Chicken with Herbed Pea Puree and Spinach image

This pan-roasted chicken thigh dinner is a winning combo of warm, crispy skin, cool baby spinach, and a creamy pea puree (the puree also makes a great dip for vegetables). Keep an extra batch in the fridge for midday snacking.

Time 35m

Number Of Ingredients 8

1 package (10 ounces) frozen peas
Kosher salt and freshly ground pepper
1 teaspoon finely grated lemon zest and 4 teaspoons fresh juice, plus wedges for serving
3 tablespoons freshly grated Pecorino Romano
1/4 cup extra-virgin olive oil
1/2 cup coarsely chopped cilantro
5 ounces baby spinach (4 packed cups)
4 bone-in, skin-on chicken thighs (1 1/4 pounds)

Steps:

  • Preheat oven to 450 degrees. Cook peas in a small pot of boiling salted water 1 minute. Drain; transfer to a food processor. Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 small head cauliflower (preferably purple), trimmed and cut into small florets
1 red onion, cut into 8 wedges
2 tablespoons extra-virgin olive oil
8 small skin-on, bone-in chicken thighs (5 to 6 ounces each)
1 1/2 teaspoons ground coriander
1 teaspoon sweet paprika
3 cloves garlic (1 grated, 2 thinly sliced)
Grated zest of 2 lemons, plus lemon wedges for serving
Kosher salt and freshly ground pepper
1 10-ounce package frozen peas
2 tablespoons unsalted butter
1/2 cup loosely packed fresh mint

Steps:

  • Preheat the oven to 450 degrees F. Line a rimmed baking sheet with foil. Toss the cauliflower and red onion with 1 tablespoon olive oil in a large bowl; arrange on one side of the prepared pan. Toss the chicken with the remaining 1 tablespoon olive oil, the coriander, paprika, grated garlic and half of the lemon zest in the same bowl; arrange skin-side up on the other side of the pan. Season the vegetables and chicken with salt and pepper. Roast until the vegetables are browned and the chicken is crisp and cooked through, about 30 minutes.

Microwave until the peas are warmed through, about 5 minutes. Transfer to a food processor and add the butter, mint and the remaining lemon zest; puree, adding more water if needed to loosen. Season with salt and pepper.
  • Serve the chicken with the roasted vegetables, pea puree and lemon wedges.

MUSTARD HERB CHICKEN CUTLETS AND GARLIC SPINACH

Mustard Herb Chicken Cutlets and Garlic Spinach image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 16

Four 6-ounce boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
4 tablespoons salted butter
1 tablespoon olive oil
3 cloves garlic, minced
1 cup dry white wine
2 heaping tablespoons grainy mustard
1 cup low-sodium chicken broth
1/2 cup chopped mixed fresh herbs, such as dill, parsley or chives, plus more for garnish
Garlic Spinach, recipe follows
2 tablespoons olive oil
2 garlic cloves, minced
Two 10-ounce packages baby spinach leaves
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Juice of 1/2 lemon

Steps:

  • Slice the chicken breasts in half horizontally so that you have 8 thinner chicken breast cutlets. Sprinkle both sides of each cutlet with salt and pepper.
  • Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-high heat until hot. Add half the chicken cutlets and cook until golden brown and completely cooked through, 3 to 4 minutes per side. Remove the cutlets to a plate and set aside. Cook the remaining cutlets in the same manner.
  • Reduce the heat to medium. Add the garlic to the skillet and stir until golden brown, about 1 minute. Carefully pour in the wine and allow it to simmer and reduce by half, 1 to 2 more minutes.
  • Stir in the mustard, followed by the chicken broth. Add the remaining 2 tablespoons butter and stir until the sauce begins to thicken, 1 to 2 minutes. Season the pan sauce with salt and pepper. Add the herbs and stir.
  • Return the chicken cutlets to the skillet, turning them in the sauce to coat and to rewarm them. Serve on top of the Garlic Spinach. Spoon more sauce from the skillet over them and garnish each plate with more fresh herbs.
  • Heat the olive oil in a large, high-sided skillet over medium-high heat until hot, then add the garlic and give it a quick stir. Add the spinach and let it cook down, turning often to bring the wilted pieces to the top, until softened, a minute or two.
  • Cook until completely wilted, a minute or two more, then season the spinach with salt and pepper, as well as the lemon juice. Toss to evenly combine everything.

BROILED SKILLET CHICKEN WITH LEEKS, POTATOES, AND SPINACH

Broiled Skillet Chicken with Leeks, Potatoes, and Spinach image

Broiling chicken in a skillet atop leeks and potatoes infuses the vegetables with deep flavor as the chicken fat renders. The quick-cooking method and proximity of the skillet to the broiler also ensures a juicy, flavorful bird with ultra-crisp skin for a tasty dinner.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Thighs

Time 45m

Number Of Ingredients 9

2 leeks, white and light-green parts only, cut into 1/2-inch rounds, washed well
1 pound baby yellow potatoes, cut into 1/4-inch rounds
1 cup low-sodium chicken broth
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
8 bone-in, skin-on chicken thighs (2 1/2 pounds total)
2 teaspoons coriander seeds, toasted and crushed
1 lemon, cut into 6 wedges
1 bunch spinach, thick stems removed (about 6 cups)

Steps:

  • Preheat broiler with rack 8 inches from heating element. Combine leeks, potatoes, broth, and 2 tablespoons oil in a large ovenproof skillet. Season with salt and pepper. Broil, stirring once halfway through, until potatoes are crisp-tender, 8 to 10 minutes.
  • Meanwhile, rub chicken with remaining 1 tablespoon oil. Season with coriander, salt, and pepper, then place, skin-side down, atop leeks and potatoes. Broil 8 minutes. Flip chicken; scatter lemon wedges around it. Broil until a thermometer inserted into thickest parts of thighs (avoiding bones) registers 165 degrees, 10 to 12 minutes more. Transfer chicken to serving plates. Stir spinach into leek-potato mixture until wilted. Serve chicken with vegetables, lemon wedges, and pan juices.

BAKED CHICKEN WITH PEACHES

Baked Chicken with Peaches image

Rushed? Need an elegant main dish to serve for an important occasion, that doesn't take a lot of preparation or time? This is it. This dish is not only easy and quick, it serves up beautifully as well. My family loves it. Tip: For a delicious sauce to serve over the chicken and peaches, mix 1/2 tablespoon cornstarch with 1/2 cup cold water and pour mixture into cooking juices. This mixture will thicken and become a sauce to pour over the chicken and peaches.
