Chicken Seekh Kabab is a tender, juicy, delicate Chicken Kabab made with subtly flavored chicken keema or chicken mince. These chicken skewers make a fabulous party appetizers & gets ready super fast. Make them easily on a griddle or tawa with just drizzles of oil.

900 gms Chicken mince or chicken keema (2 pounds)
3 medium onions grated & squeezed
1 cup roughly chopped cilantro (Dhaniya patta)
3/4 cup bread crumbs
1 tbsp Ginger Garlic Paste (heaped)
1/2 tbsp Cumin Powder
1/2 tbsp Coriander Powder
1/2 tbsp Garam Masala Powder
1 small egg
1 tbsp lemon juice OPTIONAL (I did not use any)
2 tbsp Extra Virgin Olive Oil (or any oil)
Salt (to taste)

Steps:

  • Grate the onions first & squeeze out the juice completely. You may do it easily with the help of a sieve or sifter & a spoon. Place the grated onion on the sieve and press with the spoon to drain out the juice.
  • Add all the ingredients in a dry bowl and mix gently working with the help of your fingers. DO NOT knead or over mix.
  • Take one skewer at a time from the water you soaked them in. And skewer the meat all the way up to the tip of the skewer stopping at about 1"-2" from the tip. Refer the pic.
  • Gently press the meat with the help of your fingers and give it a cylindrical shape all around the skewer. Set aside. Repeat this step until you are done skewering the meat in the skewers.
  • Brush oil on a griddle or tawa and set it over medium heat. Place the skewered meat along with the skewers on the tawa or griddle and cook until golden on all sides. Rotate them from time to time so that all the sides get cooked properly.
  • Serve hot. Enjoy!

In this recipe, we have cooked the seekh kebab over the tawa so you can make it easily in your kitchen too when you don't have a tandoor or a BBQ grill. Serve the Seekh Kebabs along with Pita Breads or rotis with a combination of Mint Chutney, Yogurt Dip, Pickled Onions to make it more exciting. 500 grams Chicken breasts , chopped
1 Onion , chopped
6 cloves Garlic
1 inch Ginger
3 Green Chillies , chopped
2 teaspoon Garam masala powder
1 teaspoon Coriander (Dhania) Powder
1 teaspoon Kashmiri Red Chilli Powder
1/2 teaspoon Fennel seeds (Saunf) , coarsely ground
1 inch Cinnamon Stick (Dalchini)
1/4 teaspoon Black pepper powder
1 teaspoon Lemon juice
1/4 cup Gram flour (besan)
Salt , to taste
1 Coal , piece
Ghee , as required

Steps:

  • To begin making the Chicken Seekh Kebab Recipe, first add the onions, garlic, ginger and chilli into the small jar of the grinder and blend to make a smooth paste.
  • Into the food processor; add the chopped chicken breasts, 2 tablespoon of the ginger garlic, onion and chilli paste, garam masala, coriander powder, fennel powder, chilli powder, black pepper powder, lemon juice, gram flour and salt to taste.
  • Pulse to make a coarse mixture.
  • Transfer the Chicken Seekh Kebab mixture into a bowl. Cover and refrigerate the mixture for at least 2 hours or overnight.
  • Once done we will coal smoke the sheek kebab mixture. Place a steel katori or bowl in the center of the chicken seekh kebab mixture.
  • Heat a piece of coal on gas. Allow it to get red hot. Place the hot coal in the steel katori.
  • Add a spoon of ghee over the coal. You will notice the coal smoking up. Immediately cover the bowl and allow the Chicken Seekh Kebab mixture to get smoked.
  • Once all the smoke has settled down, open the lid and divide the mixture into 10 to 12 portions.
  • Grease your palm with oil and shape the kebabs over long skewer.
  • Once done place the Chicken Seekh Kebabs on a preheated pan, drizzle oil over the kebabs and fry until golden brown on all sides. Serve hot.
  • Serve the Seekh Kebabs along with Pita Breads or rotis with a combination of Mint Chutney, Yogurt Dip, Pickled Onions to make it more exciting. This is a nice change from the ordinary grilled chicken. This is excellent served with pita bread, a garlicky tzatziki, and a Greek salad. Lamb can be substituted for the chicken, and many variations on vegetables can be used.

¼ cup olive oil
¼ cup lemon juice
¼ cup white vinegar
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast, cut into 1 1/2-inch pieces
6 wooden skewers
2 large green or red bell peppers, cut into 1-inch pieces
1 large onion, quartered and separated into pieces
12 cherry tomatoes
12 fresh mushrooms

Steps:

  • Whisk the olive oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, salt, and black pepper together in a large glass or ceramic bowl. Add the chicken and toss to evenly coat. Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours.
  • Soak wooden skewers in water for about 30 minutes before use.
  • Preheat an outdoor grill for medium-high heat; lightly oil the grate.
  • Remove the chicken from the marinade and shake off excess liquid. Discard the remaining marinade. Alternately thread pieces of the marinated chicken with pieces of bell pepper, onion, cherry tomatoes, and mushrooms onto the skewers.
  • Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides, and the chicken is no longer pink in the center, about 10 minutes.

40 ounces boneless skinless chicken breasts
20 g breadcrumbs
20 g garlic powder
20 g ginger powder
20 g salt
4 dried red chilies
1 cup water
50 ml sunflower oil

Steps:

  • 1. Mince all of the chicken in a mincer.
  • 2. Grind the bread crumbs and the red chillies in a grinder until they become powder.
  • 3. Throw in all the spices, salt and ground red chillies and bread crumbs into the chicken mince, mix with your hands.
  • 4. Once evenly mixed, make 10 balls approximately 4oz each.
  • 5. Take one metal skewer, dip your hand into the water and wet the skewer, then pick up one ball of your spiced chicken mince and spread the chicken over the skewer to make a sausage shape. Repeat this 10 times.
  • 6. Place the skewers in a grill, allow it to cook the chicken half-way on the side facing the grill, then take a brush, dip it in the oil and brush each kebab on that side which is cooking.
  • 7. Once the top-side is fully cooked, rotate each skewer 90 degrees and allow the second side to cook.
  • 8. Repeat steps 6 and 7 twice more until all 4 sides are cooked.
  • 9. Use an oven cloth to carefully slide the kebabs off the skewers into a tray without breaking.
