Steps:
- Heat a large frying pan. Add the olive oil and the steaks to you perfection. (I like mine rare, very rare.) Remove to a warm plate and add the wine and the garlic and onion. Sauté just a minute and deglaze the pan by scrapping the bottom with a wooden spoon. Allow the wine to reduce be half and then add the glace de viande and the rosemary. Simmer for a moment and add the butter mixed with the cheese. Mix with a wire whip until smooth.
- Place a bit of the sauce on each plate and then a piece of the stake on top of the sauce. Add the salt and pepper at the very last, as salt will dry out the meat during the cooking process. Garnish with parsley.

Steps:
- Cook potatoes in boiling salted water until tender; drain.
- Saute onion until tender.
- Place potatoes in large bowl and mash; add onions, salt, pepper, cheese, and milk, blending well.
- Prepare roll mix according to package directions, except divide dough in half.
- Roll out bottom section and place on cookie sheet.
- Preheat oven to 375 degrees F.
- Pile potato mixture on dough, leaving about a 2" margin around the edge.
- Roll out the remaining half and carefully place it on top.
- Pinch together and crimp edges all around.
- Cut 2-3 venting holes in the top.
- Brush the top with a small amount of vegetable oil, and sprinkle lightly with coarse salt.
- Bake at 375 degrees for 20-25 minutes or until golden brown.

- Saute the carrots, celery, and onions in the oil until lightly browned. Bring the soup stock to a boil, add the vegetables, and simmer for 45 minutes.
- Dredge the cheese in the flour, and mix into the soup, stirring constantly until the mixture thickens. Keep stirring until you serve.
- Add the salt, pepper, mustard, Tabasco, and Worcestershire. Finally, add the beer, and stir until all is hot. Garnish with parsley, and serve.
- You may add sliced cooked sausage to this soup; add just before serving.

- Saute the garlic in the oil until it just begins to brown. Add the yellow onion and the broccoli florets until the broccoli is barely tender.Add the cream and the pepper. You may add salt if you wish.
- In the meantime, cook the angel hair pasta for just a few minutes in salted boiling water. Watch this carefully because the pasta cooks in very little time. Drain the pasta, and toss with the three cheeses. Add the cream and the vegetables, toss and serve.
- You may wish to garnish this with more cheese on top. Some parsley might be nice as well.

- Place the beans and cold water in a 6-quart pot and bring to a boil. Cover the pot and turn off the heat (leave the pot covered on the very burner you used). Allow to stand 1 hour. Drain the beans and return to the pot. Add the wine and the Beef and Chicken stock, and bring to a boil, cover, and simmer gently for 30 minutes. Strain out half the beans and puree. Return the pureed beans to the pot. Add the garlic, tomato paste, parsley, and the raw tubetti pasta and simmer gently, uncovered, for 25 to 30 minutes or until the pasta is very tender and the soup is thick. Stir the soup regularly to prevent the pasta from sticking to the bottom of the pot. Stir in the 1/3 cup of Parmesan cheese. Garnish with chopped parsley, a drizzle of extra virgin oil, and grated Parmesan cheese.
