- In a large skillet, cook sausage over medium heat until no longer pink; drain. , Transfer to a 3-qt. slow cooker. Add the next 10 ingredients; stir well. Cover and cook on low for 7 hours or until rice is tender. Stir in cheese during the last 10 minutes of cooking time.

Steps:
- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes. Set aside.
- At the same time, heat a large pot over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Add diced tomatoes, tomato sauce, taco seasoning, chile peppers, chili powder, garlic powder, and cayenne pepper; bring to a boil. Reduce heat and let simmer for 20 minutes.
- Add beans and corn, and simmer for 10 minutes longer. Add cooked rice and serve.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat butter in a large skillet over medium heat. Add onion and cook and stir until tender, 5 to 7 minutes. Add shredded chicken and cook until heated through, 3 to 5 minutes.
- Pour chicken mixture into a casserole dish. Add corn, beans, tomatoes, rice, chiles, cumin, garlic powder, salt and pepper. Mix all ingredients together in the pan and spread to cover the dish. Spread salsa evenly over the top.
- Bake in the preheated oven until bubbly, about 45 minutes. Serve in bowls.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
- Prepare the instant long grain and wild rice mix according to package directions.
- Spread 1/2 the cooked rice mix over the bottom of the prepared baking dish. In a bowl, mix the sour cream and green chiles. Spread 1/2 the sour cream mixture over rice, and top with 1/2 the cheese. Repeat the layers.
- Bake 25 minutes in the preheated oven, or until bubbly.

- Cook and stir ground beef in a nonstick skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Combine cooked beef, tomato sauce, corn, water, onion, chili powder, and dry mustard in a large saucepan over medium-high heat. Cover and bring to a boil.
- Stir in rice and reduce heat to low. Cover and simmer for 5 minutes.
- While rice is cooking, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.

- Preheat oven to 350°.
- Mix sour cream, green onions and chilies.
- Season rice with salt and pepper.
- Spray a 1 1/2 quart casserole with cooking spray and cover with half of the rice.
- Add a layer of half of the sour cream mixture and cover with half of the grated cheese.
- Repeat layers starting with rice and ending with cheese.
- Bake in a 350° oven until bubbly and the top is lightly browned, about 30 minutes.
- This can be assembled ahead and baked when ready.
- Increase baking time if refrigerated, covering the top with foil if it browns too quickly.
