preference of spice
1/2 teaspoon ground cumin
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Cut up and mix ingredients together.
  • Put over chopped greens, or eat with chips as a salsa.

1 medium onion, chopped
1 each medium sweet yellow, red and green pepper, chopped
2 tablespoons olive oil
3 garlic cloves, minced
1 pound ground chicken
1 tablespoon all-purpose flour
1 tablespoon baking cocoa
1 tablespoon ground cumin
1 tablespoon chili powder
2 teaspoons ground coriander
1/2 teaspoon salt
1/2 teaspoon garlic pepper blend
1/4 teaspoon pepper
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1/4 cup lime juice
1 teaspoon grated lime zest
1 can (15 ounces) cannellini beans, rinsed and drained
2 flour tortillas (8 inches), cut into 1/4-inch strips
6 tablespoons reduced-fat sour cream

Steps:

  • In a large saucepan, saute onion and peppers in oil for 7-8 minutes or until crisp-tender. Add garlic; cook 1 minute longer. Add chicken; cook and stir over medium heat for 8-9 minutes or until no longer pink. , Stir in the flour, cocoa and seasonings. Add the tomatoes, lime juice and lime zest. Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened, stirring frequently. Stir in beans; heat through. , Meanwhile, place tortilla strips on a baking sheet coated with cooking spray. Bake at 400° for 8-10 minutes or until crisp. Serve chili with sour cream and tortilla strips.

The second best thing I have gotten from Texas! Actually, this salsa recipe comes from our bishop's wife. She makes it for every church activity and it is always devoured! Last night I told her I couldn't leave Rexburg without her salsa recipe so here it is. The recipe makes enough to feed our entire church, so you could cut the recipe in half or thirds.

2 bunches green onions
1 bunch cilantro
1 yellow pepper
1 orange bell pepper

1 (24 ounce) bottle Italian salad dressing (drain off oil)
3 (14 ounce) cans white shoepeg corn (no substitutes)
2 tablespoons white vinegar
2 tablespoons cavendars all purpose Greek seasoning
2 tablespoons sugar
1 tablespoon lime juice

Steps:

  • Chop tomatoes, peppers, and olives into very small pieces.
  • Combine with all other ingredients in a large bowl.

This is a great version of Texas Caviar that I got years ago from my dearest friend Sara (a Tulsa native)...it's got no oils or dressing, so you can enjoy it guilt-free. I make it for my own family all summer long, and we bring it to bbq's and parties all the time and ALWAYS have folks ask for the recipe. YUM!

1 yellow bell pepper (diced)
1 red bell pepper (diced)
1 orange bell pepper (diced)
2 (14 ounce) cans black beans (drained and rinsed)
2 cups fresh tomatoes (diced)
2 (10 ounce) cans Ro-Tel tomatoes (or mexican stewed, chop these and add the juice)
2 garlic cloves (chopped)
1 (15 1/4 ounce) can corn (drained)
1 (15 1/4 ounce) can white shoepeg corn (drained)
fresh cilantro (I chop a good sized handful in the food processor and throw it in)
1 dash cayenne pepper
1 dash garlic salt, to taste (I use about 1/2 teaspoon)
salt and pepper
1 hot pepper (chopped, I almost never use it because then my kids won't eat it, but if you like it hot, go for it!) (optional)

Steps:

  • Combine all ingredients.
  • Refridgerate an hour or so to let the flavors meld.
  • Serve with tortilla chips. The recipe makes a LOT so have a good-sized container on hand to keep it in (or 1/2 the recipe), but if you bring it to a party to serve in a chip and dip tray it will go fast so it's good to have plenty on hand to replenish -- .

2 16-ounce cans black-eyed peas
4 scallions, green parts only, minced
2 to 3 jalapeños, seeded and minced
1/4 cup chopped fresh cilantro
1/2 cup corn oil
1/4 cup fresh lime juice
1/4 cup apple cider vinegar
Salt and freshly ground black pepper to taste
Round tortilla chips

Steps:

  • Drain the peas well, rinse under running water and drain again. Transfer to a bowl. Add the scallions, jalapeños and cilantro and toss to mix. Whisk together the oil, lime juice and vinegar and pour over the beans. Toss to coat. Season with salt and pepper to taste.
  • Transfer to a large glass jar or airtight plastic container. Marinate the mixture for three to five days, turning the jar occasionally to mix the ingredients.
  • To serve, spoon the peas into a shallow glass bowl. Serve with chips for scooping.

Cooking time is refrigeration time. The recipe comes from a friend of the family. It needs 24 hours to marinate.

1/2 cup vegetable oil
1 cup Splenda sugar substitute
1 teaspoon salt

1 (15 ounce) can black beans
1 (15 ounce) can garbanzo beans
1 (15 ounce) can black-eyed peas
2 (11 ounce) cans white shoepeg corn
2 (4 ounce) cans diced green chilies
2 ounces finely chopped pimentos
1 cup finely chopped green bell pepper
1 cup finely chopped celery
1 small onion, finely chopped

Steps:

  • Combine vinegar, water, oil, sugar, salt and pepper in saucepan. Bring to a boil, stirring occasionally. Cool to room temperature.
  • Drain beans, corn, peas, green chilies, and pimento. Combine with green peppers, celery, and onion in a bowl. Add marinade and mix well.
  • Chill covered for 24 hours.
  • Serve with tortilla chips.

1 medium ripe avocado, peeled and cubed
