Ancient Egyptians, using available cooking oil and forgetting the Tabasco sauce and butter spray, might have enjoyed a very similar fried treat. Before serving you may use a spray butter topping on them if you like.

Number Of Ingredients 12

2 (15 -15 1/2 ounce) cans garbanzo beans, drained and rinsed
2 teaspoons minced garlic
3 dashes Tabasco sauce (optional)
1 1/2 teaspoons sea salt
1/2 tablespoon dried parsley
1/4 teaspoon ground cumin
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1 egg white
2 egg whites
sunflower oil (for deep frying)
canola oil (for deep frying)

Steps:

  • Put all the ingredients except the oils in a food processor and pulse until just combined; do not over mix.
  • Remove the blade and, using a measuring spoon, scoop out level tablespoons of the mixture onto a plate covered with wax paper or coated with butter spray until you have approximately 30 little balls. Can be prepared up until this point and refrigerated until dinner time.
  • Warm the combination of sunflower and canola oil in a deep fryer (recommended) or in a heavy skillet. One at a time, drop 10 of the chick pea balls into the oil and fry for about 1-2 minutes, until they're golden brown and nice and crisp on the outside.
  • Remove with a slotted spoon onto a paper towel lined plate and keep warm in a 250 degree oven while you repeat the process two more times. Spray the fritters with butter topping and serve.

1 can (15.5 ounces) rinsed and drained chickpeas
1/2 cup sliced scallions
1/3 cup chopped cilantro
1/2 cup flour
1 large egg
1 teaspoon coarse salt
Olive oil
Salad and lemon wedges, for serving

Steps:

  • In a food processor, pulse together chickpeas, scallions, and cilantro until a coarse paste forms. Pulse in flour, egg, and salt. Heat 1/4 inch olive oil in a large skillet over medium high. Add chickpea mixture to skillet, 1/4 cup at a time, pressing to form patties. Cook until golden brown on both sides, turning once, 4 to 5 minutes. Serve with salad and lemon wedges.

Number Of Ingredients 17

1 red pepper, diced
2 shallots, diced
2 carrots, grated (smallest function)
2 cloves of garlic, grated
peel of 1 lemon, grated
1 thumb size piece of ginger, peeled and grated
1 x 400g can of chickpeas, drained
1tsp garam masala
1tsp cumin
1tsp ground coriander
3tbsp plain flour (or any gluten-free alternative)
1 egg
30g fresh coriander, chopped
vegetable oil, for frying
half a cucumber, grated
1 clove of garlic, grated
approx 150g Greek yoghurt (or a dairy-free alternative)

Steps:

  • Combine the red pepper, shallots, garlic, lemon peel and ginger in a large bowl. Squeeze the carrots to remove the excess juice then add to the bowl.
  • Place the chickpeas in a food processor and whizz for a few seconds until broken down and crumbly. You don't want a puree so don't blend too far. If you don't have a food processor just crush with chickpeas with the back of a fork.
  • Add the chickpeas to the bowl along with the garam masala, cumin and ground coriander.
  • Add the egg and mix well then sieve over the flour and mix again.
  • Shape into small discs and fry for around 3 minutes a side in a little olive oil.
  • When cooked remove and place on kitchen paper to cool.
  • To make the tzatziki combine the cucumber, garlic and yoghurt in a bowl. Top the fritters with the chopped coriander.

½ cup plain low-fat Greek yogurt
¼ cup crumbled feta cheese
1 tablespoon lemon juice
¼ teaspoon honey
1 tablespoon chopped fresh dill, divided, plus more for garnish
1 tablespoon thinly sliced chives, divided, plus more for garnish
2 teaspoons finely chopped garlic, divided
1 (15 ounce) can unsalted chickpeas, rinsed
⅓ cup chickpea flour
1 tablespoon tahini
½ teaspoon ground cumin
½ teaspoon ground coriander
1 large egg, lightly beaten
½ teaspoon salt
3 tablespoons canola oil, divided

Steps:

  • Combine yogurt, feta, lemon juice, honey and 1 teaspoon each dill, chives and garlic in a medium bowl; stir until blended. Refrigerate until ready to serve.
  • Place chickpeas in a large bowl and mash with the back of a fork or a potato masher until almost smooth but some chunks remain. Add chickpea flour, tahini, cumin, coriander, egg, salt and the remaining 2 teaspoons each dill and chives and 1 teaspoon garlic; stir until combined.
  • Heat 1 1/2 tablespoons oil in a large nonstick skillet over medium-high heat. Working with half of the chickpea mixture at a time, scoop even tablespoonfuls into the hot skillet; use the back of a spoon dipped in water to press down slightly to flatten into about 2-inch-diameter cakes. Cook, turning once, until golden brown on both sides, about 1 to 2 minutes per side. Transfer to a paper-towel-lined plate. Repeat with the remaining oil and chickpea mixture. Serve with the yogurt-feta dip; garnish with dill and chives, if desired.

1 cup plain yogurt
2 tablespoons sugar
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1 large egg
1/2 teaspoon baking soda
1/2 cup chopped fresh cilantro
2 green onions, thinly sliced
Oil for deep-fat frying

Steps:

  • In a small bowl, combine the first 6 ingredients; refrigerate until serving., Place the chickpeas and seasonings in a food processor; process until finely ground. Add egg and baking soda; pulse until blended. Transfer to a bowl; stir in cilantro and green onions., In a cast-iron Dutch oven or an electric skillet, heat oil to 375°. Shape rounded tablespoons of bean mixture into balls. Drop a few at a time into hot oil. Fry until golden brown, 2-3 minutes, turning frequently. Drain on paper towels. Serve with sauce.

7 tablespoons extra-virgin olive oil
1 onion, finely diced
2 tablespoons sesame seeds
1 tablespoon ground cumin
Pinch of cayenne pepper
1 can (15 1/2 ounces) chickpeas, rinsed and drained
2 tablespoons fresh lemon juice
1 large egg white
1 teaspoon coarse salt, plus more for seasoning
5 tablespoons all-purpose flour
Tzatziki, for serving (opposite)

Steps:

  • In a medium sauté pan, heat 3 tablespoons of the oil over medium heat. Add the onion; cook, stirring, until soft and translucent, about 3 minutes. Add the sesame seeds, cumin, and cayenne; cook, stirring, until the sesame seeds have begun to brown lightly and the spices are very fragrant, about 2 minutes; set aside.
  • In a food processor, combine the chickpeas, lemon juice, egg white, salt, and 1 tablespoon of the oil. Pulse several times to form a semismooth paste. Transfer to a large bowl; stir in the onion mixture. Fold in the flour until just combined. Using your hands, form the batter into 1 1/4-inch patties, each about 1/3 inch thick.
  • In a 12-inch sauté pan, heat 2 tablespoons of the oil over medium-low heat. Cook half the patties, without flattening, until golden brown, about 3 minutes per side. Transfer the patties to a paper-towel-lined plate, and season with salt. Repeat with remaining patties and tablespoon oil. Serve immediately with tzatziki.
